FRIED CINNAMON STRIPS

1 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
10 flour tortillas (8 inches)
Vegetable oil

Steps:

  • In a large bowl bag, combine sugar, cinnamon and nutmeg; set aside. , Cut tortillas into 3x2-in. strips. Heat 1 in. of oil in a cast-iron or other heavy skillet to 375°, fry 4-5 strips at a time until golden brown, 30 seconds on each side. Drain on paper towels. , While still warm, place strips in bowl with sugar mixture; shake gently to coat. Serve immediately or store in an airtight container.

1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup chopped almonds

Steps:

  • In a small bowl, cream butter and 1/2 cup confectioners' sugar until light and fluffy. Beat in vanilla. Gradually add flour and mix well. Stir in almonds. 2 large egg whites
6 teaspoons vanilla extract
4 cups unblanched almonds
1/3 cup sugar
1/3 cup packed brown sugar
1 teaspoon salt
1/2 teaspoon ground cinnamon

Steps:

  • In a large bowl, beat egg whites until frothy; beat in vanilla. Add almonds; stir gently to coat. Combine the sugars, salt and cinnamon; add to nut mixture and stir gently to coat. , Spread evenly in 2 greased 15x10x1-in. baking pans. 1 egg white
1 teaspoon cold water
4 cups whole almonds
½ cup white sugar
¼ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
  • Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.

1 teaspoon sugar
1/2 teaspoon salt
4-1/2 teaspoons sherry or chicken broth
2 egg whites, lightly beaten
1-1/2 cups ground almonds
1 pound boneless skinless chicken breasts, cut into 1/2-inch strips
2 tablespoons canola oil
Honey mustard, optional

Steps:

  • In a shallow bowl, combine the cornstarch, sugar, salt and sherry; gradually stir in egg whites. Place almonds in another shallow bowl. 1 teaspoon plus 3 tablespoons butter, cubed
2 cups sugar
3/4 cup light corn syrup
1/4 cup water
3 cups slivered almonds, toasted
2 teaspoons ground cinnamon
1/2 teaspoon salt
1-1/2 teaspoons baking soda
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 200°. Grease 2 baking sheets with 1 teaspoon butter; place in oven to warm., In a large heavy saucepan, combine sugar, corn syrup and water. Bring to a boil, stirring constantly to dissolve sugar. Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook, without stirring, over medium heat until a candy thermometer reads 240° (soft-ball stage). Stir in almonds, cinnamon, salt and remaining 3 tablespoons butter; cook until thermometer reads 300° (hard-crack stage), stirring frequently and brushing sides of pan as needed., Remove from heat; stir in baking soda and vanilla.
