South Beach Style Tuna Salad With Low Fat Cilantro Mayo image

I've been doing the South Beach Diet for a week now and created this scrumptious salad today. It was so yummy that I know I'll eat this for a long time. It is a must for cilantro lovers!

Number Of Ingredients 12

1 (3 ounce) package of fresh packed albacore tuna (water packed not oil packed) or 1 (3 ounce) package light chunk tuna (water packed not oil packed)
1 garlic clove, crushed
1/4 cup chopped fresh cilantro
1 1/2 teaspoons reduced-fat mayonnaise or 1 1/2 teaspoons light mayonnaise
1 teaspoon spicy brown mustard
1 tablespoon fresh lemon juice
1 -2 dash Frank's red hot sauce
1/4 teaspoon creole seasoning (optional)
salt & fresh ground pepper
1 cup mixed salad green
6 cherry tomatoes, halved
1 -2 teaspoon balsamic vinegar

Steps:

  • Place salad greens in bowl and top with tomatoes.
  • In a separate bowl, mix tuna, garlic, cilantro, mayo, brown mustard, lemon juice, hot sauce and creole seasoning (if desired), salt and pepper to taste.
  • Mix well.
  • Mound tuna mixture on top of salad greens.
  • Drizzle with balsamic vinegar and serve.

4 slice turkey breast
4 medium boston lettuce leaves
4 scallions
4 red bell pepper strips
CILANTRO MAYONNAISE
3/4 c reduced-fat mayonnaise
3/4 c loosely packed cilantro leaves
1 Tbsp fresh lime juice
1 tsp light soy sauce
1 small clove garlic

Steps:

  • 1. Place 1 slice of turkey on a lettuce leaf spread with Cilantro Mayonnaise (see below). Add 1 scallion and 1 pepper strip. Fold into a tight, cigarlike roll.
  • 2. Cilantro Mayonnaise: Place the mayonnaise, cilantro, lime juice, soy sauce, and garlic in a blender or food processor. Blend until smooth.

1 tablespoon extra virgin olive oil
2 bell peppers, chopped
1 1/2 cups mushrooms, chopped
1 large onion, chopped
2 celery ribs, chopped
3 garlic cloves, minced
1 tablespoon chili powder
1 tablespoon dried oregano
1 teaspoon cumin
1/4 teaspoon salt
2 (15 ounce) cans pinto beans
1 (14 1/2 ounce) can no-salt-added diced tomatoes

Steps:

  • In a large saucepan, heat oil over medium heat. Add peppers, mushrooms, onion,celery, and garlic. Cook about 7 minutes until vegetables begin to soften. Add seasonings and continue to cook an additional 5 minutes, stirring occasionally.
  • Add beans and tomatoes with all their juices and bring to a gentle simmer. Simmer 25 to 30 minutes, until chili is fragrant and slightly thickened.

I like to call these 'Cheesy Goodness'. I'm telling you these are really great!! Now I confess I put in more veggies than they suggest on SBD and SBD uses egg substitute but, man, are they good!! My family had them for breakfast at Thanksgiving last year. You know, when your rushing aroung trying to prepare stuff and want to eat very light. They LOVED them! NOTES: Make sure you really spray entire cup and use FOIL baking cups. Paper cups don't hold up. Can be frozen and reheated in the microwave or toaster oven. Any combination of appropriate vegetables and cheeses and protein may be used. If using fresh spinach use 1 (one) pound well rinsed and blanched.

1 (10 ounce) package frozen chopped spinach
6 eggs
3/4 cup shredded cheese
1/3 cup diced bell pepper (any color)
1/3 cup diced onion
1/3 cup cooked turkey sausage (optional) or 1/3 cup bacon (optional)
1/3 cup shredded carrot (optional)
3 drops hot pepper sauce (optional)

Steps:

  • Defrost the spinach.
  • Drain the excess liquid.
  • Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray (VERY IMPORTANT).
  • Combine the eggs, cheese, peppers, onions, spinach and any other optional ingredients in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees F for 20 minutes, or until a knife inserted in the center comes out clean.
