2 cups sugar
3/4 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking soda
1 teaspoon salt
3 cups finely chopped peeled tart apples
TOPPING:
2 tablespoons butter, softened
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup sweetened shredded coconut
1/3 cup chopped walnuts

Steps:

  • In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking soda and salt; gradually beat into sugar mixture (batter will be thick). Fold in apples. Spread into a greased and floured 13-in. x 9-in. baking pan. , For topping, beat the butter, sugar and cinnamon in a small bowl. Stir in coconut and walnuts; mix well. Sprinkle over the batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in center comes out clean.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup dark brown sugar
2 eggs
1/4 tsp vanilla extract
1 1/4 cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 1/2 cups chopped and peeled apples (about 2 medium apples)
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray a 9-inch round cake pan with cooking spray.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in the chopped apples and walnuts. Spoon into your greased pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool about 10-15 minutes. Cut the warm cake into slices and serve with ice cream.

1 package yellow cake mix (regular size)
1 can (21 ounces) apple pie filling
4 large eggs, room temperature
2/3 cup canola oil
6 tablespoons cinnamon sugar
GLAZE:
1 cup confectioners' sugar
1/4 teaspoon ground cinnamon
1 to 2 tablespoons water

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. Combine cake mix, pie filling, eggs and oil; beat on low speed 30 seconds. Beat on medium 2 minutes. Pour half of the batter into prepared pan. Sprinkle with 3 tablespoons cinnamon sugar.   • To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla.
