6 cups thinly sliced peeled tart apples
1/2 cup sugar
1 tablespoon all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons butter
TOPPING:
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 cup cold butter, cubed
1 large egg, lightly beaten
Vanilla ice cream, optional

Steps:

  • Combine the apples, sugar, flour and cinnamon in a large bowl. Transfer to an 11x7-in. baking dish; dot with butter. , For topping, combine the flour, sugar, baking powder and nutmeg in another large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in egg just until moistened; sprinkle over filling., Bake, uncovered, at 375° for 40-45 minutes or until topping is golden brown and apples are tender. Serve warm with ice cream if desired.

1/4 cup granulated sugar
1/2 cup old-fashioned oats
1/2 cup packed brown sugar
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter or margarine
1/4 cup chopped walnuts

Steps:

  • Heat oven to 375°F. Grease 11x7-inch (2-quart) glass baking dish with shortening or cooking spray.
  • In large bowl, toss apples, peaches and granulated sugar. Pour into baking dish. In same bowl, mix oats, brown sugar, flour and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Stir in walnuts. Sprinkle over fruit.
  • Bake 30 minutes or until topping is golden and fruit is tender. Cool 15 minutes. Serve warm.

3/4 cup (12 tablespoons) cold unsalted butter, cubed and diced
2 Granny Smith apples
2 anjou pears
1 orange, zested and juiced
1 orange, zested and juiced
1 lemon, zested and juiced
1 lemon, zested and juiced
1 cup granulated sugar
1/4 cup cornstarch
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
One 14-ounce can whole cranberry sauce
1 cup pecans
1 cup granulated sugar
2 tablespoons unsalted butter
Pinch of kosher salt
2 1/4 cups heavy cream
1 cup whole milk
1 cup granulated sugar
1 tablespoon ground cinnamon
6 cinnamon sticks
5 large egg yolks
Butter, for greasing the dishes

Steps:

  • For the crisp topping: In a large bowl, mix together the flour, granulated and brown sugars, oats, pecans and salt. Add the cubed cold butter and mix until crumbly.
  • Chill until ready to use. Store leftover topping in the freezer.
  • For the crisp filling: Peel the apples and pears, then dice into large pieces and put in a bowl. Toss in the orange and lemon zest and juice, granulated sugar, cornstarch, vanilla, cinnamon and ginger. Add the cranberry sauce and toss until thoroughly combined
  • For the toffee pecans: Combine the pecans, granulated sugar, butter and salt in a medium saucepan and cook over medium heat until caramelized and golden, 5 to 10 minutes. Spread on a half-sheet pan and leave until cooled.
  • For the cinnamon creme anglaise: Heat the cream, milk, granulated sugar, ground cinnamon and cinnamon sticks in a saucepan until it boils. Remove from the heat and allow the mixture to steep for about 20 minutes. Remove and discard the cinnamon sticks.
  • Reheat the cream mixture. Whisk together the egg yolks. Then slowly whisk the cream mixture into the egg yolks by the ladleful. Return the mixture to the pot and heat over medium-high heat, whisking constantly, until the mixture coats the back of a spoon, 5 to 8 minutes.
  • Strain the mixture and divide among six 2- to 4-ounce small ramekins.
  • To assemble the crisp: Preheat the oven to 325 degrees F.
  • Grease six 6-ounce brulee dishes with butter. Spoon the crisp filling into the dishes and divide the crisp topping evenly to top them. Bake until the tops are golden and the edges are bubbling, 30 to 40 minutes, depending on the depth of the dishes.
  • Let cool until just warm, 20 to 30 minutes. Top with the toffee pecans and serve with the cinnamon creme anglaise.

1/2 tsp cinnamon

4 Tbsp butter, cut-up in small pieces

3/4 c packed brown sugar

  • 1. Preheat oven to 375. Grease bottom & sides of an 8x8 square pan with shortening.

1/2 a lemon, juice of
1 tablespoon arrowroot (corn or potato starch would be an ok substitution)
2 teaspoons cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
1 pinch clove (about 1/16 teaspoon)
1/2 cup pure maple syrup
1 1/2 cups rolled oats
1/3 cup all-purpose flour
1 teaspoon cinnamon
1/8 teaspoon salt
2 tablespoons canola oil
2 tablespoons pure maple syrup
1 teaspoon vanilla

Steps:

  • Preaheat oven to 350 F.
  • In a large bowl squeeze lemon juice over sliced apples.
  • Add the arrow root and spices making sure all apples are coated.
  • Move apple mixture to the baking dish and drizzle the maple syrup over it.
  • Cover with tin foil and bake for 35 minutes.
  • Meanwhile prepare the topping.
  • Sift dry ingredients together, and in a seperate bowl, mix wet ingredients well.
  • Fold wet into dry mixing with a fork as you go along, until well coated and crumbly.
  • When apples are done baking, remove from oven and toss, then flatten them evenly with the back of a spatula or wooden spoon.
  • Sprinkle the topping evenly over the apple mixture and bake uncovered for 25-30 minutes, until top feels crispy.

9 granny smith apples
1 lime (juice only)
1/2 cup brown sugar
1/2 cup white sugar
2 teaspoons cinnamon (or to taste)
1 cup brown sugar
1 cup flour
1/2 cup sliced pecans
1/2 cup butter

Steps:

  • For filling:.
  • Peel the apples, slice and dust with both sugars (1/2 cup brown sugar & 1/2 cup white sugar), lime juice and cinnamon and allow to site in large mixing bowl for 10 minutes to marinate.
  • For topping:.
  • In a Cuisinart-type food processor, blend together 1 cup brown sugar, flour and pecans.
  • When the mixture gets almost smooth, add in chucks of the butter and pulse until the mixture becomes the consistency of wet sand.
  • Do not over mix or the topping will become gluey.
  • In a cast iron skillet (any size will work!).
  • Preheat the pan to 300 degrees in a convention oven. Grease the pan with just a touch of butter or non-stick cooking spray. Then add in a heavy helping of the apple mixture.
  • Top with a thick layer of the crumbled topping and bake at 300 degrees for approximately 60 minutes.
  • Keep checking to be sure that the top does not over brown.
  • If the top gets too brown, lower the temperature to 275 and keep an eye on the oven.
  • When the topping is golden brown and the apples are lightly bubbling, the dessert is ready.
  • Serve in the pan family style, or scoop out and top with cinnamon ice cream.

1 (12.4 ounce) package refrigerated cinnamon roll dough with icing
1 cup rolled oats
1 cup brown sugar
½ cup all-purpose flour
1 tablespoon ground cinnamon
½ teaspoon salt
½ cup margarine, softened
8 Granny Smith apples, peeled and sliced, or more to taste
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll cinnamon rolls onto a work surface to desired thickness; press into the bottom of a 9x13-inch baking dish.
  • Mix oats, brown sugar, flour, 1 tablespoon cinnamon, and salt on a bowl; add margarine and mix until crumbly.
  • Spread apples over cinnamon roll crust. Mix white sugar and 1 teaspoon cinnamon together in a bowl and sprinkle over apples; top with oat mixture.
  • Bake in the preheated oven until apples are tender, 40 to 50 minutes.
  • Place icing in a microwave-safe bowl; heat in microwave until warmed, 20 to 30 seconds. Pour icing over crisp.

1 cup Gold Medal™ whole wheat flour
3/4 cup packed brown sugar
1/3 cup butter or margarine, melted and cooled
1 teaspoon baking powder
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 egg
Ice cream, if desired

Steps:

  • Heat oven to 350°F.
  • Arrange apples in ungreased square baking dish, 8x8x2 inches.
  • Stir together remaining ingredients except ice cream until crumbly; sprinkle over apples. Bake 35 to 45 minutes or until apples are tender. Serve warm with ice cream.
