BEST SALISBURY STEAK
A good recipe for Salisbury steak recipe is hard to find! I remember enjoying it often when I was growing up, but when I decided to add it to my recipe collection, I wasn't able to find it in my modern cookbooks. I came up with these ingredients on my own and experimented until it tasted like I remembered. -Faye Hintz, Springfield, Missouri

- In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into two patties. , In a medium skillet, cook patties for 4-5 minutes per side or until browned; drain. Remove to a platter and keep warm. , In the same skillet, saute mushrooms in butter for 2 minutes. Stir in flour; blend well. Add water and bouillon; cook and stir until smooth and thickened. Stir in browning sauce if desired. Return patties to gravy and cook, uncovered, over low heat for 10 minutes, stirring occasionally. Serve with mashed potatoes.

- In a large bowl, combine the beef, egg white, onion, crumbs, milk, horseradish, salt if desired, and pepper. Shape into four oval patties. , In a large skillet cook patties over medium heat for 5-6 minutes on each side or until a thermometer reads 160° and meat is no longer pink. Remove patties and keep warm. Add gravy, mushrooms and water to skillet; heat for 3-5 minutes. Serve over patties and noodles if desired.

CHUCK WAGON SALISBURY STEAK
We like these burgers cooked out on the grill. I have a large family, so we double it. You may also substitute catsup if you don't have any bbq sauce on hand.

Steps:
- 1. Measure cornflakes; crush to one cup.
- 2. Place cereal in mixing bowl.
- 3. Add egg, 1/3 cup barbeque sauce, salt and pepper; beat well.
- 4. Add ground beef; mix only until combined.
- 5. Shape into four oval patties about 3/4 inch thick.
- 6. Brush patties with remaining sauce.
- 7. Bake at 375 degrees for about 25 minutes for medium.
- 8. Shorten or lengthen baking time according to preference.
- 9. When cooking on grill, shorten cook time. 10 minutes per side will yield medium on a hot grill.
