2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 extra-large egg, lightly beaten
1 1/4 cups whole milk
2 tablespoons unsalted butter, melted
2 teaspoons pure vanilla extract
8 tablespoons (1 stick) unsalted butter
1/2 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees. Spray 2 doughnut pans well.
  • Into a large bowl, sift together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a small bowl, whisk together the egg, milk, melted butter, and vanilla. Stir the wet mixture into the dry ingredients until just combined.
  • Spoon the batter into the baking pans, filling each one a little more than three-quarters full. Bake for 17 minutes, until a toothpick comes out clean. Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan.
  • For the topping, melt the 8 tablespoons of butter in an 8-inch saute pan. Combine the sugar and cinnamon in a small bowl. Dip each doughnut first in the butter and then in the cinnamon sugar, either on one side or both sides.

Steps:

  • Place melted butter in a bowl. Combine white sugar, brown sugar, cinnamon and nutmeg in a second bowl.
  • Separate biscuit dough into individual biscuits and cut out the centers using a biscuit cutter (or the bottom of a piping tip) to create a doughnut shape. Place doughnuts in the air fryer basket.
  • Air fry at 350 degrees F (175 degrees C) until golden brown, 4 to 6 minutes. Flip doughnuts and cook an additional 1 to 3 minutes.
  • Remove doughnuts from air fryer. Dip each doughnut into melted butter (making sure to coat top, bottom, and sides), followed by sugar-cinnamon mixture until completed coated. Serve immediately.

1 egg
1/4 cup water

Steps:

  • Make the Doughnuts: In a small saucepan, warm the milk slightly with 1 teaspoon sugar. Add the yeast and let sit for 5 minutes to proof.
  • In a small bowl, beat the egg with the water.
  • In a standing mixer with a paddle attachment mix the flour, remaining 1/3 cup sugar, salt, and nutmeg. Add the proofed yeast mixture, beaten egg mixture, and melted butter. Remove the paddle, switch to a dough hook, and mix until well-blended and kneaded, about 15 minutes. Transfer the dough to a large greased mixing bowl. Cover with plastic wrap and chill overnight.
  • On a floured surface, roll the dough out to about 1/4-inch thick and transfer to a sheet pan. Cover with plastic wrap, and chill for 30 minutes, allowing the dough to rest.

3 large egg yolks
3/4 cup sugar
1/2 vanilla bean, split
2 tablespoons espresso extract (see Cook's Note)
1/2 cup heavy cream
1/4 cup plus 1 tablespoon water, at room temperature
1/4 ounce compressed fresh yeast
1/2 cup all-purpose flour
1/4 ounce compressed fresh yeast
2 tablespoons milk, at room temperature
1 cup plus 2 tablespoons all-purpose flour, or more as needed
3 tablespoons sugar
1 teaspoon kosher salt
1/4 cup egg yolks (about 3 large yolks)
2 tablespoons (1 ounce) unsalted butter, melted and cooled
Canola oil for deep-frying
Cinnamon sugar: 1/2 cup sugar mixed with 1 1/4 teaspoons ground cinnamon
1/2 cup milk

Steps:

  • For the cappuccino semifreddo: Place the egg yolks and 1/4 cup plus 2 tablespoons of sugar in the bowl of a mixer fitted with the whisk attachment. Scrape the seeds from the vanilla bean into the bowl. Whip for about 12 minutes at medium speed, or until the mixture has lightened and tripled in volume. Beat in the espresso extract. Transfer the mixture to a bowl placed in a larger bowl of ice water to maintain its consistency.
  • In a mixer bowl or a metal bowl, whip the heavy cream with 3 tablespoons of the sugar until it holds its shape when the whisk or beater is lifted. Fold the whipped cream into the yolk mixture and return the bowl to the ice.
  • Whip the egg whites in a mixer bowl or metal bowl until they are frothy. While whipping, add in the remaining 3 tablespoons of sugar and whip the egg whites just until they hold soft peaks, being careful not to overwhip them. Fold in the beaten egg whites into the egg yolk mixture until they are completely combined.
  • Spoon the semifreddo into six 8- to 10-ounce coffee cups, leaving at least 1/2 inch at the top for the steamed milk. Gently tap the cups against the counter to level the mixture. Cover the cups with plastic wrap and place them in the freezer until frozen, at least 6 to 8 hours, or overnight. These will keep for up to 3 days in the freezer; after that time, they will start to deflate.
  • For the cinnamon-sugar doughnuts part 1: Place the water in the bowl of a mixer. Crumble the yeast into the water; mix and crush the yeast with a spoon to dissolve. Add the flour to the bowl and, using the dough hook, mix slowly until the ingredients are thoroughly blended.
  • Transfer this sponge to a bowl, cover, and let proof at room temperature for 1 to 2 hours, until it has doubled; or place the bowl in the refrigerator to proof overnight.
  • Part 2: Crumble the yeast into the milk in a small bowl, stirring to dissolve. Place 3/4 cup of the flour, the sugar, and salt in the bowl of a mixer fitted with the dough hook. Mixing on low speed, pour in the milk and yeast mixture, followed by the egg yolks and butter. Mix for a minute to combine.
  • Add the proofed sponge and the remaining 1/4 cup plus 2 tablespoons flour. Continue to beat at low speed until combined. Turn up the speed slightly and knead the dough for 4 to 5 minutes, or until it has formed a ball and cleans the sides of the bowl. If the dough seems wet, it may be necessary to add 1 to 2 more tablespoons flour. Cover the bowl and let the dough proof overnight in the refrigerator.
  • To shape the doughnuts: Place the chilled dough on a lightly floured surface and roll it out to a 1/2-inch thickness. Cut out the doughnuts using a 2-inch doughnut cutter, or a 2-inch biscuit cutter (in which case, you will also need a 3/4-inch cutter to make the hole). Place the doughnuts and doughnut holes on a baking sheet lined with parchment paper. Cover the doughnuts with a sheet of plastic wrap that has been sprayed with nonstick spray.
  • At this point, the doughnuts can be frozen for several days, refrigerated, or allowed to rise at room temperature. If they're frozen, defrost them and then allow them to rise at room temperature for 1 to 1 1/2 hours. They can be refrigerated for several hours or overnight, to rise slowly. When you remove them from the refrigerator, uncover them and let them finish proofing in a warm place for 20 to 30 minutes. If they have not been refrigerated or frozen, they should rise at room temperature in about 15 minutes. Once proofed, they will have risen to approximately 3/4 inch.
  • To cook the doughnuts: In a deep heavy saucepan large enough to hold half the doughnuts and holes at a time, heat canola oil for deep-frying to 325 degrees F. Add half the doughnuts and holes to the oil and cook for approximately 30 seconds on the first side. Flip the doughnuts and fry for 1 minute on the second side, then turn back to the first side to cook for an additional 30 seconds, or until a deep golden brown. Remove the doughnuts, drain them briefly on paper towels, and toss them in a bowl with the cinnamon sugar. Repeat with the remaining doughnuts.
  • To complete: Remove the semifreddo from the freezer a few minutes before serving to soften slightly. Steam the milk using a cappuccino machine or frothing machine. Place a cup of semifreddo and a doughnut on each of six plates. Top each doughnut with a doughnut hole. Spoon the steamed milk over the semifreddo and serve immediately.

1 teaspoon active dry yeast
2 tablespoons warm water (100 degrees to 110 degrees)
2 tablespoons honey
3/4 teaspoon ground cinnamon
1 large egg, lightly beaten
1/3 cup milk
1 tablespoon light corn oil, plus more for bowl
1/2 teaspoon salt
2 cups all-purpose flour, plus more for dusting
3 cups peanut oil
1/2 cup sugar, for dusting
One 12 ounce jar seedless raspberry jam

Steps:

  • In a medium bowl, combine yeast with warm water, and let stand until foamy, about 5 minutes. Whisk in honey, 1/4 teaspoon cinnamon, egg, milk, and corn oil. Using a wooden spoon, stir in salt and flour. Mix until dough appears smooth.
  • Transfer dough to a lightly oiled bowl, cover tightly with plastic wrap, and set in a warm place to rise until doubled in size, about 1 1/2 hours. Line a baking sheet with parchment, and another one with paper towels; set aside.
  • Turn out dough onto a lightly floured work surface, and knead four to five times. Roll dough into a 10-inch square, about 1/4 inch thick. Using a pizza cutter, cut into 2 1/2-by-2 1/2-inch squares, and transfer to parchment-lined baking sheet. Lightly cover with plastic; let rest in a warm place 20 minutes.
  • In a medium saucepan, heat peanut oil until a deep-frying thermometer registers 360 degrees. Working in batches of five or six, fry doughnuts until golden brown on both sides. Using a slotted spoon, transfer to paper-towel-lined baking sheet to drain. Fry remaining doughnuts.
  • In a medium bowl, combine sugar and the remaining 1/2 teaspoon cinnamon. Toss the doughnuts lightly in cinnamon sugar.
  • Fill a pastry bag fitted with a #4 tip with jam. Using a wooden skewer or toothpick, make a hole in the side of each doughnut. Fit the pastry tip into a hole; pipe about 1 tablespoon jam into doughnut. Repeat with remaining doughnuts. Toss filled doughnuts in cinnamon sugar again, if desired. Serve immediately.

1 1/4 cups jiffy pancake and waffle mix
2 tablespoons sugar
1/3 cup water
1 egg
3/4 cup sugar
1 1/2 teaspoons cinnamon

Steps:

  • In an electric fry pan or heavy skillet, heat approximately 1 inch of fat or oil to 375°.
  • Combine pancake mix, 2 tablespoons sugar, water and egg.
  • Stir just until pancake mix is moistened.
  • Drop from a teaspoon into hot fat. .
  • Brown on both sides, then drain on paper towels.
  • Blend sugar and cinnamon together in plastic or paper bag. .
  • Add a few doughnuts at a time; shake to coat. Serve warm.

¼ cup caster sugar
¼ cup brown sugar
2 eggs
2 tablespoons butter, melted
1 ¾ cups flour
¼ cup soybean flour
½ teaspoon baking powder
1 qt oil, for frying
⅓ cup sugar
2 teaspoons ground cinnamon
1 tablespoon brown sugar syrup, for coating

Steps:

  • In a large mixing bowl, beat the sugars and eggs together until smooth.
  • Add in the melted butter and whisk until smooth.
  • Sift in the flour, soybean flour and baking powder and mix together.
  • Rest the dough for 30 minutes.
  • Roll the dough into ping pong sized balls using your hands.
  • In a deep saucepan, heat the oil to 190°C (370°F).
  • Using a slotted spoon, carefully fry the balls in small batches.
  • Transfer the doughnuts to a paper towel-lined plate.
  • Prepare the cinnamon sugar by mixing the sugar and ground cinnamon together.
  • Roll the doughnuts in the cinnamon sugar.
  • Drizzle some brown sugar syrup on top.
  • Enjoy!

Yield 6 Doughnuts

Number Of Ingredients 12

1 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
pinch of salt
1 egg (lightly beaten)
1 6 oz container of non fat organic vanilla bean yogurt
1 tablespoon canola oil
2 teaspoons lemon juice
2 1/2 tablespoons real maple syrup
1 1/2 teaspoons cinnamon
1/2 cup sugar
2 tablespoons butter (melted)

Steps:

  • Preheat the oven to 400 degrees. Toss the cinnamon and sugar together and set aside. In a large bowl whisk together all the dry ingredients. In another bowl stir together oil, lemon juice, maple syrup, egg and yogurt. Make a hole in the center of the dry ingredients and pour the wet ingredients into the hole. Gently fold everything together until combined. Divide batter evenly into a greased donut pan. (I used the cooking spray that has flour in it but I think any kind would work.) The batter will be pretty thick and airy. We found it was easier to scoop it into the donut pan with our hands. Before baking be sure to clean off any stray dough around the circle so there's a hole in the middle of the donut. Bake for 10 minutes or until golden brown. Let cool for a few moments and then flip over onto a cooling rack while still warm. Use a pastry brush to butter your donuts and then dip each donut in the cinnamon sugar mixture to coat.

1 1/4 c sugar
1/4 c vegetable oil
1 tsp vanila extract
4 c all purpose flour
1/3 c cocoa, unsweetened
4 tsp baking powder
1 tsp ground
3/4 tsp salt
1/4 tsp baking soda
3/4 c buttermilk
oil for deep frying
"original recipe glaze" follows
4 c sifted confectioner sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon
6 Tbsp milk
"chocolate glaze" follows
1/4 c semi-sweet chocolate chips
1 Tbsp butter
1 Tbsp corn syrup
1 tsp hot water
FOR THE CHOCOLATE GLAZE- COMBINE ALL INGREDIENTS IN A MICROWAVE SAFE BOWL AND MICROWAVE FOR 1 MINUTE. STIR, UNTIL MELTED. IF THE GLAZE IS TOO THICK, ADD 1 TSP OF HOT WATER UNTIL GLAZE IS SMOOTH

  • 1. In a Mixing Bowl,Beat Eggs. Add Sugar and beat until mixture is thick and lemon colored.Stir in 1/4 cup of Oil and Vanila.
  • 2. In another Bowl combine flour,Cocoa,baking powder,cinnamon,salt,and soda.Stir into egg mixture.alternately with Buttermilk.
  • 3. Chill. Divide dough in half in the refrigerator.On a light floured board roll to 1/2 inch thickness. Cut with a 2-1/2 inch floured doughnut cutter.I had mine in Storage so I Improvised =]Repeat with remaining dough.
  • 4. Deep-Fry in Oil heated to 375 degrees for 3min.turning once.Place on Paper towels on top of a cooling rack, Let Cool then glaze in freshly warmed glaze. Top with Sprinkles. CINNAMON GLAZE:

  • Beat eggs in a large bowl. Gradually add sugar, beating until mixture is thick and lemon-colored. Stir in oil and vanilla. Combine dry ingredients; stir into egg mixture alternately with buttermilk. Chill well (dough will be slightly sticky). , Meanwhile, combine glaze ingredients; set aside. , Remove half of the dough from refrigerator; roll out on a lightly floured surface to a 1/2-in. thickness. Cut with a 2-1/2-in. floured doughnut cutter. , Heat oil to 375°; fry doughnuts for about 3 minutes, turning once. Drain on paper towels. Dip in glaze while warm. Repeat with other half of dough.
