CREAM CHEESE MINTS
These seem to be everyone's favorite holiday candy recipe. Could be the melt in your mouth texture, or perhaps the sweet peppermint taste. Could also be the fact that this is the easiest candy recipe around! If stored in airtight container, these can be frozen for a couple months. These can also be made into pretty shapes by rolling in granulated sugar, pressing into candy molds, and dropping them out.

Steps:
- In a large bowl, combine cream cheese, butter, and confectioner's sugar. Mix in peppermint oil. Color as desired with food coloring paste, or leave white.
- Roll mixture into small balls, and place on waxed paper. Flatten with a fork dipped in confectioners' sugar. Let dry for about 2 hours on waxed paper, then freeze or refrigerate.

Steps:
- Using a hand mixer on low, combine cream cheese and mint extract in medium mixing bowl.
- Blend in 2 cups powdered sugar and milk until smooth. DO NOT OVERMIX.
- Add 1 cup powdered sugar and 2 tablespoons sprinkles. Mix on low.
- Knead in remaining cup of powdered sugar using hands until dough is consistent and smooth. If you dough is still too sticky, add powdered sugar until its no longer sticky and can be formed into a tiny ball.
- In a separate small bowl, combine sugar and 2 tablespoons sprinkles.
- Shape dough into 3/4-inch balls and roll in sugar combination.
- Place balls onto a baking sheet.
- Refrigerate for at least 30 minutes.
- Remove from refrigerator and flatten gently with a fork.
- You can now leave mints on the counter to harden slightly and then move to an airtight container. Store mints in refrigerator.

Steps:
- 1. Using mixer blend together cream cheese and butter. Slowly add powdered sugar until the mixture pulls away from the side and begins to form a ball. If necessary add a couple more tablespoons of powdered sugar. Add peppermint oil to taste. If desired add gel color and mix until color is uniform.
- 2. Pinch off balls that are about 1/2 to 3/4 of an inch. Roll the ball in powdered sugar and place on wax paper covered baking sheets. Using a fork that has also been dipped in the powdered sugar press indentation on the top of the mints. Allow to dry on counter for one hour and then place the baking sheets with mints on them in the freezer until frozen. Store in the freezer or in the refrigerator with wax paper between layers.
