CHOCOLATE CHRISTMAS MICE COOKIES



Chocolate Christmas Mice Cookies image

These use Chocolate-Covered Cherry Mice(recipe previously posted). These are easy to make and a great project to do with children. No baking required, just use Hershey's chocolate kisses, double stuffed Oreos, maraschino cherries and chocolate chips to "build" your Christmas mice!

24 Oreo Double Stuff cookies
6 ounces semisweet chocolate
1/2 teaspoon butter
1 ounce paraffin wax, chopped (see Notes)
1/2 cup chocolate chips (see Notes)
1/2 cup sliced almonds
1 (3 ounce) package red decorating gel (clear)
1 (3 ounce) package green decorating gel (clear)
24 cherries
1 (8 ounce) package , hershey's kisses

Steps:

  • Carefully twist Oreo cookies apart. Set aside the ones with the cream filling on them; save plain halves for another use. (You could make crumbs for pie crust).
  • In microwave, melt chocolate chip, paraffin and butter; stir until smooth.
  • Holding cherry by stem, dip in melted chocolate, then press onto the bottom of a chocolate kiss.
  • Place cherry and kiss onto the cream filling of the cookie. Let stem extend over the edge.
  • Make ears for your mouse by placing sliced almonds between the cherry and the kiss (before the chocolate sets).
  • Place in refrigerator until chocolate sets.
  • With green decorative gel, pipe holly leaves on white cream of cookie by the mouse.
  • Pipe holly berries between the leaves with the red gel.
  • Pipe eyes on each chocolate kiss.
  • Store in airtight container at room temperature.
  • TIPS:.
  • I used Almond Bark instead of the chocolate chips and eliminated the need for shortening.
  • Maraschino cherries need to have stems and be well-drained.
  • Keep chocolate hot by putting in a bowl over a steaming pan of water.
  • I used a teapot, took the lid off and placed my bowl over it after melting chocolate in microwave.
  • You can use a clean eyebrow tweezer or something else to grasp the cherries by the stems to dunk in chocolate.
  • Make extras because everyone at your party will want one to take home to show around and to use as a pattern to make their own!

2/3 cup semisweet chocolate chips
2 cups chocolate wafer crumbs, divided
1/3 cup sour cream
36 red nonpareils
1/4 cup sliced almonds
18 pieces black shoestring licorice (2 inches each)

Steps:

  • In a microwave, melt chocolate chips; stir until smooth. Stir in 1 cup wafer crumbs and sour cream. Refrigerate, covered, 1 hour or until firm enough to shape., Place remaining wafer crumbs in a shallow bowl. For each mouse, roll about 1 tablespoon crumb mixture into a ball; taper one end to resemble a mouse. Roll in wafer crumbs to coat. Attach nonpareils for eyes, sliced almonds for ears and licorice pieces for tails. Store in an airtight container in the refrigerator.

1 lb cherries, with stems
1 lb Hershey chocolate kiss
semi-sweet chocolate chips, for melting
sliced almonds
icing (optional) or red-hot candies (optional)

Steps:

  • Melt the chocolate chips in a double boiler and dip a cherriy into the chocolate, holding by the stem ("tail").
  • Set cherry on its side on waxed paper. This is the mouse's body and tail.
  • While chocolate it still gooey, "glue" on a hershey's kiss to the mouse's body, with the bottom of the kiss touching the cherry and the pointy part pointing out, the opposite direction that the tail is pointing.
  • Add sliced almonds in the seam for ears.
  • Decorate with icing or red hots for eyes and nose.
  • Repeat with the rest of the cherries, etc.

½ cup butter, room temperature
1 cup creamy peanut butter
½ cup packed light brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon baking soda
1 ½ cups all-purpose flour
1 cup peanut halves
¼ cup green candy sprinkles
60 3-inch pieces red shoestring licorice

Steps:

  • In a large bowl combine butter and peanut butter; beat until creamy. Add brown and white sugar and beat until fluffy. Beat in egg, vanilla extract and baking soda until well blended. With mixer on low, mix in flour just until blended. Cover and chill for 1 hour, or until firm.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Shape 1 level tablespoon of dough into 1 inch balls. Taper each ball at one end into a teardrop shape. Press flat on one side. Place flat sides down, 2 inches apart on ungreased cookie sheets. Press the sides of the dough in to raise the 'backs' of the mice, as dough will spread slightly during baking.
  • Gently push 2 peanut halves in each 'mouse' for ears, and 2 pieces of green candy for eyes. With a toothpick make a hole 1/2 inch deep in the tail ends.
  • Bake in preheated oven for 8 to 10 minutes, or until firm.
  • Transfer to a cooling rack and insert licorice pieces as tails.

These are cute! Takes about an hour to make alone but more fun to do with a friend.They might just be to cute to eat. This is a no bake recipe. Dip the cherries and put the cookie half next to it, then set both pieces down together add the kiss and press into the cream of the cookie filling. I got this from Taste of Home years ago. Its a family favorite. Lovely when added as that special touch to a plate of cookies. Santa like them too!

1 cup simisweet chocolate chips
2 teaspoons shortening or 2 teaspoons butter

24 perfect sliced almonds
1 (2 ounce) package red decorating gel
1 (2 ounce) package green decorating gel

  • Melt chocolate chips and shortining in Microwave (about 50-60 sec.) Stir until smooth.
  • Holding each cherry by the stem, dip into the melted chocolate. Place on the cookie and add the kiss, pressing the kiss into the cream of the cookie base. Set the covered cherrie slightly off center, with the tail extending over the edge.
  • For ears, place the slivered almonds between the cherry and the kiss.
  • Refrigerate until set.
  • Pipe green holly leaves on the cream and add red berries. Pipe red eyes on each chocolate kiss.
  • Store in air tight container at room temperatue.

The only thing I do different is, I make the eyes green, the nose red, and make a red bow on top next to one ear. I use the decorator's writing gel for this, but be careful. That stuff never really dries...

24 double-stuff oreos, don't sub the thin ones as they don't come apart very easily
1 cup semi-sweet chocolate chips
2 tsp. shortening
24 red maraschino cherries with stems, drained on paper towels
24 plain chocolate hershey kisses
48 sliced almonds
1 small tube red decorator's icing gel
1 small tube green decorator's icing gel

Steps:

  • 1. Carefully twist cookies apart; set aside the halves with cream filling. Save plain halves for another use. In a microwave, melt chocolate chips and shortening; stir until smooth. Holding each cherry by the stem, dip in melted chocolate, then press onto the bottom of a chocolate kiss. Place on the cream filling of cookie, with cherry stem extending beyond cookie edge. *Place off center so you have room for the holly leaves and berries. For ears, place slivered almonds between the cherry and kiss. Refrigerate until set. With green gel, pipe holly leaves on the cream. With a toothpick, drag out just a teensy bit here and there to make the pointed-edge of the leaves. With red gel, pipe holly berries between leaves and pipe green eyes on each chocolate kiss. (They look cutest if the eyes are fairly close together and not too small.) Make a dot on the nose with the red. And make a "bow" up by one ear by piping one small dot and 2 large dots on each side with red. Store in an airtight container at room temperature.

1/2 teaspoon vegetable oil
1 package (5.3 ounces) shortbread triangles
30 sliced almonds
15 white baking chips or chocolate chips
Shredded coconut
15 red cinnamon candies

Steps:

  • Cover work area with piece of waxed paper about 18 inches long. Dry cherries with paper towels.
  • Place 2/3 cup chips and the oil in 6-ounce custard cup. Microwave uncovered on High 1 minute to 1 minute 10 seconds or until chips are softened; stir until smooth.
  • Hold 1 cherry by stem (mouse tail), and dip into melted chips, covering completely. Immediately place on shortbread triangle, with tail at 45-degree angle. Place 2 of the sliced almonds against front of cherry to form mouse ears. Repeat with remaining cherries, shortbread and almonds.
  • Using the remaining melted chips as glue and a toothpick to spread the melted chips, attach the flat side of a whole chip (flat side back) to the base of the almonds to form the mouse head. These adorable mice are no bake, and so easy to do even a child could make them. Taken from 'yummy little cook book'. For halloween you can dye the mice charcoal grey, use black liquorice for tails and red silver balls for eyes. You need a deep tablespoon to shape the mice.

250 g icing sugar, sifted
200 g tin condensed milk
175 g desiccated coconut
red food coloring
candy, balls silver
white chocolate, buttons for ears or slivered almonds, for ears

Steps:

  • Mix the icing sugar and condensed milk. Mix in the coconut. Divide the mixture between two bowls.
  • Dye one mixture dark red while the other eighter leave white or else dye pink. ( when I make white mice I use blue silver balls for the eyes).
  • Dip a clean tablespoon ( use a dessert spoon to make smaller mice)into some water and let it drip, then lift up a tablespoon of the mixture.
  • Line a baking sheet with plastic wrap. Press the mixture into the tablespoon and level it. Now turn the spoon over and tap it, so that the mixture will come out onto the plastic wrap.
  • Pinch a nose on the narrow end , then add the eyes, the ears made out of the milky buttons or slivered almonds and push a piece of liquorice, as a tail. Allow to dry.

10 ounces maraschino cherries, with stems
14 ounces Oreo cookies
11 ounces Hershey chocolate kisses
2/3 ounce red decorating gel
sliced almonds
11 ounces semi-sweet chocolate chips
2 teaspoons Crisco shortening

Steps:

  • Drain cherries well and count them.
  • Unwrap an equal amount of chocolate kisses and carefully remove one side of the chocolate cookie from the Oreo, leaving the cream filling on the other side. (Save plain side for another use.).
  • Melt the chocolate chips and shortening in the microwave and stir till smooth.
  • Dip the cherries in the chocolate, shake to remove excess.
  • Set the cherry on the flat side of chocolate kiss, and then position them on cream side of the Oreo with the stem hanging over the edge.
  • Position 2 sliced almonds for ears.
  • Use red gel for eyes.
  • Keep the chocolate warm by setting it in a bowl of warm water.
  • Line cookie sheet with wax paper to set the mice on as you put them together. When you get them all done, let them set for a few minutes before decorating.
  • To make holly leaves - draw a "v" on each side of the red berry.
  • For the leftover melted chocolate and plain half of Oreos. Dip each Oreo in chocolate and either sprinkle coconut or chopped nuts on them.
  • NOTE: You could use cherries without stems and substitute chow mein noodles for the tail.

These are the most adorable cookies ever! I wish I could post a picture, haven't learned how yet. This is from Taste of Home, I made these last Christmas for the first time, and they were a huge hit! The kids loved them, and the adults were busy trying to figure out how to make them themselves this year. They do taste yummy, but people are so busy admiring them, it's a while before they remember they are a cookie and can eat them. Got raves in all my holiday trays. They were really fun to make and not hard at all.

1/2 cup sugar
1/2 cup packed brown sugar
1 large egg

1/2 cup peanuts, halved
2 tablespoons M&M's plain chocolate candy, miniature baking bits red and green
4 teaspoons miniature semisweet chocolate chips
cake decorator holly leaf and berry decorative candies
60 -66 pieces red shoestring licorice (2 inches each)

Steps:

  • In a large mixing bowl, cream peanut butter, butter, sugar and brown sugar.
  • Beat in egg and vanilla.
  • Combine the flour and baking soda; gradually add to the cream mixture.
  • Refrigerate for 1 hour, or until easy to handle.
  • Roll into 1-inch balls. Place 2-inches apart on ungreased baking sheets. Pinch each ball at one end to taper. Insert two peanut halves in center of each ball for ears.
  • Add one M&M baking bit for nose and two chocolate chips for eyes. Arrange holly and berry candies in front of one ear.

1/2 tsp vegetable oil
1 pkg (5.3 ounce) shortbread triangles
30 sliced almonds

shredded coconut

  • 4. take a Hersey kiss and place on the front of the dipped choc. cherry. This is the nose
  • 5. take (2) of the slivered almonds and place between the Hersey Kiss and the cherry. These are the ears of the mice
  • 6. Take the decorative icing (red) for make (2) dots for the eyes and then take Green Decorative icing and make a wreath around the base of the cherry.

  • Half 12 cookies and lay out on a cookie sheet frosting side up. Drain the cherries and pour them into a bowl. Cut the almond slices in half. (ears) Unwrap 2 dozen kisses and put in a bowl.
  • Melt the chocolate according to the package directions. Dip one cherry into the chocolate and place on its side on to the cookie with the stem hanging off the cookie (mouse tail).
  • Place the kiss on the cookie on its side with the bottom pressed up against the bottom of the cherry. (Mouse head) Hold for a couple seconds to dry.
  • Place two halved almond slices on top of each side between the kiss and the cherry (ears). Use the red gel to make a nose on the tip of the kiss and two eyes. Use the red and green gel to make a holly leaf with berries on the creme next to the mouse.

1 cup creamy peanut butter
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 cup peanut halves
2 tablespoons green and red M&M's miniature baking bits
4 teaspoons miniature semisweet chocolate chips
Cake decorator holly leaf and berry candies
60 to 66 pieces red shoestring licorice (2 inches each)

Steps:

  • In a large bowl, cream the peanut butter, butter, and sugars until light and fluffy. Beat in egg and vanilla. Combine flour and baking soda; gradually add to the creamed mixture and mix well. (Dough will be soft). Refrigerate for 1 hour or until easy to handle. Roll into 1 inch balls. Place 2 inches apart on un-greased baking sheets. Pinch each ball at one end to taper. Insert two peanut halves in center of each ball for ears. Add one M&M baking bit for nose and two chocolate chips for eyes. Arrange holly and berry candies in front of one ear. Bake at 350° for 8-10 minutes or until set. Gently insert one licorice piece into each warm cookie for tail. Remove to wire racks to cool completely.

I make these cookies for my Grand Children. The original recipe came from Taste Of Home Recipe Book. I adapted it to suit my needs. You can adapt this recipe for other occasions also. They are so easy & very delicious.

red twizzlers candy ( the kind you can peel into stripes.)

  • 1. In a large bowl, cream the peanut butter, butter, sugar & brown sugar. Beat in the egg and vanilla. Combine the flour & baking soda,gradually add to the creamed mixture. ( Dough will be soft.) Refrigerate for 1 hour or until easy to handle.
  • 2. Roll into 1 inch balls. Place 2 inches apart on ungreased baking sheets. Pinch each ball at one end to taper. Insert two peanut halves in the center of each ball for ears. Add one M&M baking bit for nose & two chocolate chips for eyes. Arrange holly & and berry candies in front of ear.

1 package (15-1/2 ounces) Oreo cookies
4 ounces cream cheese, softened
1 jar (16 ounces) maraschino cherries (with stems)
1/2 cup chocolate wafer crumbs
1/2 cup sliced almonds or pine nuts
Colored nonpareils or pearl dragees

Steps:

  • Place cookies in a food processor; cover and process until finely crushed. Add cream cheese; process until blended. (Keep unused mixture covered at all times with a damp cloth.), Working with a few at a time, shape 2 teaspoons cookie mixture around a cherry, tapering to resemble a mouse. Sprinkle with wafer crumbs. Add almonds for ears and nonpareils for eyes. Store in an airtight container in the refrigerator.

  • Melt chocolate chips in a double boiler and dip a cherry into the choc. holding by the stem (tail) Set cherry on its side on waxed paper. This is the mouse's body and tail while choc. is still gooey, glue on a hershey kiss to the mouse's body, with the bottom of the kiss touching the cherry and the pointy part pointing out.
