CHOCOLATE CHOW MEIN NOODLE COOKIES

One 12-ounce bag semisweet chocolate chips, such as Ghirardelli
One 5-ounce can crispy chow mein noodles (about 2 1/2 cups)
3/4 cup salted and roasted almonds, coarsely chopped
1/2 cup finely chopped dried mango
1/8 teaspoon cayenne pepper, optional

Steps:

  • Line a baking sheet with parchment or wax paper.
  • Place the chocolate in a small bowl over a saucepan of barely simmering water. Stir occasionally until the chocolate is melted and smooth, about 4 minutes.
  • Combine the noodles, almonds, mango, cayenne pepper if using and melted chocolate in a large bowl. Stir until all the ingredients are coated with chocolate. Scoop the mixture onto the prepared baking sheet using a 1/4-cup ice cream scoop and allow the cookies to harden at room temperature, about 2 hours. Store the cookies in an airtight container at room temperature.
  • Cook's Note: Use scissors to cut the dried mango into pieces.

1 (5 1/2 ounce) package chow mein noodles
1 (6 ounce) package butterscotch chips
1 (6 ounce) package semi-sweet chocolate chips
1/2 cup chopped pecans

Steps:

  • In a large pot melt butterscotch chips and chocolate chips together.
  • When all is melted and smooth add chow mein noodles and pecans.
  • Drop onto wax paper using two teaspoons and let set.
  • Then put into air tight container.
  • Freezes good as well.

12 ounces butterscotch chips
1/2 cup peanut butter (smooth or chunky)
12 ounces chow mein noodles (1 large bag)

Steps:

  • Put Butterscotch morsels and peanut butter into a large pot and put heat on a medium setting.
  • Heat and stir constantly until the morsels melt and are combined with the peanut butter.
  • Turn off the heat and stir in the Chow Mein noodles until the noodles are completely coated with the mixture.
  • Once coated drop onto waxed paper to cool and harden up in about the size of a old silver dollar (1 1/2 inches).

1 cup chow mein noodles
1 bag butterscotch chips
1 bag chocolate chips
1 cup peanuts (blanched)

Steps:

  • Mix chips together in a microwavable safe bowl, melt.
  • Mix in noodles and peanuts.
  • Drop onto wax paper by the teaspoonful and cool.
  • DO NOT FREEZE!
  • I sometimes put in mini M&M's instead of the peanuts.

This is a quick and simple no-bake cookie that I used often as my kids were growing up - too many times I would realize that I was expected to bring cookies to a school progam in a couple hours and had nothing prepared. There were never any left to bring home so I can tell you from experience that it is easily doubled and that tripled, I used exactly one 12 oz package of chow mein noodles! There are other chow mein noodle cookies on here but all that I found called for chips, this one does not.

1/2 cup corn syrup
1/2 cup sugar
1 cup creamy peanut butter
1 cup chow mein noodles (I use a bit more)

Steps:

  • Bring sugar and syrup to a full boil in a heavy pan. Remove from heat at once. (Over cooking will make a hard cookie.)
  • Add peanut butter and noodles. Mix thoroughly.
  • Drop into rounded mounds onto waxed paper.
  • Let set for at least 15 minutes.
  • NOTE: I usually add more noodles for a crunchier cookie. I add a half cup or so at a time, stirring them in to make sure they will still stick together before deciding whether to add more or to stop.
  • PREP time includes cooling.

1 (3 oz.) can chow mein noodles

Steps:

  • 3-quart casserole or large bowl, place chocolate pieces. Cover with lid or plastic wrap. Microwave at medium or low 3 to 4 minutes until melted. Stir chocolate smooth; add noodles and using two forks, toss to coat well. On strips of foil or wax paper, form into 1 1/2 inch clusters. Cool to set. Makes about 24 (1 1/2 inch) "haystacks."
