8 ounces light kielbasa
12 ounces beer
1 tablespoon olive oil
2 cups quartered mushrooms
1 cup finely chopped onions
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
2 red potatoes, cut into 1/4-inch dice
Salt and freshly ground black pepper
1 tablespoon barbecue sauce
2 tablespoons chopped parsley leaves

Steps:

  • Put the kielbasa and beer in a large skillet and bring to a boil over medium-high heat. Lower the heat slightly and simmer, piercing the kielbasa a few times with a fork, for 7 minutes. Set aside.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the mushrooms, onions, bell peppers and potatoes and cook, stirring and adding a little of the beer from the sausage as needed, until vegetables are tender, about 15 minutes. Season with salt and pepper, to taste.
  • Cut the kielbasa into 1/4-inch-thick rounds and stir into the potato mixture along with the barbecue sauce. Transfer to a serving dish, sprinkle with parsley, and serve.

4 large russet potatoes
3 cups vegetable shortening
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 cup grated Parmesan
1 cup grated cheddar
1/4 cup beer
1/4 cup grated Parmesan
2 tablespoons heavy cream
2 tablespoons yellow mustard

Steps:

  • To make the fries: Peel the potatoes and cut into desired French-fry size. Put into a bowl of ice water and let stand for 10 minutes.
  • Meanwhile, to make the cheese sauce: Combine all ingredients in a small saucepan over medium heat and cook, stirring, until melted and smooth. Remove from heat and set aside.
  • Heat shortening in a large pot, deep skillet or deep-fat fryer. Drain potatoes and dry thoroughly. Working in small batches, fry the potatoes until golden brown, about 10 minutes. Using a slotted spatula, transfer fries as they cook to a brown paper bag. Add the salt, pepper, and Parmesan and shake to coat well. Serve immediately with the cheese sauce.

3 large russet potatoes, peeled and quartered
2 tablespoons olive oil
1 tablespoon butter
Salt and freshly ground black pepper to taste
¼ teaspoon paprika
cayenne pepper to taste
1 pinch garlic powder
1 pinch onion powder
1 tablespoon Chopped fresh chives

Steps:

  • Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
  • Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.

2 pounds pulled pork (store-bought okay), heated
2 pounds chili (store-bought okay), heated
8 ounces Cheddar, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the cooked home fries on a baking sheet or in a cast-iron skillet.
  • Top with pulled pork to cover completely, then top with the chili.
  • Sprinkle the shredded cheese all over the top of the chili. Place in the oven just long enough to melt the cheese, 2 to 3 minutes. Serve.

3 large red beets (equal size), washed and patted dry
3/4 cup vegetable oil
3/4 cup white vinegar
Canola or vegetable oil, for frying
1/2 cup cornstarch
Kosher salt
3 tablespoons Japanese mayonnaise, such as Kewpie
Togarashi, for garnish
Green onions, thinly sliced, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Toss the beets with the oil and vinegar in a large bowl until well coated. Line a baking sheet with aluminum foil to prevent leaks during cooking. Place the beets on the baking sheet and cover with aluminum foil to create a tight seal, allowing the beets to steam. Roast the beets until tender but still maintaining a bite, 3 hours.
  • Turn off the oven. Allow the beets to finish steaming for easier peeling. Peel the beets using a towel, making sure to wear gloves to prevent staining. Cut the beets into 1/2-inch cubes and place in a bowl.
  • Preheat oil in a deep-fryer or a deep pot to 350 degrees F.
  • Pour the cornstarch over the beets and toss until well coated. Place the beets in a sieve set over a metal bowl and shake to remove excess cornstarch. Transfer the beets to a fryer basket and fry until crispy and piping hot. When done, shake off excess oil and add beets to a clean metal bowl.

1/2 cup vegetable oil
1/2 cup white vinegar
Soybean oil, for frying
2 cups cornstarch
2 cups Japanese mayonnaise, such as Kewpie
Shichimi togarashi (Japanese 7-spice blend)
1/2 cup sliced green onions

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the beets in the center of a large foil sheet. Drizzle with the oil and vinegar. Place a second large foil sheet on top of the beets, crimping the edges together to form an airtight pocket. Roast in the oven for 2 hours.
  • When the beets are ready, peel them using a kitchen towel. If roasted correctly, the skin should slide right off. Cut the beets into 1-inch cubes and allow them to chill.
  • Heat soybean oil in a large pan or deep-fryer to 375 degrees F.
  • Toss the beets in the cornstarch until covered, adding more cornstarch as needed. Fry in 2-cup batches, until the outer cornstarch layer becomes crispy.
  • Serve each batch with 1/4 cup mayonnaise. Garnish with shichimi togarashi and green onions.
