¼ cup vegetable oil
½ teaspoon ground cinnamon
4 Granny Smith apples, peeled and diced
½ cup white sugar
2 teaspoons cinnamon
2 tablespoons water
2 tablespoons cornstarch
1 tablespoon water
1 ½ tablespoons milk
8 teaspoons vegetable oil, divided

  • Mix apples, sugar, 2 teaspoons cinnamon, and 2 tablespoons water in a pot.
  • Whisk cornstarch and 1 tablespoon water in a small bowl; pour into apple mixture.

Remove crepe from pan, add more oil, and repeat with remaining batter.
  • Spoon the apple filling into each crepe; fold crepe over the filling and serve.

75g gluten-free brown bread flour

225ml semi-skimmed milk
1 tsp rapeseed oil , for frying
2 tbsp almond nut butter (make your own with recipe in 'goes well with', right)

MANGO-PAPAYA BROWN BUTTER CINNAMON CREPES WITH HOMEMADE DULCE DE LECHE SYRUP

Mango-Papaya Brown Butter Cinnamon Crepes with Homemade Dulce de Leche Syrup image

Provided by Bobby Flay

Time 2h55m

Yield 4 to 6 servings

Number Of Ingredients 14

One 14-ounce can sweetened condensed milk
12 tablespoons unsalted butter
1/4 teaspoon ground cinnamon, plus more for garnish
1 cup all-purpose flour
1/4 teaspoon fine sea salt
1 cup milk
1/2 cup lukewarm water
4 large eggs, lightly beaten
1/2 vanilla bean, seeds scraped
2 ripe mangoes, peeled, pitted and sliced or diced
1 papaya, peeled, pitted and sliced or diced
1 cup very cold heavy cream
3 tablespoons sour cream
1 teaspoon vanilla extract

Steps:

  • For the dulce de leche syrup: Preheat the oven to 425 degrees F. Scrape the condensed milk into an 8-inch baking dish and cover the top tightly with heavy-duty aluminum foil. Place the dish inside a roasting pan and fill the pan with enough water to come halfway up the sides of the baking dish. Bake in the oven until the milk turns a deep golden brown, stirring a few times, about 1 hour 15 minutes. Check after 45 minutes and add more water, if needed, to the roasting pan. Remove the dulce from the oven and let cool, covered, about 15 minutes before serving.
  • For the crepes: Melt 6 tablespoons butter in a small saucepan over medium heat until it turns a nutty brown color. Remove from the heat, whisk in the cinnamon and let cool slightly.
  • Put the flour and salt in a medium bowl. Whisk together the milk, water and eggs until combined. Add the egg mixture to the flour and whisk until just combined. Whisk in 4 tablespoons of the brown butter and reserve the remaining 2 tablespoons for the crepe pan. Cover with plastic wrap and refrigerate for at least 30 minutes and up to 24 hours.
  • Mash the remaining 6 tablespoons butter and the vanilla seeds with a mortar and pestle. In a saute pan over medium heat, add the vanilla butter, mangoes and papaya and cook until softened and slightly caramelized, 3 to 5 minutes.
  • Whip the heavy cream, sour cream and vanilla extract in a large bowl until soft peaks form. Cover and keep chilled until ready to use.
  • Heat an 8-inch or 10-inch nonstick pan over medium heat. Brush with some of the remaining brown butter. Add a scant 1/4 cup of the batter into the pan and swirl the pan to cover the bottom with a very thin coating. If there is excess batter, pour it back into the bowl. Cook until the crepe bubbles and the bottom is lightly browned, about 1 1/2 minutes. Flip the crepe over and cook for about 20 seconds. Slide the crepe onto a plate. Repeat with the remaining batter.
  • Put a line of fruit down the center of each crepe. Spread a little of the warm dulce de leche on top of the fruit and fold or roll the sides of the crepe over. Top with a dollop of whipped cream and sprinkle with cinnamon.

CINNAMON ROLL CREPES

Cinnamon Roll Crepes image

Provided by Bobby Flay

Categories     main-dish

Time 1h15m

Yield 8 servings

Number Of Ingredients 15

1 1/2 cups whole milk
1 cup all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon coarse salt
4 large eggs
4 tablespoons unsalted butter, melted and cooled
4 tablespoons unsalted butter
1/2 cup light brown or light muscovado sugar
2 tablespoons dark rum
1/2 teaspoon ground cinnamon
8 ounces cream cheese, at room temperature
1/4 cup cold heavy cream
2 tablespoons confectioners' sugar, plus more for dusting
1 teaspoon vanilla extract
1 teaspoon finely grated orange zest, plus more for the top

Steps:

  • For the crepes: Combine the milk, flour, granulated sugar, salt, eggs and 2 tablespoons of the butter in a blender and blend until smooth, about 20 seconds. Let the batter rest at room temperature for at least 15 minutes before using or transfer to a container with a lid and let rest in the refrigerator for up to 1 day.
  • For the cinnamon rum sauce: Melt the butter in a small saucepan over medium heat. Stir in the brown sugar, rum and cinnamon and cook, stirring occasionally, until the sugar melts. Stir in 2 tablespoons water and cook a few more minutes. Set aside and keep warm.
  • For the filling: Combine the cream cheese, cream, confectioners' sugar, vanilla and orange zest in a stand mixer with a whisk attachment and whisk until light and fluffy.
  • Heat a 10-inch nonstick skillet over medium heat. Lightly brush with some of the remaining melted butter. Add 3 to 4 tablespoons of the crepe batter and swirl the skillet so the batter completely covers the bottom. Cook until the underside of the crepe is golden brown, 2 to 3 minutes. Loosen the edge of the crepe with a rubber spatula, then with your fingertips, quickly flip. Cook 1 minute more. Slide the crepe out of the skillet and repeat with the remaining batter, coating the skillet with butter as needed. Stack the finished crepes directly on top of each other.
  • Place a crepe on a flat surface with the browner side down. Smear 3 to 4 tablespoons filling across the crepe slightly off center and a few inches from the bottom (facing you), fold the bottom up over the filling and then roll the crepe tightly. Place seam-side down on a plate or platter and repeat with the remaining crepes and filling. Spoon the sauce over the crepes, dust with confectioners' sugar and scatter some orange zest on top. Serve immediately.

VIRGINIA'S CINNAMON SAUCE (BREAD PUDDING, ICE CREAM, CREPES, ETC

Virginia's Cinnamon Sauce (Bread Pudding, Ice Cream, Crepes, Etc image

My favorite recipe from my grandmother, who would make this to go over bread pudding and other desserts. So simple to make, but special enough for a holiday table (or over bread pudding to celebrate the birth of a child in our family!). An absolute family tradition; I haven't seen anything else like it. I've come to find that it's a pretty flexible recipe -- you can add more or less cinnamon, sugar, or even other spices (nutmeg, ginger, and cardamom are all good in addition to the cinnamon). I like mine a bit thicker so I use less water than called for here (2 to 2 1/2 cups), but most in my family make it just like this. Quick, easy, and really yummy.

CINNAMON-APPLE STREUSEL CRêPES

Cinnamon-Apple Streusel Crêpes image

I love making crêpes. They are easy, and lend themselves to all kinds of fillings. Use fruit and cheese for breakfast, fish or chicken for lunch, and make them larger and fill with creamed meat and vegetables for a great supper meal. For dessert, fruit and syrups are great. Crêpe pans are available, but I use a slick 10" nonstick skillet and get excellent results. Crêpes can be made in advance, covered in plastic wrap, and kept overnight in the refrigerator before filling. Warm them in the microwave or a steamer prior to filling.

Number Of Ingredients 17

STREUSEL FILLING
1 small apple, cored and diced
3 tablespoon(s) uncooked quick oats
2 tablespoon(s) brown sugar
2 tablespoon(s) soft butter
1/2 teaspoon(s) cinnamon
1 teaspoon(s) vanilla
1/2 cup(s) applesauce
CRêPE BATTER
1 cup(s) all purpose flour
1 tablespoon(s) sugar
1/2 teaspoon(s) cinnamon
1 pinch(es) salt
1 - egg
1 - scant cup milk
1 teaspoon(s) vanilla
- oil to brush pan

Steps:

  • Prepare crêpe batter: Stir together dry ingredients and make a well in center. Put beaten egg, milk, and vanilla in the well; mix rapidly with a fork until almost all the lumps are gone. Let batter rest 5 minutes.
  • Make streusel filling: Place apples, butter, oatmeal, brown sugar, cinnamon, and vanilla in a medium microwave-safe bowl. Stir to blend well.
  • Microwave on high power for 30 minutes at a time, stirring after each session, until apples and oats are soft, about 2 minutes total. Stir in applesauce and blend well. Set aside.
  • Make crêpes: Heat a crêpe pan or 9-10" nonstick skillet over medium heat. When hot, brush with coconut oil or other cooking oil. Pour about 1/4 cup crêpe batter in center of pan. Tilt and swirl pan to allow batter to spread out into a flat, thin, round pancake about 7" in diameter.
  • Cook about two minutes, until top of crêpe begins to dry out. Then flip over and cook until done on the other side, about 2 more minutes. Crêpes should turn a light golden brown but not get too dark. Keeping the pan at medium-low to medium heat is key here.
  • Serving crêpes: Cook all crêpes in the same manner, lightly brushing pan with oil for each crêpe. As they are done, stack them on a plate nearby. Then remove one crêpe to a serving dish. Place about 2 tablespoons apple filling on 1/4 of the crêpe.
  • Fold the crêpe over into fourths. Prepare next crêpe in the same manner.
  • Serve 2 to 3 crêpes on a plate, drizzled with maple syrup or dusted with powdered sugar.

ROASTED BUTTERNUT SQUASH, SAUTEED APPLES AND TOASTED WALNUT CREPES WITH CINNAMON GELATO

Roasted Butternut Squash, Sauteed Apples and Toasted Walnut Crepes with Cinnamon Gelato image

Provided by Anne Burrell

Categories     dessert

Time 2h55m

Yield 4 servings

Number Of Ingredients 24

1 1/2 cups medium-diced butternut squash
Extra-virgin olive oil
Kosher salt
2 to 3 tablespoons butter
2 Granny Smith apples, peeled and medium diced
1/4 cup brown sugar
1/4 cup bourbon
1/2 cup apple cider
1/2 cup walnuts, toasted and chopped
Basic Crepes, recipe follows
Cinnamon Gelato, recipe follows
Powdered sugar, for dusting
1 cup all-purpose flour
Pinch kosher salt
2 eggs
1/2 cup milk
1/2 cup club soda
3 tablespoons melted butter, plus 3 tablespoons for cooking the crepes
2 1/2 cups heavy cream
1/2 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
3 cinnamon sticks
6 egg yolks

Steps:

  • For the filling: Preheat the oven to 400 degrees F. Toss the butternut squash with some olive oil and salt. Place onto a baking sheet and into the oven for 10 to 12 minutes. Remove from the oven and set aside.
  • Put a saute pan over medium-high heat and melt the butter. Add the apples and salt to taste, and saute until softened. Hit it with the brown sugar and toss until melted. Hit it with the bourbon off the flame, and then carefully tip the pan to the flame to flambe and let the alcohol burn off. Add the apple cider and bring back to a boil. Reduce to a simmer and cook until glazy and delicious, about 10 minutes. Toss in the roasted butternut squash and half of the chopped walnuts.
  • To assemble: Add about 1/4 cup of the filling into the bottom third of a crepe. Roll the crepe and place seam-side down on a plate. Repeat this process with the remaining ingredients.
  • To serve: Arrange 1 crepe roll on each serving plate and spoon more butternut squash and apple filling over the top. Garnish with toasted walnuts and serve with Cinnamon Gelato. Dust with powdered sugar.
  • For the batter: In a mixing bowl, add the flour and salt and make a well in the center. Add the eggs, milk and club soda into the center of the well and whisk together until just combined. The mixture should be like VERY loose pancake batter. If the mixture is a little thick, whisk in a little more milk. Let the batter sit for at least 30 minutes before using. The crepe batter can be made up to 2 days in advance, covered and refrigerated.
  • For the crepes: Melt about 1/2 teaspoon of the butter in a small nonstick saute pan. The butter should coat the bottom of the pan; if there is a lot of excess, wipe it out with a paper towel. Keep the paper towel handy in case you need it again (you will).
  • Put the pan over medium heat. Fill a 2-ounce ladle almost to the top with batter and pour it into the preheated pan, tipping and rolling the pan as you ladle the batter to evenly cover the bottom. This will take a little practice; even when you are an experienced crepe maker, the first couple always get wasted. Accept it and move on.
  • When the edges of the crepe begin to pull away from the edges of the pan and the bottom begins to brown a little, flip the crepe over and cook it for about 1 minute on the other side. Remove the crepe from the pan to a plate and let cool. Stack the crepes as they are cooked between parchment paper squares.
  • Repeat this process until all the batter is used, wiping the pan with your paper towel or melting a little more butter to the pan as needed.
  • In a medium saucepan, combine the heavy cream, 1/4 cup of the sugar, the vanilla extract, salt and cinnamon sticks. Bring to a boil, turn off the heat and let sit.
  • In a small bowl, combine the egg yolks and the remaining 1/4 cup sugar and beat to a homogeneous consistency.
  • Bring the heavy cream-cinnamon mixture back to a boil and turn the heat off. Whisk a third of the heavy cream mixture into the egg-sugar mixture, and then immediately whisk the egg mixture back into the remaining heavy cream mixture. Bring the mixture back up over medium heat, stirring constantly, until thickened and coats the back of a spoon, about 10 minutes. Strain the mixture and chill over an ice water bath.
  • Churn the chilled mixture in an ice cream/gelato machine according to the manufacturer's directions.
