ALMOND SNOWBALL COOKIES

Number Of Ingredients 8

3/4 cup sliced almonds
3/4 cup sugar
3/4 cup unsalted butter, sliced and softened (1 1/2 sticks)
1/2 teaspoon pure vanilla extract
1/8 teaspoon almond extract
1 2/3 cups all-purpose flour
1/2 teaspoon fine salt
1 cup confectioners' sugar

Steps:

  • Pulse the almonds and sugar in a food processor until very finely ground. Add the butter and process until smooth, about 1 minute. Scrape the dough off the inside of the bowl, if needed. Add the vanilla and almond extracts and pulse to combine. Add the flour and salt and pulse to make a soft dough. Turn the dough out onto a large piece of waxed paper and roll into a log about 15 inches long and 1 1/2 inches wide. Wrap and refrigerate for 30 minutes.
  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper.
  • Cut the chilled dough into 1/2-inch pieces and roll by hand into balls. Space the cookies evenly on the prepared baking sheets and bake until slightly golden, rotating the sheets once, 15 to 20 minutes. Put the confectioners' sugar in a pie plate. Briefly cool the cookies on a rack, then gently toss in the confectioners' sugar until evenly coated. Return to rack, cool to room temperature, and then toss again in the confectioners' sugar.

1 cup butter, softened
3/4 cup sugar
1 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Additional sugar
GLAZE:
1 cup confectioners' sugar
1-1/2 teaspoons almond extract
2 to 3 teaspoons water
Green food coloring, optional
Sliced almonds, toasted

Steps:

  • Preheat oven to 400°. In a large bowl, cream butter and sugar until light and fluffy. Beat in almond extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Roll into 1-in. balls. , Place 2 in. apart on ungreased baking sheets. Coat bottom of a glass with cooking spray; dip in sugar. Flatten cookies with prepared glass, dipping glass in sugar again as needed. , Bake until edges are lightly browned, 7-9 minutes. Cool for 1 minute before removing to wire racks., In a small bowl, whisk together the confectioners' sugar, almond extract and enough water to achieve glaze consistency. Tint with food coloring if desired; drizzle over cookies. Sprinkle with almonds.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
Additional sugar
40 milk chocolate kisses with almonds
GLAZE:
1 cup confectioners' sugar
1 tablespoon milk
4 teaspoons raspberry jam
1/4 teaspoon almond extract

Steps:

  • In a bowl, cream butter and sugars. Beat in egg and extract. Combine the flour, baking soda and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until easy to handle., Roll into 1-in. balls, then roll in additional sugar. Place 2 in. apart on ungreased baking sheets. Bake at 325° for 13-15 minutes or until golden brown. Immediately press a chocolate kiss into the center of each cookie. Cool on wire racks. Combine glaze ingredients; drizzle over cookies.

1 (8 ounce) package HERSHEY®'S KISSES® Milk Chocolates
½ cup butter
½ cup shortening
½ cup packed light brown sugar
¼ cup white sugar
1 egg
1 teaspoon almond extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup chopped maraschino cherries
1 egg white
1 tablespoon water
2 cups finely chopped walnuts or almonds

Steps:

  • Heat oven to 375 degrees F. Grease cookie sheet. Remove wrappers from chocolate pieces.
  • Beat butter, shortening, brown sugar and granulated sugar in large bowl until fluffy. Add egg and almond extract; beat until blended. Stir together flour, baking soda and salt; add to butter mixture, beating until well blended. Stir in cherries.
  • Roll dough into 1-inch balls. Combine egg white and water; beat with fork until foamy. Roll balls in egg white, then in walnuts. Place on prepared cookie sheet.
  • Bake 10 to 12 minutes or until lightly browned. Remove from oven and immediately place chocolate piece on top of each cookie, pressing down gently so that cookie cracks around the edge. Cool 1 minute; remove from cookie sheet to wire rack. Allow cookies to cool until chocolate piece is set, about 3 hours.

Number Of Ingredients 9

1/2 cup of vegetable shortening
1/2 cup of butter
1 cup of sugar
2 egg yolks
1 Tbsp. almond extract
2-1/2 cups flour
almonds
green candied cherries
colored sugar (I used green and gold)

Steps:

  • Heat oven to 350°F.
  • You will need cookie sheets and parchment paper.
  • Beat the shortening, butter, sugar, egg yolks, and almond extract in a medium bowl with an electric mixer until mixture is creamy.
  • Slowly add the flour. Once it's completely mixed take mixture out of the bowl and lightly knead the dough. Do not over knead as it's only to incorporate all the ingredients.
  • Form 1 inch balls or use a medium sized cookie scoop. Place them on the parchment lined cookie sheets leaving a 1 inch space in between. With your finger lightly press the center of each ball. Decorate them with the almonds, cherries, or colored sugar.
  • Finally bake them for about 8-10 minutes.
  • Place on a cooling rack and let completely cool, and ENJOY!!
