JAMIE'S SPICED SUGAR AND CHRISTMAS POPCORN RECIPE
This Jamie Oliver sugar mix really does smell like Christmas (although you are not limited to eating it only at Christmas!). The sugar recipe makes loads, (but is easily halved) and it keeps in an airtight container for absolutely ages and can be used on a variety of things (to sweeten whipped cream, on porridge, on fruit--you name it...), so it's well worth doing a full batch. I don't usually do sweet popcorn, but I like this one!

Steps:
- SPICED SUGAR:.
- Put all of the sugar ingredients, except the sugar into a food processor and whiz until well blended and fine. Add the sugar and whiz again to combine everything together.
- Spread the sugar out on a tray to dry out for a couple of hours before using, as it will be slightly moist at this stage.
- Once dry, sieve the sugar to catch any large pieces and discard them. Keep the sugar in an airtight container. It will keep for ages!
- POPCORN:.
- Put the oil and butter into a pan on high heat. Once the butter has melted, add the popcorn and stir well to coat. Cover and leave to pop, shaking occasionally.
- Put the sugar into a large bowl and when the popcorn is ready, add it to the bowl, tossing quickly to coat it with the sugar.

- Add popcorn to a large bowl.
- Place candy melts or white chocolate in a medium microwave-safe bowl. Microwave at 50% power in 15-second increments, stirring every 15 seconds, just until melted. It usually takes me about 1 minutes and a half with my microwave.
- Working quickly, pour melted candy melts or white chocolate over the popcorn and gently but quickly stir until the popcorn is coated.
- Top liberally with the sprinkles, stirring once or twice to help distribute the sprinkles.
- Spread on a parchment-paper-lined cookie sheet and allow to harden, about one hour. Break up and serve.
- Keeps up to three days at room temperature when kept in an airtight container.
MARSHMALLOW POPCORN CHRISTMAS TREE
I have almost forgotten about this memory maker recipe. I can't find the actual recipe, I brought it home from school one day and so it became a yearly Christmas tradition for me and my mom to make this wonderful edible little popcorn tree. My keikis (children) faintly remember this Christmas Tree, only because I stopped making...

Steps:
- 1. In a large pot, melt the butter and marshmallows.
- 2. Spread the popcorn out on a jelly roll pan and drizzle all the melted marshmallow over it. Toss it a little so that the popcorn is all coated.
- 3. Mound the popcorn onto a Christmas serving platter and mold the popcorn into a large cone.
- 4. Work quickly to shape the cone as it will become more difficult to mold it as it cools down.
- 5. With all the colorful candies, you can stick them onto the popcorn tree or use toothpick to decorate the tree.
- 6. Don't forget to put the last and most important candy on the top of the tree, use a lollipop.
POPCORN CHRISTMAS TREES
The kids in my family like these popcorn trees instead of traditional popcorn balls. You can substitute red-hot candies for the M&M's if you like. -Nicole Clayton, Las Vegas, Nevada
