CHUNKY BLUE CHEESE DIP
Every time I make this quick blue cheese dip, someone asks for the recipe. It only requires a few items, so its a snap to put together. I often prepare the thick spread with Gorgonzola cheese and serve it with toasted pecans. -Sandy Schneider Naperville, Illinois

- Beat first 4 ingredients until blended; gently stir in blue cheese and chives. Transfer to a serving bowl. If desired, sprinkle with pecans. Serve with apple and pear slices.

CHUNKY BLUE CHEESE AND YOGURT DIP

- Place the shallot, garlic, lemon juice, yogurt, mayonnaise, Gorgonzola, Tabasco, salt, and pepper in the bowl of a food processor fitted with the steel blade. Pulse the processor about 12 times, until the mixture is almost smooth but still a bit chunky. Add the chives and pulse two or three times, until combined. Transfer to a serving bowl, cover with plastic wrap, and chill for at least 2 hours to allow the flavors to develop. Serve with vegetables and/or crackers for dipping.
CHUNKY BLUE CHEESE DRESSING OR DIP
This recipe came from a friend of mine who teaches Home Ec. Its so rich and delicious. I love the chunky texture of this dressing. It also works nicely as a dip for vegetables. If you are as big a fan of blue cheese as I am, I think you will like this, too.

- 1. Stir together buttermilk, sour cream, mayonnaise, vinegar, sugar, and garlic powder until well blended. Season to taste with salt and pepper. Set aside.
- 2. In a small bowl, mash blue cheese with a fork until mixture resembles very large-curd cottage cheese. Work until lumps are the size you prefer. Gently fold into set aside mixture. Chill and serve over green salad or as a dip for vegetables.

- Place everything but chives in processor and pulse about 12 times..add chives and pulse 2-3 times. Trnasfer to serving bowl and chill for at least 2 hours..service with crudites and crackers

- Place the green onions in a medium bowl, reserving 1 tablespoon for garnish. Add the yogurt, blue cheese and pepper, and fold together carefully. Don't smash the cheese too much-you want the dip to have small, medium and large chunks. Top with the reserved green onions. Serve with veggie sticks. I love carrots and celery with this one, but you can find more options.
