Yield 6 servings.

Number Of Ingredients 6

1 tablespoon shortening
2 large eggs
1 cup whole milk
1 tablespoon butter, melted
1 cup all-purpose flour
1/2 teaspoon salt

Steps:

  • Using 1/2 teaspoon shortening for each cup, grease the bottom and sides of six 6-oz. custard cups or the cups of popover pan. If using custard cups, place on a 15x10x1-in. baking pan. , In a small bowl, beat eggs; blend in milk and butter. Beat in flour and salt until smooth (do not overbeat). , Fill cups half full. Bake at 450° for 15 minutes. Reduce heat to 350°; bake 30 minutes longer or until very firm. Remove from the oven and prick each popover to allow steam to escape. Serve immediately.

Santa, and all his elves, would love some freshly baked popovers on Christmas morning!

Number Of Ingredients 5

2 large eggs
1 cup unbleached, all-purpose flour
1 cup milk
1 Tablespoons safflower oil
1 teaspoon salt

Steps:

  • Preheat oven to 475 degrees. Grease 6 popover or large muffin cups.
  • Beat eggs in a mixing bowl or food processor.
  • Add flour, milk, oil, and salt. Beat until smooth.
  • Divide mixture among the cups. They will each be about ½ full.
  • Bake for 15 minutes. DO NOT open the oven door.
  • Reduce heat to 350 degrees. Again, DO NOT open the oven door.
  • Bake for another 25-30 minutes.
  • Prick each popover with a fork to let steam escape.
  • Remove from oven and serve while hot.

- 2 eggs
- 7/8 cups milk
- 1 cup sifted flour
- ¼ tsp. salt
- ½ tsp. melted butter

Steps:

  • Sift salt and flour. Beat eggs. Mix milk, butter, flour and eggs. Pour into a greased popover pan about ½ way. Let rest. Place in a cold oven and set the temperature to 350 degrees F. Bake for 45 minutes.
