MOM'S CHRISTMAS JELLO BALLS
No baking, no melting, and just one mixing bowl! Mom's Christmas Jello Balls are one of the easiest cookies you'll make this holiday season! And, not only that, they taste great too! Use any flavour or colour of Jello you want!

- Add the thick cream to a mixing bowl, along with the Jello powder. Stir well to combine.
- Add 1 1/2 cups of the desiccated coconut to the mixture and stir to combine.
- Roll the mixture into 1 tablespoon-sized balls. Roll the balls into the remaining coconut to coat.
- Place balls onto baking sheet and refrigerate for 2 hours.

- Mix all the ingredients except the 3 ounce box of gelatin. Cover mixture and place in the refrigerator overnight. The next day, roll mixture into strawberry shapes.
- Place the 3 ounce box of gelatin in a plate, and roll the shaped strawberries in the gelatin until coated. Place bits of mint leaves to create the stems; secure the stems with a piece of toothpick.

- Add the room temperature cream cheese to a large bowl. I like to use a mixer to beat the cream cheese. This will help to loosen it up and avoid any lumps of cream cheese in the finished product.
- Next, add in the pineapple, one cup of the coconut, the graham crumbs, and the packet of pineapple jello. Just toss the powder into the bowl with the other ingredients. You do not need to prepare the jello first.
- Mix the ingredients well until thoroughly combined.
- Place bowl in fridge for one hour.
- Once ready, portion mixture into tablespoons and roll into balls. Roll ball into remaining coconut.
- Place finished Pineapple Christmas Balls into a food-safe container. Keep refrigerated.

- In a small bowl, beat cream cheese and cheddar cheese. Stir in the pecans, milk, olives, garlic and salt. Divide into thirds; roll each into a ball. , Roll 1 ball in parsley and 1 in nuts.
