5 lbs small round potatoes
1 package (16 oz, bacon)
1 package (1 oz, dry ranch seasoning)

Steps:

  • Preheat oven to 400 and line a baking sheet with parchment paper.
  • Cut each slice of bacon into thirds.
  • Wrap bacon around each potato, keeping the seams on the bottom. Place on baking sheet.
  • If needed or serving at a party, you can insert a toothpick into the potato and place onto the baking sheet.
  • Repeat until all bacon and potatoes are covered.
  • Sprinkle tops of potatoes with ranch seasoning and bake for 30 minutes, or until your baby potatoes cut through easily.
  • Remove from oven, let set for 5 minutes to cook a little (They get super hot!) and serve.
  • Recipe easily adaptable by adjusting how many potatoes you need for your side dish or appetizer

16 small potatoes

Steps:

  • Preheat oven to 400 degrees. Wrap each bacon piece around a potato and secure with a toothpick. Place in a baking dish and bake until bacon is crisp and potatoes are tender when pierced with a knife, 40 to 50 minutes.

4 slices thick-cut bacon, each cut crosswise into 9 pieces
Kosher salt
12 medium Yukon gold potatoes, peeled
1 stick unsalted butter
Sea salt and freshly ground pepper
2 scallions, finely chopped
2 tablespoons finely chopped fresh parsley
1 clove garlic, finely chopped

Steps:

  • Lay the bacon pieces on a baking sheet and freeze until hard, about 30 minutes. Meanwhile, preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil.
  • Using a sharp knife, make crosswise cuts in each potato, about 1/8 inch apart, stopping about 1/4 inch from the bottom.
  • Add the potatoes to the boiling water and cook 4 minutes. Remove with a slotted spoon and carefully transfer to a baking sheet; let cool slightly. Pat the potatoes dry, then insert 3 pieces of the frozen bacon into the cuts of each potato, spacing the bacon evenly and letting it poke out of the top. Melt 5 tablespoons butter and brush generously over the potatoes and in the cuts. Reserve any excess butter for basting. Season the potatoes with salt and pepper.
  • Transfer the potatoes to the oven and bake until the outsides are browned and crisp, about 2 hours, basting halfway through with the reserved melted butter.
  • When the potatoes are almost done, melt the remaining 3 tablespoons butter and mix with the scallions, parsley and garlic. Spoon over the potatoes and roast 5 more minutes. Transfer to a platter and season with salt and pepper.

1/2 pound fingerling potatoes
6 slices bacon, minced
2 sprigs fresh rosemary, chopped
Salt and freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the potatoes and boil them until just tender, 10 to 15 minutes. Cut in half. Meanwhile, in a pan, cook the bacon until crispy. Drain the potatoes and place them in an oven-safe pan with the bacon, bacon fat, and rosemary sprigs. Season with salt and pepper.
  • Bake in the oven for about 20 to 25 minutes, remember to stir the pan once or twice so that the potatoes are evenly browned and the bacon fat completely coats the potatoes.

These are named after my dad Chuck... chuck potatoes cause he invented the recipe.... thanks dad...love ya I sometimes cook these on the grill as well, be careful of flare-ups cause of the grease, I put in a baking dish and then cook on the grill. Can easily double or triple the recipe, just adjust the cooking time.

6 - idaho potatoes, scrubbed clean
1 - onion,peeled cut in half & thinly sliced
- butter
6 slice(s) bacon
- salt & pepper to taste

Steps:

  • Turn oven onto 350. Get 6 squares of aluminum foil lined up place potato on each one.
  • Cut a large V shape out of each potato. Put about 1 tablespoon of butter in the V of each potato, place 2-3 slices of onion ontop of butter. Sprinkle potato with salt and pepper. Put the cut out V section of potato back in (it will stick out some because of the butter and onion but it will be okay. Wrap bacon around the entire potato starting at one end,ending up on the other end. Wrap each potato in foil closing foil tightly around potato.
  • Place on rimmed baking sheet (I put a piece of foil down on my baking sheet to catch any grease drips). Bake for 1 to 1/4 hours, turning potatoes halfway through. Check for potatoes doneness with a knife inserted into potato. Bacon will be done but not crisp, and a little pale in color because of the foil steaming/cooking.

Steps:

  • Heat oven to 425ºF.
  • Cook bacon in large skillet until done but still pliable. Meanwhile, bake potatoes in foil-lined 15x10x1-inch pan sprayed with cooking spray 5 min. or just until potatoes are thawed.
