CINCO DE MAYO CASSEROLE
A simple, satisfying main dish that our family enjoys. You can use reduced-fat cheeses and sour cream, but don't use the fat-free choices. Serve with a dollop of sour cream, sliced black olives, more salsa, and warmed tortillas.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground beef to a 9x13-inch casserole dish.
- Heat oil in a skillet over medium heat; cook and stir onion and garlic in the hot oil until onion is translucent, about 10 minutes. Spoon onion mixture over ground beef.
- Mix tomatoes with green chile peppers, salsa, corn, sour cream, 1 cup Cheddar cheese, salt, and black pepper into ground beef mixture; top with remaining 2 cups Cheddar cheese.
- Bake in the preheated oven until cooked through and cheese is melted, about 45 minutes. Let stand for 10 minutes before serving.

~ CINCO DE MAYO BURRITO BAKE ~
My family has always loved this tasty casserole, with Cinco de Mayo right around the corner, I thought we'd have this tasty meal a little early. They didn't want to wait until the 5th...LOL Enjoy!

Steps:
- 1. In a large skillet, over medium heat, add 1 tablespoon oil. To this, crumble in the ground beef, onion and garlic. Cook until beef is no longer pink and onion is tender. Drain and return to skillet.
- 2. Next stir in the taco seasoning, green chiles and re fried beans. Heat through and set aside.
- 3. Preheat oven to 350 degree F. Spray a 4 quart casserole with non stick cooking spray. In a bowl, mix the sour cream and soup. Spread half of the mixture evenly into the bottom of the dish.
- 4. Next, cut 2 flour tortilla's into pieces and spread evenly over sauce. Spread half of the meat mixture evenly over the tortillas. Sprinkle a layer of half the cheese and drizzle evenly with half of the taco sauce.
- 5. Repeat layers one more time, ending with cheese. Place in oven and bake for 40 - 45 minutes or until golden and bubbly.
- 6. Once removed from oven I let it set up for at least 20 minutes before serving. Serve with sour cream and green onions if desired.

- In a skillet, cook beef over medium heat until no longer pink; drain.
- Add the beans, onion and taco seasoning.
- Unroll crescent roll dough. Press onto the bottom and up the sides of a greased 13x9x2 inch baking dish; seal seams and preforations.
- Spread beef mixture over crust; sprinkle with cheeses.
- Bake, uncovered, at 350* for 30 minutes or until golden brown. Sprinkle with toppings of your choice.
