Skillet corn bread
1/4 pound Spanish chorizo (cured spiced pork sausage), casing removed and sausage chopped
2 tablespoons vegetable oil
2 medium onions, coarsely chopped (3 cups)
4 celery ribs, coarsely chopped (3 cups)
2 tablespoons chopped garlic
1 teaspoon dried oregano
1 cup reduced-sodium chicken broth
1 large egg

Steps:

  • Preheat oven to 350°F with racks in upper and lower thirds of oven. Butter a 3-quart shallow baking dish.
  • Crumble corn bread into 1/2-inch pieces, spreading out in 1 layer in 2 large 4-sided sheet pans. Bake, stirring occasionally, until dry, about 20 minutes. Cool completely and transfer to a large bowl.
  • Meanwhile, cook chorizo in oil in a 12-inch heavy skillet over medium-high heat, stirring occasionally, until crisp, 1 to 2 minutes. Add onions, celery, garlic, oregano, and 1 1/4 teaspoon salt and sauté until vegetables are softened, about 10 minutes. Add to corn bread.
  • Whisk together broth and egg, then pour over stuffing and toss well. Transfer to baking dish and cover tightly with buttered foil. Bake in upper third of oven 1 hour. Remove foil and bake until top is golden, about 15 minutes more.

1/4 cup extra-virgin olive oil, plus more for brushing
1 medium onion, chopped
3 cloves garlic, chopped, plus 1 whole clove Kosher salt and freshly ground black pepper
4 ounces dried chorizo, diced or sliced
One 14-ounce can whole peeled tomatoes
1 chipotle chile in adobo sauce, seeded and minced
1 1/2 teaspoons smoked paprika
One 14-ounce can chickpeas, rinsed and drained
2 roasted red bell peppers, thickly sliced
1 pound skinless cod fillets, cut into 1 1/2-inch pieces
4 thick slices sourdough bread
1/2 cup chopped flat-leaf parsley

Steps:

  • Heat the 1/4 cup olive oil in a large saute pan or deep skillet over medium heat until shimmering. Add the onions and chopped garlic and season with salt and pepper. Cook, stirring occasionally, until softened and just starting to brown, 6 to 8 minutes. Add the chorizo and cook, stirring occasionally, until slightly rendered, 3 to 5 minutes.
  • Crush the tomatoes by hand and add them to the pan along with their juices. Stir in the chipotle and paprika, then stir in the chickpeas and roasted red peppers; season with salt and pepper. Bring to a simmer over medium heat, then nestle the cod in the stew. Cover and simmer over medium-low heat until the cod is cooked through, about 5 minutes.
  • Meanwhile, preheat a cast-iron grill pan over high heat. Brush the bread with olive oil and grill, flipping once, until lightly charred, 3 to 5 minutes. Rub the grilled bread with the whole garlic clove and season with salt and pepper.
  • Garnish the stew and bread with the parsley and serve right away.

1 1/2 cups yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
1 large egg
3/4 stick (6 tablespoons) unsalted butter, melted and cooled
Stuffing:
1/2 stick (1/4 cup) unsalted butter
2 cups chopped onions
8 ounces Spanish chorizo (dry-cured spiced sausage), casing removed and sausage coarsely chopped (about 1 1/2 cups packed; see Cooks' Notes)
2 cups fresh, or thawed frozen, corn kernels (one 10-ounce package)
1 teaspoon dried sage
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup coarsely chopped flat-leaf parsley
2 cups turkey stock or reduced-sodium chicken broth

Steps:

  • For corn bread:
  • Heat oven to 400°F with rack in middle and butter an 8-inch square baking pan.
  • Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  • Whisk together milk, egg, and butter in a small bowl and stir into dry ingredients. Pour batter into buttered baking pan.
  • Bake until golden and a tester comes out clean, 25 to 30 minutes.
  • Cool corn bread in pan on a rack 10 minutes, then turn out onto rack to cool completely.
  • Cut corn bread into 3/4-inch cubes and put in a large bowl.
  • For stuffing:
  • Melt butter in a 12-inch heavy skillet over medium heat, then add onions and cook, stirring occasionally, until softened, about 8 minutes.
  • Add chorizo, corn, sage, salt, and pepper and cook, stirring occasionally, 10 minutes. Remove from heat and add parsley.
  • Toss chorizo mixture with corn bread and transfer to a 13- by 9-inch baking pan. Drizzle with chicken broth.
  • Bake at 400°F uncovered, until golden brown, about 30 minutes.

PASTA WITH CHICKPEAS, CHORIZO AND BREAD CRUMBS



Pasta With Chickpeas, Chorizo and Bread Crumbs image

If you're a planner, you can soak and cook dried chickpeas for this easy pasta dish, but if you're not, no worries. Using two or three cans makes it a real cinch; you'll have it on the table in about 20 minutes. First, brown the chorizo or kielbasa and set aside. Toast the bread crumbs in the same pan with a smattering of minced garlic, and set that aside, too. Dump the chickpeas into the pan with a bit of their liquid and let that reduce a bit while the pasta cooks. After draining the pasta, toss it with the chickpeas and sausage, and heat through. Serve it in big bowls with bread crumbs scattered over the top and a few aggressive grinds of the pepper mill. Our favorite pasta shape for this recipe is conchiglie, or shells, because the chickpeas nestle inside like they belong there, but it will work with almost any small cut pasta.

  • Add 2 more tablespoons olive oil to skillet and, over medium heat, chickpeas and about 1 cup of their liquid. Cook pasta until it is nearly but not quite tender; drain, then add it to chickpeas. Cook, stirring occasionally, until pasta is tender; stir in chorizo, heat through, and taste and adjust seasoning.
  • Serve chickpea-pasta mixture in bowls, garnished with crisp bread crumbs and a sprinkling of parsley.

1/2 cup chopped celery
1 tablespoon chopped garlic
2 cups crumbled corn bread
1/2 cup chicken stock
1/4 cup chopped cilantro

Steps:

  • Cook the chorizo in a skillet over medium heat until the fat has been rendered, about 5 minutes.
  • Preheat the oven to 350 degrees F.
  • Add the onion, carrots, celery, and garlic to the chorizo and cook until the vegetables have carmelized, about 10 minutes.
  • Add the crumbled corn bread, chicken stock, and cilantro. Make sure that the stuffing itself is not to dry but at the same time not to wet.
  • Place the stuffing into a buttered casserole and bake in the oven until heated through and lightly browned, about 20 minutes.

1 tablespoon sherry vinegar

1/3 cup packed cilantro leaves

Steps:

  • Heat broiler. Spread bread on large baking sheet and toast until just golden, about 1 minute.
  • In a large skillet, heat 1 tablespoon oil over medium-high heat. Add chorizo and onion; cook until sausage is golden and onion soft, about 5 minutes. Stir in oregano and remove from heat.

1 pound chorizo
1/2 cup butter
1 cup chopped onions
1 cup diced celery
1/2 cup diced carrots
4 to 6 serrano chilies, deribbed, seeded and minced
1 sweet red pepper, chopped
1 cup chopped chayote, optional
6 cloves garlic, minced
1/4 cup bourbon
8 cups coarsely crumbled corn bread (this is the yield of an 8-by-8 pan)
3 teaspoons fresh thyme leaves
3 teaspoons minced fresh sage
3 tablespoons chopped cilantro
1/2 cup chicken or turkey stock, or more
1 teaspoon salt, or to taste
Freshly ground black pepper

Steps:

  • Heat oven to 350 degrees.
  • Heat oil in a medium pan over medium heat. Crumble in chorizo and brown. Drain, set aside.
  • In a large frying pan, melt butter over medium-high heat. Add onion, celery, carrots, chilies, sweet pepper and chayote, turn heat to high and sauté for 8 to 10 minutes. Make a well in center with spoon and add garlic, stir until fragrant, but not browned. Deglaze with bourbon for one minute or until liquid evaporates. Put vegetables in a bowl, add corn bread, sausage and herbs. Moisten with stock, season with salt and pepper, stir to combine.
  • Stuff a 10- to 12-pound turkey. Or put in a large casserole and moisten with another 1/2 cup stock, or more, to your liking. Cover, bake 25 minutes.

46 green onions, chopped
1 tablespoon tomato paste
1 tomato, seeded and diced
1 teaspoon dried Mexican oregano
2 Chipotle chiles pickled, chopped
Coarse salt and freshly ground pepper
1 small loaf of French bread
Grated Cotija and Manchego cheese, about 1/2 pound

Steps:

  • In a dry heavy skillet, fry the chorizo until browned. Drain off any fat and add the tomato paste and fry with chorizo briefly. Add the green onions, oregano, tomato, chile, and salt and pepper. Cook 2 to 3 minutes longer.
  • Spread the chorizo mixture on a split loaf of French bread. Sprinkle generously with Cotija and Manchego cheeses.
  • Place under a broiler and broil until the cheese is melted and bubbly and serve with tomatillo salsa.

Steps:

  • Heat 1 1/2 tablespoons oil in large skillet over medium heat. Add onions; sauté until deep golden brown, stirring often and adjusting heat as needed to prevent burning, 25 to 30 minutes. Sprinkle with salt and pepper.
  • Meanwhile, heat remaining 1 tablespoon oil in medium skillet over medium heat. Add leeks; sauté 3 to 4 minutes. Add 3/4 cup water; cover and cook until leeks are tender, stirring often and adding more water by tablespoonfuls to moisten as needed, 10 to 15 minutes. 3 cups flour
1 cup shredded sharp cheddar cheese
3 green onions, sliced thin
3 tablespoons brown sugar
1 1/2 tablespoons baking powder
1/2 teaspoon cumin
1/4 teaspoon baking soda
1 (8 ounce) package cream cheese, at room temp
1 cup milk
2 eggs
1/3 cup melted butter
3/4 cup shredded sharp cheddar cheese

Steps:

  • Pre heat oven to 375 degrees.
  • In a medium heavy skillet cook chorizo until done and slightly crisp.
  • Drain thoroughly.
  • In a large bowl stir together flour, cheese, onion, sugar, baking powder, cumin and baking soda.
  • In another large bowl beat cream cheese until smooth.
  • Stin in milk.
  • Add eggs one at a time beating well after each addition.
  • Stir in melted butter and chorizo.
  • Slowly add the flour mixture until just moist.
  • Spoon into a greased cast iron skillet.
  • Bake for about 50 minutes.
  • Tap the top of bread, and if it sounds hollow it's done.
  • Top with cheese and bake for another 5-7 minutes.
  • Remove and cool for 10 minutes.
  • Turn out onto a rack and cool at least another 15 minutes before slicing.

3 tablespoons olive oil
1 lb chorizo sausage, no casing
1 1/2 cups finely chopped onions
1/2 cup finely chopped bell pepper, any color
1 cup thinly sliced leek
12 hamburger buns, cut in 1-inch cubes
1 lb medium cheddar, grated
1 lb monterey jack cheese, grated
4 ounces chopped green chilies
16 large eggs, beaten well
2 cups half-and-half
4 dashes tapatio salsa picante hot sauce
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
3/4 cup sour cream

Steps:

  • Pre-heat oven to 350°F.
  • Grease 2 9x13 pans.
  • In a medium bowl, toss together 1 1/2 cups cheddar and 1 1/2 cups monterey jack cheese. Set aside.
  • In a large skillet, cook chorizo, stirring occasionally.
  • Add all vegetables and saute until tender.
  • Place bread cubes in very large bowl. Add chorizo mixture and green chilis, toss until coated.

  • Spread top with sour cream and sprinkle with mixed cheeses.

2 cups polenta (which is a really coarse corn meal)
2 cups all purpose flour
2 tbs. Baking powder
3 cup jalapeño en escabeche (I finely diced the jalapeño only)
3 eggs (lightly beaten)
1 tsp. salt
2 2/3 cups buttermilk (or substitute Horizon organic plain whole milk yogurt)
: cup grated cheddar cheese (for the ease of it I used Trader Joe=s shredded 3 cheese blend)
3 heaping tablespoons of Honey
1 14 : oz. (418 grams) of cream style golden sweet corn
2 cups chorizo sausage (browned and fat drained out) **Recipe follows
**Almost 2 cups chile powder - New Mexico
5/8 cup vinegar
1¼ tablespoon oregano
1¼ tablespoon salt
1¼ teaspoon pepper

Finally, mix in buttermilk, honey, creamed corn and chorizo. Prepare Bundt pan by spraying oil into it to keep the corn bread from sticking to it. Fold the cornbread batter into Bundt pan. Bake 45 - 50 minutes until firm to the touch and golden. Remove from oven and let stand for 20 minutes before serving. Cut into wedges and top with a touch of chopped cilantro and serve with sliced tomatoes which are generously peppered. (I found wonderful red and yellow tomatoes which looked really pretty on the plate with the corn bread.) Finally, sprinkle with a touch of crumbled *Cotija cheese. (If you can=t find the Cotija, then you will want to salt the tomatoes too.) *Cotija cheese is a dry salty crumbly cheese usually found at Hispanic markets. **Mix all ingredients thoroughly. Let age overnight in refrigerator. Cook until meat is fully cooked in a skillet on medium heat adding olive oil as needed if too dry.

Extra virgin olive oil, as needed
1/4 pound cooked Spanish chorizo or kielbasa, chopped
1 tablespoon minced garlic
1 cup coarse fresh bread crumbs
4 cups cooked chickpeas, with their liquid
1/2 pound cut pasta, like ziti or penne (even smaller cut pasta is good here)

Steps:

  • Chopped parsley leaves, for garnish. 1. Set a large pot of water to boil and salt it. Put 1 tablespoon olive oil in a skillet over medium heat and add chorizo; heat, stirring occasionally, until chorizo is lightly browned, then remove with a slotted spoon and set aside. Add 2 tablespoons olive oil and then the garlic; cook until it colors lightly, then add bread crumbs. Toast, shaking skillet frequently, until bread crumbs turn golden brown, about 10 minutes; if necessary, add a little more olive oil. Season with salt and pepper and remove to a bowl. 2. Add 2 more tablespoons olive oil to skillet and, over medium heat, chickpeas and about 1 cup of their liquid. Cook pasta until it is nearly but not quite tender; drain, then add it to chickpeas. Cook, stirring occasionally, until pasta is tender; stir in chorizo, heat through, and taste and adjust seasoning. 3. Serve chickpea-pasta mixture in bowls, garnished with crisp bread crumbs and a sprinkling of parsley

1 pound chorizo, casings removed
6 tablespoons olive oil
1 1/2 cups bread crumbs
1 pound rigatoni or ziti
6 cloves garlic, sliced
4 ounces tomato paste
1 bunch broccoli rabe, chopped

Steps:

  • Cook the sausage in a large pot over medium-high heat, breaking up the meat with the back of a spoon, until browned, 5 to 8 minutes. Using a slotted spoon, remove the sausage, leaving the fat behind.
  • Add 3 tablespoons oil and the bread crumbs to the pot; season with salt and pepper. Cook, stirring frequently, until the bread crumbs are golden brown, 2 to 3 minutes. Transfer to a bowl.
  • Cook the pasta in a large pot of salted boiling water until just al dente. Drain, reserving at least 1 cup of the pasta water.
  • Meanwhile, heat the remaining 3 tablespoons olive oil in the pot, then add the garlic and cook, stirring occasionally, until it's toasted and golden brown, 2 to 3 minutes. Add the tomato paste and cook, stirring constantly, until it's a nice brick-red color and starts to stick a bit to the bottom of the pot, 2 to 3 minutes more.
  • Reduce the heat to medium-low and add the broccoli rabe, then season with salt and pepper. Cook, stirring occasionally, until it's all wilted and bright green, 3 to 5 minutes.
  • Add the pasta and chorizo back to the pot along with 1/2 cup of pasta water. Cook, stirring constantly, until each piece of pasta is coated nicely in the tomato-y, chorizo-y sauce.
  • Serve straight from the pot (or not), with toasted bread crumbs and pecorino for sprinkling over.
