I got this recipe from a friend who used to work at the deli of our local grocery. When they were bought out by a larger chain their cheese ball recipe changed. This is the only way I can get my favorite cheese ball now. The grocery called it "chipped beef" but it actually uses thinly sliced Buddig roast beef.

Number Of Ingredients 6

8 ounces cream cheese
2 ounces Buddig beef, chopped into small pieces
1 1/2 chopped green onions
1/4 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder
chopped walnuts (optional) or dried parsley, to cover (optional)

Steps:

  • Mix all ingredients except parsley or nuts.
  • Form into a ball.
  • (I usually put it in plastic wrap, roll into a ball and refrigerate until more solid).
  • Roll in nuts or parsley if desired.

2 8 oz cream cheese, softened
2 2 oz package of chipped beef, finely chopped (reserve 1/4 cup for rolling)
5 green onions, diced (reserve 1/4 cup for rolling)
1 cup shredded cheddar cheese
1/2 teaspoon seasoned salt
2 tablespoon Worchestershire sauce
1/2 teaspoon garlic powder

Steps:

  • Place all ingredients into a medium bowl and mix together.
  • Form mixture into a ball and wrap in plastic wrap.
  • Chill in the refrigerator for at least 20 minutes.
  • Place reserved chipped beef and green onions on a plate or in a large bowl. Unwrap cheese ball and roll in beef an onions to coat.
  • Serve with cracker, vegetables, or sliced bread.

8 ounces cream cheese
4 ounces dried beef
3 tablespoons horseradish
chopped walnuts
assorted cracker

Steps:

  • Chop beef into small pieces.
  • Mix cream cheese& cheddar with hands, add beef& mix again.
  • Put horseradish in strainer, drain well& add to cheese mixture.
  • Shape into 2 balls& refrigerate overnight.
  • Put chopped walnuts into plastic bag.
  • Add a ball& press.
  • Refrigerate until serving.
  • Serve w/crackers.

5 packages (2 ounces each) thinly sliced dried beef
12 ounces cream cheese, softened
1/3 cup finely chopped sweet onion
4 drops Worcestershire sauce
Ritz crackers and Assorted fresh vegetables

Steps:

  • Place beef in a food processor; pulse until finely chopped. In a large bowl, beat cream cheese until smooth. Stir in 2/3 cup beef and the onion and Worcestershire sauce. This is my most requested recipe. We have it at every family function, and it always goes fast. I often double the recipe, making one really large cheese ball. I got this from my mother, who got it from an old cookbook. It really is simple and delicious. You will never want to make another cheese ball. Enjoy!

Number Of Ingredients 7

1 (8 ounce) package cream cheese, softened
1 (2 ounce) package dried beef (also called chipped beef- I use Carl Budding)
1/4 cup green onion
1/2 teaspoon garlic salt
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
2 tablespoons mayonnaise

Steps:

  • Dice the dried beef into small pieces. This is dependent upon how small you want your dried beef to be. I usually dice mine into 1/4" squares (approx.), but others like it more finely diced.
  • Dice/mince the green onions.
  • Add all of the ingredients to the softened cream cheese in a medium sized bowl. Stir. (I usually use my clean hands for this; a wooden spoon also works with a bit more effort). The ingredients should be consistent throughout the cheese ball.
  • Wrap in plastic wrap. Store in the fridge for at least 6-8 hours. This is one of those recipes that is at its best after sitting overnight. This way, the flavors really blend.
  • Serve with crackers. My family likes Wheat Thins, but it really goes with any type of cracker. Enjoy!

I am terrible about not asking for a recipe, I was watching a girlfriend make this and i just remembered the ingredients. Not sure if i got the amounts right but I have fiddled with it for years and this seems the best. You could also cover it with nuts, or for a Daytona 500 party, I shaped it with a ring mold, covered it with finely chopped black olives and called it a Cheese Tire!

2 (4 ounce) packages chipped beef
2 bunches scallions
1 -2 teaspoon Worcestershire sauce
assorted cracker
finely chopped parsley (optional)
chopped pimiento (optional)

Steps:

  • Chop chipped beef and scallion fairly small but not minced.
  • Use green part too.
  • Mix into cream cheese with the worcestershire sauce until well incorporated and smooth.
  • Mold into a ball, or place in a crock.
  • Serve with assorted crackers.
  • Options--Cover with parsley and pimentos for a'Christmas-y' look.
