MOIST DATE CAKE
This cake becomes more moist each day that it is covered. This recipe was my Grandmother's and we always had this cake at Christmas. I know the recipe is at least 60 years old.

Steps:
- Preheat oven to 350 degrees F (175 C). Grease and flour two 8 inch round cake pans. Set aside. Put dates in a bowl with soda and pour boiling water on top. Set a side.
- In a large mixing bowl, mix together 1 cup sugar, 2 1/2 cups flour and 1 cup chopped walnuts. Add egg, 1 teaspoon vanilla, pinch of salt and tablespoon butter. Mix to combine. Finally, stir in chopped dates with liquid. Mix well. Pour batter into prepared pans.
- Bake for 25 to 30 minutes. Cake will pull away from sides of pans and be golden brown.
- In a medium saucepan, combine buttermilk, 1 cup sugar, pinch of salt and 4 tablespoons flour. Cook on medium heat until thickened. Stir in 1 teaspoon vanilla and remaining cup of walnuts.
- Spread mixture between layers and on top of cake. Let filling run down the sides of cake.

DATE AND NUT CAKE WITH CHERRIES
My mom used to make a cake that contained dates, nuts and maraschino cherries. I don't have her exact recipe so I recreated it by substituting a similar recipe for a delicious date and nut cake and added maraschino cherries. (The basic cake recipe is adapted from Maida Heatter.) Note re maraschino cherries: Most of the brands available in the U.S. are an imitation of an Italian product and contain lots of preservatives. Trader Joe's sells a version of maraschino cherries without all the chemicals.

- Preheat oven to 400 degrees F.
- Butter a 9" square cake pan.
- Put dates, butter and baking soda in a bowl. Carefully pour boiling water over the dates; let cool.
- Meanwhile, mix flour and baking powder. In a separate bowl, mix egg and vanilla.
- When the date mixture is cool, stir in egg mixture and then stir in flour mixture.
- Stir in nuts and cherries.
- Pour batter into the prepared pan; bake for about 25-30 minutes.

CHRISTMAS NUT CAKE
This nut loaf is all nuts. I have never met anyone who didn't like it - except for a few nuts!

- Preheat oven to 275 degrees F (135 degrees C). Line two 5x9 inch loaf pans with greased parchment paper.
- Combine the almonds, Brazil nuts, walnuts, pecans, dates, red and green cherries; mix well.
- Sift together the flour, sugar, baking powder and salt. Combine with nut mixture and mix well.
- Beat eggs and vanilla, add to nut and flour mixture and mix well.
- Press into 2 lined loaf pans and bake for 1 1/2 to 2 hours. Set aside for 5 minutes and remove from pans. Completely cool on wire rack.

DATE NUT LOAF CAKE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
- Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.
- Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.
- To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.

- Pour boiling water over the dates, add the soda (it foams up a bit) and set them aside to cool.
- While they're cooling, mix together in a large mixing bowl the butter, 2 cups sugar, the eggs, salt and flour.
- One this is thoroughly mixed, add the cooled date mixture to the bowl and stir thoroughly.
- Butter and flour a 9x13 inch cake pan (the cake rises about 1 1/2 inches, so make sure the sides are tall enough). Pour the batter in the pan.
- Sprinkle the following on top, in this order, before baking: the chocolate chips, 1 cup sugar, nuts.
- Bake at 325 degrees for 80 minutes. A cake tester or long toothpick should come out clean one inch from the center when the cake is done.
- Let the cake cool in a pan on a wire rack. It can be served slightly warm, at room temperature, or chilled.

- Chop nuts and mix with dates. Mix in flour and baking powder. Separate eggs. Beat egg yolks and sugar until light and fluffy. Melt butter, let cool slightly, pour over dates & nuts, mixing well. Add sugar mixture, stirring well. Beat egg whites until fluffy and add to rest of ingredients. Line regular sized loaf pan with Reynolds release foil (release side up). Pour cake batter into pan. Bake at 225 degrees for 2 1/2 hours. May require extra baking time.

- 1. Dust pecans & dates with flour. Shake off excess. Set aside. Note: I like my dates cut fairly small.
- 2. Mix together; flour, sugar, butter, eggs, and vanilla. Combine pecan and date to mixture. This will be very stiff. ***DO NOT ADD LIQUID. Note: dough is so stiff you may wish to mix with your hands.
- 3. Using a bundt pan, butter and flour pan. Add the dough.
- 4. Place a pan of water on the rack below the bunt pan to keep it moist. Bake at 350 for 1 hour. Let cool 10 minutes before removing from pan.
