CHORIZO DRESSING WITH LEEKS



Chorizo Dressing With Leeks image

The better the bread you use here (a thick-crusted country loaf, sliced and toasted quite dry in the oven works well), the better the end result. It acts as a kind of canvas for the sweetness of the leeks and the dry, fragrant heat of the chorizo. You can make it well in advance of serving it alongside turkey, chicken or pork, at least as long as you leave time to reheat it in the oven, covered, with a few splashes of stock to moisten it. Just pull off the foil for the last few minutes to allow the top to crisp.

5 to 6 tablespoons unsalted butter, divided
1 (1 1/2-pound) loaf crusty bread, halved and sliced into thumb-thick slices
3 tablespoons extra-virgin olive oil
2 large leeks, trimmed, cleaned and sliced into 1/4-inch half-moons (approximately 3 cups)
1/4 teaspoon salt
1/2 teaspoon coarse ground black pepper
1/4 teaspoon red pepper flakes
6 ounces dry (cured) chorizo, skin removed, quartered lengthwise and chopped
2 tablespoons sherry vinegar
1 tablespoon sweet (dulce) smoked paprika
1/2 teaspoon dried oregano
3 to 4 cups chicken or turkey stock, divided

Steps:

  • Heat oven to 400 degrees. Generously butter one or two large sheet pans. Spread the bread pieces out on the pan or pans. Bake in the oven, tossing occasionally, until well toasted, about 15 to 20 minutes, rotating the pans and turning the bread about halfway through. Remove sheet pans and allow to cool.
  • Place a large skillet over medium heat and swirl the olive oil into it. When it shimmers, add leeks, salt, black pepper and red pepper, and cook, stirring occasionally, until leeks have softened, about 10 to 15 minutes. (If the leeks begin to stick to the pan, you can add a couple tablespoons of water here to prevent them from burning.) Add chorizo and continue to cook, stirring occasionally, until it softens and begins to redden the leeks, an additional 5 to 7 minutes. Add vinegar to the pan to deglaze it, cook for a minute or so, then dump mixture into a large bowl.
  • Add smoked paprika and oregano, mix well, then tear and crumble the toasts into bite-sized pieces, add them to the bowl and stir to combine. Add turkey or chicken stock, a cup at a time, mixing as you go, until the dressing is moist but not entirely wet. Melt 3 tablespoons of the butter, drizzle it over the bread mixture, and gently fold to combine.
  • Transfer the dressing to a well-buttered 9-by-13-inch baking pan and bake in the oven for 45 to 50 minutes, until crusty on top and at the edges. Add a little more turkey stock as needed to keep it from drying out.

4 medium-sized squid, skinned, cleaned and prepared (tentacles removed but reserved)
8 baby leeks, outer leaves trimmed back, washed
Olive oil
Sea salt and freshly ground black pepper
1 bulb fennel, cut into thin wedges, herby tops reserved
1 radicchio, leaves separated, washed and spun dry
2 lemons, halved
Olive oil
4 ounces chorizo sausage, chopped into small pieces
1 sprig fresh rosemary, leaves picked and chopped
2 cloves garlic, peeled and finely grated
3 tablespoons balsamic vinegar
1 lemon, juiced
Sea salt and freshly ground black pepper

Steps:

  • To achieve the beautiful concertina effect, take a squid and place a large chef's knife flat inside it. Using a second knife, slice the squid across into 1/4-inch slices, as if you're cutting it into rings. You won't be able to cut all the way because of the other knife.
  • Light your barbecue or preheat a griddle pan to hot. Preheat your oven to maximum.
  • Parboil the baby leeks for 3 minutes in a pan of boiling salted water, drain in a colander and let them steam dry. Dress them with some olive oil and a pinch of salt and pepper. Cook the leeks on the barbecue or in the griddle pan on both sides until nicely marked, then add the fennel wedges and chargrill these dry on both sides until they are also marked. Add the radicchio leaves and dry grill these on both sides to wilt them - 30 seconds on each side should do. Put the leeks, fennel and radicchio into a large bowl - they might look a bit sad, but don't worry because you're going to pep them up!
  • For the chorizo dressing: Heat a frying pan with a couple of glugs of olive oil. Fry the chorizo until the fat renders out, add the rosemary and garlic, toss and take off the heat after 30 seconds. Add the balsamic vinegar and half the lemon juice to the pan, mix and put to 1 side.
  • Drizzle some olive oil over each squid, sprinkle with salt and pepper and toss well. Preheat an ovenproof pan on the stove top, pour in some olive oil and toss the reserved tentacles in the oil for 1 minute. Add all 4 squid and whack the pan in the preheated oven for a few minutes or until cooked and lightly browned.
  • Pour the chorizo dressing over your chargrilled veggies and add a good squeeze of lemon juice. Take the squid out of the oven. Serve each of your guests a nice pile of the dressed veggies, a concertina squid, some tentacles and half a lemon. Sprinkle over some of the reserved herby fennel tops and tuck in!

1/2 cup unsalted butter
1 pound chorizo, finely diced
6 garlic cloves, finely diced
1/4 cup finely diced celery
1 medium onion, finely diced
1/4 cup diced carrot
1 poblano, finely diced
1 recipe blue cornbread, crumbled
1 teaspoon coarsely chopped thyme leaves
1 teaspoon coarsely chopped sage leaves
1 tablespoon coarsely chopped cilantro
1 egg
1/2 cup chicken stock
Salt and freshly ground black pepper
1 cup fresh cranberries
1/4 cup brown sugar
1 large mango, peeled, seeded and coarsely chopped
3 tablespoons finely diced red onion
1 tablespoon minced jalapeno
1/4 cup coarsely chopped cilantro
1/4 cup fresh lime juice
Salt and freshly ground pepper
2 tablespoons unsalted butter
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F. In a medium saute pan over medium heat, melt the butter and cook the chorizo, garlic, celery, onion, carrot and poblano for 3 minutes or until lightly browned. Transfer to a mixing bowl and add the cornbread, thyme, sage, cilantro, egg and stock and mix well. Place in 12 by 15-inch baking pan and bake for 25 minutes.
  • In a hot skillet combine cranberries and brown sugar, cook until berries start to pop. Add all other ingredients, except cilantro, and heat, (add a spoon of water if sauce appears dry). Just before serving, toss in the cilantro.
  • Preheat the oven to 450 degrees F.
  • In a hot roasting pan, melt the butter and oil. Season the hens with salt and pepper to taste and sear until browned all over. Place, breast side down in the pan and roast for approximately 12 to 14 minutes. Check for doneness by seeing if juices run clear when bird is tipped. Remove from the oven and let rest for 5 minutes. Plate hens alongside of the dressing and serve with the relish.

WILD RICE, GOAT CHEESE AND CHORIZO DRESSING

I first found this watching Bobby Flay on Food TV several years ago. Ever since the first time I made it, I've been required to bring it for every Thanksgiving & Christmas dinner! I've made a few adjustments from the original, partly for our tastes and partly for ease. Hope you enjoy this interesting dressing like we do! :)

1 1/2 loaves country bread, cubed & dried
1 lb chorizo sausage
6 -8 cups cooked wild rice (I use Trader Joe's already prepared... I'm lazy!)
1/4 cup butter
1 1/2 cups onions, chopped
3/4 cup celery, chopped
3/4 cup carrot, chopped
4 garlic cloves, minced
3 tablespoons fresh thyme, chopped (or 2/3 teaspoons dried)
3 -5 cups chicken stock, approx
16 ounces goat cheese, crumbled (large-ish crumbles)
3/4 cup parsley, chopped (please use fresh!)
salt, to taste
black pepper, to taste

Steps:

  • Cube & dry bread. (I do this the night before on baking sheet in a 200° oven, tossing frequently.) Put in large bowl.
  • Cook chorizo thoroughly over medium heat. Drain using colander lined with several paper towels.
  • Sauté onion, celery, carrot in butter until soft. Add garlic & thyme and cook another minute.
  • Combine sautéed mixture, wild rice, parsley and *some* chicken broth with the bread. (You want this to be quite wet. Start with 3 cups of broth & add more until it is.).
  • Add goat cheese and chorizo. Mix lightly so the chevre & chorizo don't 'disappear' completely into dressing.
  • Add salt and pepper to taste.
  • Butter or Non-stick Spray a large casserole dish (or foil pan(s)). Add dressing and place, uncovered, in a pre-heated 350° oven. Bake 30 - 45 minutes (until heated all the way through & lightly browned). Cover with foil & let rest for approximately 10 minutes.
  • Serve and enjoy!
  • (Leftovers are wonderful. Just sprinkle with more chicken broth & heat.).

Steps:

  • Preheat the oven to 370 degrees F (190 degrees C). Allow to preheat for 2 minutes. Spray a 7-inch springform pan with cooking spray.
  • Place Tater Tots® into the air fryer basket and bake for 15 minutes, shaking basket halfway.
  • Meanwhile, cook bacon pieces in a small skillet over medium-high heat until crisp, about 5 minutes. Add chorizo and celery slices. Saute for about 3 minutes. Drain excess grease.
  • Transfer Tater Tots® to a bowl and pour bacon-chorizo mixture on top. Mix in water, egg, and garlic base; stir to thoroughly coat. Fill into prepared springform pan.

8 ounces Spanish-style chorizo, chopped
1 small bunch collard greens, washed well, ribs removed and sliced into very thin ribbons
1 large onion, finely chopped
1 large carrot, finely chopped
1 rib celery, finely chopped
3 cloves garlic, chopped
8 cups cubed and toasted cornbread (day old yellow cornbread preferred)
4 cups chicken stock
2 eggs, beaten
Kosher salt and freshly ground black pepper
3 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large heavy skillet over medium-high heat. Once the butter foams, add the chorizo and cook for 5 minutes. Add the vegetables and saute until tender, about 5 to 8 minutes more. Set aside to cool slightly.
  • Add the cornbread to a very large mixing bowl. Pour in the stock, and the beaten eggs. Season the mixture with salt and pepper, to taste. 2 aubergines , sliced into 1cm rounds
6 tbsp olive oil , plus a drizzle for the prawns
140g raw prawn , deveined
140g cooking chorizo , cut into 1.5cm-2cm thick slices
400g can chickpea , drained and rinsed
½ red onion , finely sliced
100g baby spinach
large handful parsley , chopped
½ garlic clove , crushed
2 tbsp olive oil
juice and zest 1 lemon
¼ tsp ground cumin
2 tsp clear honey
2 small preserved lemons , flesh removed and rind thinly sliced

Steps:

  • Heat a griddle pan to medium. Brush the aubergine slices with oil, season and griddle on both sides until soft and lightly charred - you'll need to do this in batches. Set aside and keep warm. (See below left for griddling tips.)
  • While the aubergines are cooking, make the dressing. Mix the garlic with a good pinch of salt to form a paste. Gradually stir in the olive oil and lemon juice, followed by the zest, cumin, honey, preserved lemons and seasoning.
  • Wipe out the griddle pan and toss the prawns with a little oil and seasoning. Griddle for 1-2 mins each side until cooked through, then transfer to a plate. Add the chorizo slices to the pan and cook for 3-4 mins each side, or until they start to release their oil and become crispy.
  • In a large bowl, combine the chickpeas, onion, spinach and most of the parsley. Add the aubergines, prawns and chorizo, pour over the dressing and gently toss everything together. Pile onto a serving platter and scatter over the remaining parsley. Serve straight away.

1 cup celery (2-3 stalks), chopped
1 cup carrots (2-3 carrots), chopped
2 tablespoons butter, divided
3 cups 1/2-inch cubes peeled Granny Smith apples (1-2 apples)
1/3 cup dried cranberries
2 tablespoons chopped fresh sage, thyme, rosemary, and parsely
1/2 cup pecans, chopped
1/2 pound kale, chopped
1 1/4 cups low-salt chicken broth
2 large eggs

Steps:

  • NOTE: This recipe is written to be cooked in a baking pan. You may also stuff this into the turkey, if desired. If so, reduce stock used by half to minimize sogginess. Position rack in center of oven and preheat to 350°F. Spread bread cubes in single layer on large rimmed baking sheet. Bake until pale golden, stirring occasionally, 15 to 20 minutes. Transfer bread to very large bowl. Sauté chorizo in heavy large skillet/sauté pan over medium-high heat until cooked through, breaking up into small pieces if necessary, 8 to 10 minutes. Using slotted spoon, transfer sausage to bowl with bread cubes. Add onions and garlic to drippings in skillet; sauté until golden brown, about 12 minutes. Transfer to bowl with bread-sausage mixture (do not clean skillet). Repeat with celery and carrots (add butter if necessary). Melt 1 tablespoons butter in same skillet over medium-high heat. Add apples; sauté until tender, about 10 minutes. Add to bowl with bread mixture; mix in cranberries. Melt remaining tablespoon butter in same skillet over low heat. Add herbs; stir 30 seconds.
