Simply delightful Southwestern salad dressed with delicious smoky, spicy Thousand Island. A must try!

1 hard-boiled egg
1/2 cup mayonnaise
3 tablespoons milk
3 tablespoons chili sauce
2 tablespoons finely chopped dill pickles
1 tablespoon finely chopped red bell pepper (or other color)
1 tablespoon finely chopped onion
2 teaspoons chipotle chiles in adobo, very finely minced
1/4 teaspoon sugar
16 ounces romaine lettuce leaves, torn (about 12 cups or 1 1/2 ten-ounce bags prepared lettuce)
1 cup large tomatoes, seeded and chopped
1 cup frozen corn, at room temperature
1 cup canned black beans, rinsed and drained
1/2 cup red bell pepper, chopped (or a mix of colors)
4 scallions, thinly sliced (almost 1/4 cup)
1 cup cheddar cheese, shredded
1 large firm ripe avocado
1 cup Doritos, crushed coarsely then measured (we used Spicy Sweet Chili flavored Doritos)

Steps:

  • Mash hard-boiled egg with fork in a small bowl into very small crumbly pieces. Stir in remaining dressing ingredients.
  • Combine lettuce, tomato, corn, black beans, bell peppers, scallions, and cheese in a large bowl and toss. Add dressing and toss again to coat.
  • To help avocado stay nice & green and Doritos retain crispness, wait until just before serving to toss them into salad. Makes 6 large servings.

This crunchy, flavor-packed salad is one of the most-requested recipes at the award-winning restaurant, Oleana, and was printed in Chef Ana Sortun's cookbook, "Spice: Flavors of the Eastern Mediterranean".

1 large head romaine lettuce, blemished outer leaves removed
1 English cucumber
1/2-3/4 cup walnut halves, lightly toasted (optional)
1 cup roughly chopped arugula, washed and dried well (about 1 small bunch)
1 tablespoon chopped flat leaf parsley
2 tablespoons chopped fresh dill
1 tablespoon chopped of fresh mint
1/4 teaspoon aleppo chile
salt & fresh ground pepper
1 teaspoon finely minced garlic (about 2 large cloves)
2 tablespoons fresh-squeezed lemon juice (about 1/2 lemon)
1 tablespoon champagne vinegar (avoid acidic brands like Heinz) or 1 tablespoon chardonnay vinegar (avoid acidic brands like Heinz)
1 1/2 teaspoons sugar
salt & fresh ground pepper
1/2 cup whole-milk plain yogurt or 1/2 cup sheep's-milk yogurt
5 tablespoons extra virgin olive oil

Steps:

  • Wash and dry the romaine leaves. Be careful to dry the greens thoroughly, or the dressing won't cling. Chop the romaine into fine shreds (1/4 inch) and place them in a large salad bowl.
  • Peel the cucumber and cut it in half lengthwise. Spoon out the seeds. Cut each half in half widthwise, making four long pieces, and grate the cucumber on the large holes of a box grater. Squeeze out any excess water with your hands.
  • Add the shredded cucumber to the chopped romaine. Combine the romaine and cucumber with the walnuts, chopped arugula, and herbs, and set aside or keep cold until you're ready to toss and serve.
  • Make the dressing by combining the minced garlic with the lemon, vinegar, and sugar in a small mixing bowl. Let this mixture sit for at least 10 minutes to soften the sharpness of the raw garlic.
  • Finish the dressing by whisking in the yogurt and then the olive oil, little by little. Season to taste with salt and fresh-ground pepper.
  • Just before serving, add half the dressing to the salad, salt and pepper taste, and toss. Romaine is thick and crunchy and needs more dressing than a delicate lettuce. Taste the salad, and if the dressing's too light, spoon on more. Sprinkle with chilies and serve immediately.

This dressing is much better than any store-bought. I'm not usually a Thousand Island type of person, but this is great on this salad, and on crab or shrimp Louis as well. I found this in Bon Appetit magazine, February 1998. Prep time does not include making hard-boiled egg.

1 1/4 c mayonnaise
1/3 c chili sauce
1/4 c pimiento, drained and chopped
1 large hard boiled egg, finely chopped
3 Tbsp dill pickle, finely chopped
2 Tbsp dijon mustard
2 Tbsp capers, drained
2 Tbsp green onion, chopped
hot pepper sauce
2 medium heads romaine lettuce, coarsely chopped

Steps:

  • 1. Combine first 8 ingredients in medium bowl and whisk to blend. Season dressing to taste with hot pepper sauce, salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate.)
  • 2. Place lettuce in large bowl. Toss with enough dressing to coat.

I am a Thousand Island addict, I use it on everything, so eventually it made it's way into a Macaroni Salad. Don't be disturbed by it's pink appearance. =o)

1 cup thousand island dressing
1 tablespoon vinegar
4 hard-boiled eggs (separate the yolk from the white after they've been boiled)
1 tablespoon fresh lemon juice (not from concentrate)
1 tablespoon prepared mustard (I use dijon)
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces elbow macaroni, cooked per package instructions,drained (shells can be used too of course!)
1 cup sliced celery
1 cup chopped green peppers or 1 cup red pepper
1/4 cup chopped onion

Steps:

  • Combine first 6 ingredients, in this step include only the egg yolks leaving the whites.
  • This is your sauce.
  • Chop the whites of the eggs.
  • Stir in remaining ingredients.
  • Cover, chill (I always top this with a sprinkle of paprika).
