CHRISTMAS PECAN LOGS
This is such a nice "old fashioned" candy to make for the holidays. You need to make this in advance as the candy needs to sit for a couple of days for the flavors to come together. Make sure you read the recipe twice before starting. Takes some effort, but this is so delicious and a very special addition to any Christmas cookie tray - Enjoy!

Steps:
- In pan combine sugar, water, and corn syrup. Cook over medium-high heat to boiling, stirring constantly to dissolve sugar (6 to 8 minutes).
- Then reduce to medium-low heat, without stirring, till thermometer registers 240 degrees, soft-ball stage (about 30 more minutes).
- Remove pan from heat; remove thermometer. Pour mixture onto a large platter. Do not scrape the cooked candy from the sides of the pan (this part tends to over-cook and gives a hard texture to the candy -- it's not worth wrecking the soft creamy center by adding this).
- Cool, without stirring, until slightly warm to the touch. About an hour.
- Add cherries to the mixture and beat with a wooden spoon for 10 minutes utill candy is white, creamy and has lots of air incorporated into it. (This step can also be accomplished using a paddle attachment on a food processor).
- Form into logs (individual size or 2 large) and wrap in clear plastic wrap.
- Place wrapped logs in the freezer for at least 1 hour.
- For the coating:.
- In a heavy saucepan combine caramels, butter and water. Cook over low heat until caramels are melted.
- Spread chopped pecans on a piece of waxed paper.
- Remove the saucepan from heat. Dip the unwrapped fondant logs into the melted caramel mixture. Let excess caramel drip off the log.
- Place the dipped log on the chopped pecans and roll until it is covered.
- Chill 1 hour or until ready to serve. To serve, let logs stand at room temperature about 30 minutes.
- Cut into 1/4 inch slices.

This recipe is from my sister. Our family requests them every holiday season, and it wouldn't be Christmas without them! They are a great addition to your cookie trays and cookie tins to give as gifts to the neighbors, co-workers, friends and family. I hope you will try them, as they truly are fantastic! Word of warning::: These go fast, so make plenty!!! To avoid burning my hands from the hot mixture, I pick up the mixture with a piece of saran wrap, then squeeze it together with my hands and form the log, then roll the log in the coconut. Works great!

Steps:
- Put butter, sugar, dates, and eggs in a heavy bottomed pan. Bring to boil over medium heat, and stir. When it starts to boil, stir constantly (about 10 minutes) until the liquid starts pulling away from the sides of the pan while you are stirring it, then remove from heat.
- Add vanilla, walnuts and Rice Krispies, and mix in well.
- Butter your hands and put enough mixture in the palm of your hand (about 2 T.). Roll into logs with your hands.The logs should be about 3" long by 1/2" wide. (The mixture will be hot, so be careful and work quickly).
- Roll each log in flaked coconut and place on waxed paper until completely cool. Store in a plastic container with cover.

CHRISTMAS LOGS
This is somewhat like a pie dough that is filled with crushed walnuts and spices and then rolled up into logs. Very rich and delicious.

- Combine the flour, yeast and butter or margarine by hand until mixture is crumbly. Stir in the egg, egg yolks, heavy cream, salt and vanilla. Mix together and let stand in the refrigerator for 8 hours or overnight.
- Beat the egg whites until stiff peaks are formed.
- Mix the walnuts, 1 1/3 cups of the sugar, the cinnamon and bread crumbs. Stir in the egg whites and let the mixture stand for 1 hour.
- Divide the dough into fourths. On a surface sprinkled with white sugar, roll 1/4 of the dough out very thin (you should be almost able to see through the dough) into a rectangular or square shape. Spread 1/4 of the filling over the rolled dough. Cut the dough into 2 1/2x2 1/2 inch squares. Roll each square up like a jelly roll and place on a baking sheet. Repeat with the remaining dough and filling. Keep the dough you aren't working with in the refrigerator.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes. Keep a close eye on these cookies as they tend to burn easily because of the sugar that is on the dough.

- Mix all ingredients except chili powder with an electric mixer.
- Form into 2 or 3 logs.

- For fondant center, blend margarine, corn syrup, and vanilla in large mixing bowl. Add sifted powdered sugar all at once. Mix together first with a fork, then knead with hands. Turn onto board and continue kneading until well blended and smooth. Divide into three parts and make logs. Wrap in waxed paper and roll up in a damp towel. Store in the refrigerator overnight to ripen. The next day, melt caramels in milk in a double broiler. Coat fondant logs by spooning caramel over the top and roll in pecans, then coat the bottoms with caramel and roll in pecans again. Chill to set the caramel. Wrap in aluminum foil and keep refrigerated. This keeps quite well-slice when ready to serve.

YULE LOGS-CHRISTMAS, CLASSROOM TREATS
I was inspired by a cook on the Food Network who made a Yule Log out of a pre-made chocolate jelly roll cake. I needed a treat for my kids' classroom Christmas parties and came up with this. Hope you like it as much as the kids did.

- We purchased Little Debbie Swiss Roll cakes-make as many as you like. I think 6-8 come in a package.
- Mix in 1 teaspoon of vanilla extract to the tub of Cool Whip. Cover each swiss roll cake with the Cool Whip mixture. Using a fork, lightly pull the tongs across the whipped topping to resemble the bark design of a log. Dust with cocoa powder or sprinkle with the chocolate sprinkles.
- For the forest mushrooms, insert 1 toothpick through each marshmallow and then into the flat side of the chocolate kiss to form "mushroom." Dust chocolate kiss candies with confectioners' sugar.
- We added a Teddy Graham and small candy trees to each log for Christmas but you could add any decoration for whatever the occasion.

This recipe is one of the favorites in Malta...mainly consists of a mixture of crushed biscuits, condensed milk and nuts, and it's very easy to make.

- Crush the Biscuits into fine crumbs.
- Add the nuts, cocoa powder, candied fruit and chocolate chips to the crushed biscuits.
- Add the Carnation condensed milk.
- Add the liquor of your choice to the mixture.
- Bring the mixture to a dough-like texture, and form it into a log.
- Refrigerate until logs are firm.
- Melt the chocolate bar, and cover the logs with melted chocolate.
- With a fork carv the chocolate so to give it a tree log-like-texture.
