3 cups rolled oats
1/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup pecans or cashews
3 tablespoons coconut oil
1/3 cup maple syrup
2 teaspoons pure vanilla extract
1 large egg white

Steps:

  • 1. Preheat the oven to 300 degrees. Line a large baking tray with a silicone baking mat or parchment. Set aside.
  • 2. Add the oats, brown sugar, salt, cinnamon, and pecans to a large mixing bowl. Gently toss to combine. Set aside.
  • 3. Place the coconut oil and maple syrup in a medium measuring cup. Heat for 10 to 20 seconds, or until the oil has combined. Gently whisk the vanilla in with a fork.
  • 4. Pour the liquid over your oat mixture. Gently toss to combine.
  • 5. Whisk the egg white until foamy. Drizzle over the mixture and give it one last toss to coat.
  • 6. Turn the granola onto your prepared pan. Spread into an even layer.
  • 7. Bake 30 minutes, stirring once halfway through. Allow to cool completely before packaging.

8 cups rolled oats
2 tablespoons cinnamon
2 cups flaked unsweetened coconut
1/2 cup quinoa
1/2 cup flax seed
1/2 cup raw sunflower seeds
1/4 cup cornmeal
1 1/2 cups light brown sugar
1/2 cup water
1 cup oil
2 teaspoons vanilla

Steps:

  • Mix oats, cinnamon, coconut, quinoa, flax seeds, sunflower seeds, and corn meal in a large bowl.
  • Mix brown sugar and water in a small saucepan. Heat to boiling on medium heat. Reduce heat to low and stir for one minute longer.
  • Remove syrup from heat, add oil and vanilla. Pour mixture over dry ingredients and mix thoroughly.
  • Grease 2 10x15" jelly roll pans and pour half the granola onto each pan. Spread evenly, but do not press down!
  • Bake at 275 for 60-70 minutes, until lightly browned.
  • Cool pans on wire racks for 10 minutes. Flip granola in large chunks. Store in airtight containers when completely cooled.

Got this recipe from a coworker-and it is seriously some of the best cinnamon granola I've ever had. All store brands seem to do something funky to their cinnamon that makes the end-product taste not so great and not so cinnamon-ny. Not a problem here!

1 cup walnuts
3/4 cup grated sweetened coconut
1/4 cup brown sugar
1/4 cup honey
2 tablespoons canola oil
1/4 teaspoon cinnamon (or more)

Steps:

  • Preheat oven to 300.
  • Mix oats, walnuts and coconut together in a large mixing bowl.
  • Mix brown sugar, honey, canola oil, and cinnamon in a small bowl.
  • Drizzle liquid mixture over the dry ingredients.
  • Spread over a large baking pan.
