3 tablespoons butter
3/4 cup finely chopped onion
3/4 cup finely chopped celery
4 cloves garlic, finely chopped
2 tablespoons salt-free seasoning blend
1/2 teaspoon ground red pepper (cayenne)
8 oz peeled cooked crawfish tails, chopped
1 package (8 oz) cream cheese, softened
Celery sticks, if desired

Steps:

  • In 8-inch skillet, melt butter over medium-high heat. Cook onion, celery and garlic in butter 5 minutes, stirring frequently, until tender. Add seasoning blend and red pepper; cook and stir 30 seconds longer.
  • In medium bowl, mix vegetables and crawfish tails. Add cream cheese; stir gently to combine. Serve with celery sticks.

Creamy Crawfish Spread with pickled okra. Serve it on toasted baguette slices for a fabulous southern appetizer.

2 tablespoons butter
3/4 cup finely chopped red bell pepper
1/2 cup finely chopped sweet onion
1 clove garlic (minced)
2 teaspoons cajun seasoning
4-5 dashes tabasco sauce
1/2 pound frozen crawfish tails (defrosted and drained of liquid)
1 8-ounce package cream cheese (softened)
1/4 cup grated Parmesan cheese
3 green onions (sliced)
4 pickled okra (thinly sliced)

Steps:

  • Heat butter in a large nonstick skillet over medium-high heat. Add bell pepper and onion and saute until softened, 3 to 4 minutes.
  • Add garlic and cajun seasoning and saute for 1 minute. Stir in tabasco and crawfish tails. Cook 2-3 minutes to thoroughly warm the crawfish.
  • Turn heat down to medium-low and add cream cheese and Parmesan cheese. Stir until cheeses are melted and everything is combined well.
  • Remove from heat and stir in green onions and pickled okra.

1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1 cup seafood cocktail sauce
12 ounces frozen cooked salad shrimp, thawed
2 cups shredded mozzarella cheese
1 medium green pepper, chopped
1 small tomato, chopped
3 green onions with tops, sliced
Assorted crackers

Steps:

  • In a large bowl, beat the cream cheese, sour cream and mayonnaise until smooth. , Spread mixture on a round 12-in. serving platter. Top with seafood sauce. Sprinkle with shrimp, mozzarella, green pepper, tomato and onions. Refrigerate until serving. Serve with crackers.

1/2 cup butter
1 bunch green onions, sliced (about 1 cup)
1 small green bell pepper, finely chopped
1 package (1 lb) frozen cooked peeled crawfish tails, thawed, undrained
2 cloves garlic, finely chopped
1 jar (4 oz) diced pimientos, drained
2 teaspoons Creole seasoning
1 package (8 oz) cream cheese, cut into cubes
Chopped fresh Italian (flat-leaf) parsley, if desired
Additional sliced green onions, if desired
Toasted baguette slices, if desired

Steps:

  • In large saucepan, melt butter over medium heat. Add 1 cup onions and the bell pepper; cook 8 minutes, stirring occasionally, until bell pepper is tender. Stir in crawfish, garlic, pimientos and Creole seasoning; cook 10 minutes, stirring occasionally.
  • Reduce heat to low. Add cream cheese; cook and stir until mixture is smooth and bubbly.
  • Spoon dip into serving bowl. Garnish with parsley and additional onions. Serve hot with baguette slices.
