CINNAMON COOKIE BARS
I like this recipe because it is so simple to make. I read that cinnamon is very good for you. I found a cinnamon cookie here, but I didn't like that it didn't hold together. I took a recipe of mine and adapted it to the Cinnamon Cookie I wanted. If you choose to glaze this cookie, warm the frosting in the microwave so that it can be spread thinly.

Steps:
- Mix sugar, oil, molasses and egg.
- Stir in flour, soda, salt and cinnamon.
- Mix well.
- Press the dough into a solid ball and divide in half with a knife.
- Shape each half into a strip 15" x 1-1/2" 3" apart on a greased cookie sheet or a cookie sheet lined with parchment paper. You may use a rolling pin to help flatten.
- Bake 375° until edges are light brown and tops are cracked, 6-7 minutes (soft), 8-9 minutes (crisp).
- If you want you can glaze them now coming out of the oven with a powdered sugar, milk & vanilla paste.
- Warm glaze in microwave before spreading on warm cookies.
- Cool 2 minutes.
- Cut each strip crosswise into slices for cookie bars.
- Let cool and enjoy.

- In a large bowl, combine butter and brown sugar until crumbly, about 2 minutes. Beat in egg. Gradually beat in coffee. Combine the flour, baking powder, cinnamon, baking soda and salt. - Preheat oven to 350* and grease well two 9" round pans.
- Combine flour, sugar and baking powder.
- Add melted butter and milk and stir until well blended.

- Combine the raisin filling ingredients in a saucepan and heat over medium heat until the raisins are plump and the liquid has almost completely evaporated (about 10 minutes).
- While the raisin filling is heating, cream the butter and brown sugar together, mix in the dry ingredients and 1 tablespoon of water (it will be very crumbly).
- Press half of the mixture (about 2 cups) firmly into the bottom of a greased 9"x13" pan and spread with the raisin filling.
- Mix 1 tablespoon of water with the remaining crumbs and scatter over the raisin filling.
- Bake at 350°F for 35 minutes and then cool slightly.
- Mix together the cinnamon icing, adding enough milk to make a drizzling consistency, drizzle over the top and cut into squares.

- Set oven to 350 degrees F.
- Prepare a greased 13 x 9-inch baking dish, or two 8 or 9-inch round cake pans (although the batter will seem like it will fit into only one 8 or 9-inch pan, this flop rises very high and will run over the sides if baked in just one pan).
