Chicken Salad with Toasted Almonds image

This unusual and refreshing chicken salad is perked up by the addition of toasted almonds, tangy pineapple, crunchy water chestnuts and sweet grapes.

4 cups cubed, cooked chicken
2 tablespoons fresh lemon juice
1 cup creamy salad dressing, e.g. Miracle Whip ™
1 teaspoon salt
1 cup pineapple tidbits, drained
1 cup halved green grapes
1 cup blanched slivered almonds, toasted
½ cup chopped water chestnuts
¼ cup shredded lettuce

Steps:

  • In a large bowl, toss the chicken with the lemon juice. Cover and chill for 2 hours.
  • Mix the salad dressing, salt, pineapple, grapes, almonds, water chestnuts and lettuce into the chicken until evenly combined. Chill until serving.

1/2 cup mayonnaise
2 tablespoons sour cream
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
4 cups shredded rotisserie chicken
1-1/4 cups seedless red grapes, halved
1/2 cup chopped pecans
1/2 cup chopped celery
1/4 cup chopped sweet onion, optional
Lettuce leaves or whole wheat bread slices, optional

Steps:

  • In a large bowl, combine the first five ingredients. Add the chicken, grapes, pecans, celery and, if desired, onion; mix lightly to coat. If desired, serve with lettuce leaves or whole wheat bread.

I had chicken breasts left over from a BBQ I had and decided to make a chicken salad. I couldn't find a recipe that I liked so I played around and came up with this. It is delicious!

4 cooked chicken breasts, shredded
2 Granny Smith apples, cut into small chunks
2 cups chopped walnuts, or to taste
½ red onion, chopped
3 stalks celery, chopped
3 tablespoons lemon juice
½ cup vanilla yogurt
5 tablespoons creamy salad dressing (such as Miracle Whip®)
5 tablespoons mayonnaise
25 seedless red grapes, halved

Steps:

  • Toss shredded chicken, apple chunks, walnuts, red onion, celery, and lemon juice together in a large bowl.
  • Whisk vanilla yogurt, salad dressing, and mayonnaise together in a separate bowl; pour over the chicken mixture and stir to coat. Gently fold the grapes into the salad.

Crispy Almond Chicken with Apple-Fennel Salad image

1 1/2 cups panko breadcrumbs
1/2 cup almond flour
Grated zest of 1 lemon, plus 1 tablespoon lemon juice, plus wedges for serving
Kosher salt and freshly ground pepper
2 large eggs
8 thin-cut skinless, boneless chicken breasts (about 1 1/2 pounds)
1/3 cup plus 1 tablespoon olive oil, plus more as needed
4 cups mixed baby greens
1/2 bulb fennel, cored and thinly sliced
1 small crisp red apple, thinly sliced
1/2 cup roughly chopped fresh basil
1/2 small red onion, thinly sliced

Steps:

  • Combine the panko, almond flour, lemon zest and 1/2 teaspoon each salt and pepper in a shallow dish, using your fingers to evenly blend the zest into the crumbs. Lightly beat the eggs in a separate shallow dish and season with salt and pepper. Season the chicken with salt and pepper.
  • Heat about 1/3 cup olive oil in a large nonstick skillet over medium-high heat (it?s hot enough when a pinch of panko sizzles when it hits the oil). Working with 2 or 3 chicken breasts at a time, dip each piece in the beaten egg, letting the excess drip off, then press the chicken into the crumb mixture to coat. Add to the hot oil and cook until browned and cooked through, 1 1/2 to 2 minutes per side. Transfer to paper towels to drain. Reduce the heat if the chicken is browning too quickly and add more olive oil as needed between batches.
  • Toss the greens, fennel, apple, basil and red onion with the lemon juice and the remaining 1 tablespoon olive oil in a bowl; season with salt and pepper. Divide the chicken among plates and serve with the salad and lemon wedges.
