RUM OR BOURBON BALLS
It isn't Christmas without these!!! They go fast!! Try using bourbon in place of the rum!

Steps:
- Place chocolate chips into a microwave-safe medium bowl. Heat in the microwave for 1 minute, stir and then continue to heat at 20 second intervals, stirring between each, until melted and smooth. Stir in sugar and corn syrup. Blend in rum. Add crushed vanilla wafers and chopped nuts. Mix until evenly distributed. Cover and refrigerate until firm.
- Roll the chilled chocolate mixture into bite-size balls. Roll balls in a mixture of ground nuts and confectioner's sugar, or just plain confectioner's sugar. Store in a covered container for a week before serving to blend the flavors.

CHRISTMAS BOURBON BALLS
A family favorite at Christmas time. A flavorful sweet treat with no baking necessary that your party guests will rave about! No one under the age of 21 should eat these sweet little bourbon filled morsels!

Steps:
- Sift together cocoa powder and 1 cup of powdered sugar ina large bowl.
- Stir in 1/4 cup bourbon.
- Add 2 Tablespoons light Karo Syrup.
- Mix well.
- Add 2 1/2 cups of crushed vanilla wafers.
- Add 1 cup of crushed pecans.
- Mix extrememly well.
- Form them in balls by hand.
- Roll them in the remaining 1/2 cup of powdered sugar.
- These will keep in a container for up to a week in the refrigerator.

- Mix together well in a bowl.
- Cover in the fridge for ½ hour. (That's what we do in Australia.).
- (Yours could probably sit in the bowl in the snow.).
- Shape into balls and roll in coconut or chocolate sprinkles.

- In a large bowl, stir together vanilla wafers, confectioners sugar, pecans, corn syrup, cocoa and bourbon (rum) until thoroughly combined.
- Shape into 1 inch balls.
- Pour granulated sugar in a pie plate then roll balls in the sugar.
- Store in an airtight container for up to 2 weeks.
