My husband loves Ben & Jerry's Chubby Hubby Ice Cream, this is a bar cookie that has many of the qualities of that ice cream. I adapted some of my favorite cookie recipes into these bars.

Number Of Ingredients 13

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, at room temperature
1 cup light brown sugar
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
1 cup semi-sweet chocolate chips
1 1/2 cups miniature pretzel twists, coarsely chopped
1/4 cup peanut butter chips, for top
1/4 cup chocolate chips, for top
1/4 cup pretzel, crumbled, for top

Steps:

  • Preheat the oven to 350°F Foil line and spray a 9X13" pan with cooking spray.
  • In a bowl, whisk the flour, baking soda and salt. Using a mixer, beat the butter and both sugars at medium speed until light and fluffy. Beat in the eggs and the vanilla extract. On low speed, beat in the dry ingredients just until incorporated. Stir in the peanut butter chips, chocolate chips and pretzel pieces.
  • Spread the batter evenly in the pan and press it down evenly with a spatula. Sprinkle extra peanut butter chips and chocolate chips. Sprinkle remaining pretzel bits.
  • Bake for 30 minutes, until golden brown. Cool Completely
  • Lift bars out of the pan using foil. Place on a cutting board. Cut even squares.

1 c semi-sweet chocolate chips
1 1/2 c coarsely chopped pretzels
1/4 c peanut butter chips (for top)
1/4 c chocolate chips (for top)
1/4 c coarsely chopped pretzels (for top)

Get ready to indulge. If you're not quite in the mood for a frozen treat, be sure to give these dessert bars a try. This recipe is the perfect combination of chocolate and peanut butter.

3/4 c butter flavored crisco
2 Tbsp skim milk (i used 2%)
1 1/4 c brown sugar
1 egg
1/4 c malted milk powder (original, not chocolate)
1 1/2 c flour
1/2 tsp kosher salt
3/4 tsp baking soda
FILLING
1 can(s) (14oz) sweetened condensed milk
2 Tbsp unsalted butter
1/3 c cup creamy peanut butter
60 chocolate covered pretzel twists (flipz)
12 oz milk chocolate morsels

Steps:

  • 1. Preheat oven to 375 degrees F. In large mixing bowl,beat crisco,milk and brown sugar until combined. Add egg and beat until fully combined. Slowly beat in malted milk powder, flour,salt and baking soda.
  • 2. Press cookie dough into a large baking sheet with one inch sides. I used a 15 1/2x10inch pan. Bake for 18 to 20 minutes until browned. Remove from oven. Meanwhile,in large sauce pan,heat sweetened condensed milk and butter until warmed over med-low heat.
  • 3. Add in milk chocolate and heat until smooth, whisking constantly. Pour into prepared cookie crust. In microwave safe bowl, melt peanut butter for 30 seconds. Drizzle over fudge filling and immediately press in the chocolate covered pretzels. Refrigerate cookies for 2 hours or overnight. Cut into squares. ENJOY!

Mmmmmmmmmmmmm! All the flavors of Ben & Jerry's Chubby Hubby ice cream. It's vanilla ice cream with chocolate & peanut butter & pretzels. It is creamy & sweet with a hint of saltiness from the pretzels.

2 cup(s) all purpose flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 1/2 stick(s) butter, unsalted, room temperature
1 cup(s) light brown sugar, firmly packed
1/2 cup(s) sugar
2 x large eggs
1/3 cup(s) peanut butter, crunchy
1 tablespoon(s) pure vanilla extract
1 1/4 cup(s) semi-sweet chocolate chips
1 1/2 cup(s) pretzels, chopped, divided
1/2 cup(s) peanut butter chips

Steps:

  • Preheat oven to 350 degrees F. Spray a 9" x 13" baking pan with nonstick cooking spray (I like bakers joy).
  • Put your pretzels in a sealable bag & roughly chop them up. I just pound mine with a rolling pin. You don't want them to be pulverized because you want folks to really be able to see & taste the pretzels in the bars.
  • In a medium bowl, combine flour, baking soda & salt; mix well.
  • Using a stand mixer, beat together butter, brown sugar & sugar at medium speed. Mix until combined & fluffy.
  • Now add in eggs, vanilla & peanut butter.
  • On low speed, slowly add in your flour mixture just until it is incorporated into the batter. Overmixing your batter can result in a tougher bar.
  • Now add in 1 C semi-sweet chocolate chips & 1 C chopped pretzels.
  • Stir this mixture up with a spoon, batter will be very stiff. Or you can turn your mixer back on the lowest setting until it is combined, just don't overmix it.
  • Spread batter into baking pan. This stuff is pretty thick so just do your best to spread it out evenly.
  • In a small bowl, mix together your remaining toppings (1/2 cup chopped pretzels, 1/4 cup chocolate chips & 1/2 cup peanut butter chips).
  • Sprinkle mixture over top of batter.
  • Bake about 30 - 35 minutes until golden brown.
  • Cool completely before cutting into squares.
