My mom used to make this all the time growing up. It is a very moist and flavorful apple cake. She would double the recipe and bake in a 9x13 pan for 50 minutes.

1/4 cup Butter Flavor Crisco
1 cup sugar
1/2 cup vegetable oil
2 eggs
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups peeled and chopped apples
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cream together butter and sugar.
  • Add oil and eggs, mix together well.
  • Stir baking powder, cinnamon, and salt into the flour; add to wet mixture.
  • Stir in apples and vanilla extract.
  • Pour into 9 inch square pan.
  • Sprinkle with sugar and/or cinnamon if desired.
  • Bake for 35-40 minutes.

This cake is great warmed with a scoop of ice cream as a dessert, or it works as a coffee cake for breakfast or brunch.... and you don't even...

1 pkg duncan hines yellow cake mix
3 eggs
1 c water
1 can(s) applesauce, unsweetened (small)
1 Tbsp cinnamon (yes tablespoon)
1 c brown sugar
1/2 stick butter

Steps:

  • 1. Spray a 9x13" pan with non-stick spray; set aside
  • 2. In mixing bowl add cake mix, water, eggs and 1/3 cup applesauce, (save the rest for later). Mix well until blended and smooth.
  • 3. Pour into pan and smooth to even; In a small bowl combine the brown sugar and cinnamon; sprinkle on top of the cake batter; slice cold butter into pats; and place on top of brown sugar; then with the rest of the can of applesauce; just pour little plops across the cake to cover
  • 4. Bake according to directions on box... And Like magic the cinnamon applesauce brown sugar mixture will be on the bottom... let cool completely before serving... No need to ice this one; we like it warmed with ice cream, and we like it like it for breakfast like a coffee cake.... Enjoy!
