MEDIEVAL FINE CAKES
I got this recipe from a Medieval website. I had to do a report on Medieval cooking everyone loved the cookies.

Steps:
- Cream together the sugar, salt, and butter.
- Mix together the cinnamon and flour. Add this to the creamed mixture. Mix in water, as needed, to make the dough manageable.
- Press dough into 2-3 baking sheets lined with baking parchment; prick all over with a fork at regular intervals.
- Bake at 325 degrees F for 30 minutes; cut into 100 squares.
CINNAMON FROSTING FOR THAT MEDIEVAL WEDDING CAKE
When we were making up my mind :o) about what I wanted to do for a cake, I just knew that I wanted something basic and simplistic. We chose a spice cake ( and I found the mix on sale!), but I couldn't find any frosting that I wanted. I wanted a parchment colored frosting. And there just wasn't any out there. Then I thought... CINNAMON! I scooped up a whole armload of white vanilla frosting and went to work on it. This is what came out as a winner and ended up being lovely in color and taste. Excellent with the spice cake by the way.

Steps:
- Turn frosting out into a large mixing bowl with your scrapper/spatula.
- Add cinnamon; mix on medium speed with your electric mixer, scraping down the sides often, until cinnamon is throughout.
- Spread on favorite cake.
- I am so not a baker by any means, but I baked our wedding cake and after cutting and pasting (ha) with this frosting, our cake looked beautiful.
CINNAMON BUTTERCREAM FROSTING
This is from The Cake Mix Doctor. Posted to go with Tomato Soup Spice Cake, but I think it'd be good with any spice cake recipe. Very simple to make. If you want plain buttercream frosting, omit cinnamon and replace it with another teaspoon of vanilla.

Steps:
- Place butter in large bowl.
- Beat on low 30 seconds.
- Add sugar about a cup at a time, beating on low between each addition.
- Add 3 tablespoons milk, vanilla and cinnamon.
- Beat on medium 1 minute.
- Blend in up to 1 tablespoons of milk if frosting is too thick.
