CINNAMON CHIP OATMEAL COOKIES
I got this recipe from the back of a bag of Hershey's Cinnamon Chips. My father loves these cookies and is always asking me to "make a batch". They are chewey and sweet and delicious and you won't believe how fast they go.

Steps:
- Preheat oven to 350°.
- In large mixing bowl cream butter, granulated sugar and brown sugar.
- Beat in eggs and vanilla.
- Add flour and baking soda, mixing well.
- Mix in oatmeal, cinnamon chips and raisins (batter will be heavy).
- Drop by heaping teaspoonful onto ungreased cookie sheet and bake for 10-12 minutes or until they look golden around edges.
- Let cool for about 1 minute and then remove to wire rack to finish cooling.

Steps:
- 1. Heat oven to 350 degrees. Prepare cookie sheets with parchment paper.
- 2. In mixer bowl cream butter and brown sugar; about 2 minutes.
- 3. Beat in egg and vanilla.
- 4. Sift flour, cinnamon, nutmeg, cloves, baking soda, and salt.
- 5. Mix flour mixture into creamed mixture just until blended.
- 6. Add oatmeal, apples, cinnamon chips and walnuts till blended.
- 7. Scoop dough onto cookie sheets 2 inches apart. Bake for 10-12 minutes until edges are light brown.
- 8. Let cool a few minutes and remove to cooling rack to cool completely.
- 9. Drizzle with melted white chocolate or with a powdered sugar glaze. I used melted white chocolate and it was delicious... Enjoy!

- Set oven to 350°.
- Line a cookie sheet with foil and lightly spray with non-stick cooking spray.
- In a large bowl cream the butter with sugars until fluffy.
- Add in the vanilla and eggs; beat well.
- In another bowl, blend together the flour, baking soda, cinnamon, salt and oats; mix well to combine.
- Add the flour mixture to the creamed mixture along with the chocolate chips and coconut; mix well to combine.
- Drop dough by heaping tablespoonfuls onto prepared baking sheet.
- Bake for 8-10 minutes (longer for a crispier cookie).
- Remove to a rack to cool.

- Preheat oven to 375 degrees F.
- In a large mixing bowl, cream together butter, sugar and brown sugar.
- Beat in eggs.
- Add vanilla extract.
- In a separate bowl, sift together baking soda, salt, cinnamon and flour. Add to wet mixture and mix until combined.
- Fold in oats and cinnamon chips.
- Drop by rounded tablespoons onto ungreased cookie sheets and bake for 7-8 minutes for chewy cookies or 9-10 minutes for crisp cookies.
OATMEAL RAISIN CINNAMON-CHIP COOKIES
Steps:
- Heat oven to 350 F. Beat butter, brown sugar, and granulated sugar in bowl until cramy. Add eggs and vanilla; beat well. Combine flour and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips and raisins (batter will be stiff). Drop by heaping teaspoons onto ungreased cookie sheet and bake 10-12 minutes or lightly browned. Cool 1 minute and then move to wire rack. Bars can be made by spreading mixture into greased 13x9x2 pan and bake 25-30 minutes. Cut into bars when cool.

- 3. DROP by heaping teaspoons onto ungreased cookie sheet.

Bake 11-13 minutes or until lightly browned. 8. Cool on wire rack. Note: The key to really good oatmeal cookies (or chocolate chip cookies, for that matter), is not to over-bake them; take them out when the edges are browned, but the middle still looks just a little bit not-done.

LAURA'S CINNAMON CHIP OATMEAL COOKIES
This comes from the label on Eillien's Cinnamon Chips. I don't want to lose it as it has become my signature cookie. I actually make 5 batches at a time and take them to the assisted living facility where I work. These chips are not available in Tennessee where I live now. But, when I visit Wisconsin, I'm sure to pick up an ample supply to last until my next visit.

- Preheat oven to 375 degrees. In small bowl combine flour, baking soda & salt; set aside. In large bowl, beat butter, sugar, brown sugar, eggs and vanilla until creamy. Gradually beat in flour mixture. Stir in oats and cinnamon chips. Drop by measuring tablespoonfuls onto ungreased cookie sheets. Bake 7-8 minutes for chewier cookies; 9-10 minutes for crisper cookies. Makes about 4 dozen cookies.
- I find my cookies turn out best when I put the dough in refrigerator overnight. Baking time must be extended a bit, but the cookies hold their shape better.
