BACON APPLE PIE

...with delicious, crispy bacon lattice! Other bacon apple pie recipes call for bacon to be crumbled into the pie filling, but this one uses a bacon weave on top for an extra crispy treat. NOTE: this recipe calls for canned pie filling and frozen pie crust, but feel free to make your own. Home-made is better, but pre-made is better than nothing.

2 cups apple pie filling (approx)
1 pie crust
1/8 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon lemon juice
10 -12 slices bacon (uncooked)

Steps:

  • Preheat the oven to 400°F.
  • Mix apple pie filling, sugar, cinnamon, nutmeg, and lemon juice in a bowl and pour into pie crust (in a pie pan or tin). Smooth with a spatula.
  • Create bacon weave on top of pie: Lay two strips across the pie so that they intersect in the middle and are at right angles. Turn the pie so that the lower strip points toward you. Continue adding more bacon to the left and the right, creating an alternating over-under pattern with the single strip that runs side-to-side.
  • At this point, there should five or six strips of bacon pointing toward the front of the pie and one strip running side-to-side which weaves over and under the other five or six strips.
  • Begin laying a strip of bacon next to the on running side-to-side. Start at one end and create an over-under pattern opposite the first one by lifting up alternating strips, laying this piece down, and replacing the strips you lifted. Continue on both sides until the pie is completely covered in a bacon lattice with an alternating over-under weave.
  • Trim the ends that hang over the sides. Save these trimmings for use in recipes that call for diced bacon (you can freeze them).
  • Bake 45-60 minutes, or until bacon is crispy and completely cooked. You may want to bake this over a baking sheet in case apple or bacon grease ooze over the sides.
  • Cool for 10 minutes before serving. Serve with caramel praline, dulce de leche, or similar ice cream. If desired, you can cooked up the bacon trimmings and garnish the ice cream with them.

This is also called Cholera Pie. It comes from the Goms region of Switzerland in the 1800's. The special ingredient is apples, although it is a savory pie.

1/4 cup butter or 1/4 cup margarine
1 medium chopped onion
1 leek, thinly slice, white part only
2 apples, slightly tart, such as Granny Smith
2 medium potatoes
8 ounces shredded swiss cheese
2 prepared pastry shells
salt
pepper
nutmeg, to taste

Steps:

  • Peel, halve and boil potatoes until mostly tender. Cool and slice.
  • Peel and thinly slice apples.
  • Melt butter in large skillet and sauté onion, leek and apples about 15 minutes, until just tender. Do not overcook.
  • Add potato slices, salt, pepper and nutmeg and toss, light, trying not to break up potatoes much.
  • Place pie crust in glass pie plate, add half the mixture, sprinkle to cover with cheese and add other half mixture.
  • Place other pie crust on top, crimping edges and piercing to vent.
  • You can brush with egg wash if you wish.
  • Bake in 350°F oven for 35-40 minutes, covering crust edges with foil after 20 minutes.
  • Let cool 10 minutes before serving.
  • Hint: I go a bit heavy on the nutmeg.

1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine
1/4 cup cold water
6 -7 medium apples
2 teaspoons lemon juice (optional)
1/3 cup brown sugar
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon allspice
2 tablespoons all-purpose flour
1 teaspoon all-purpose flour
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • FOR CRUST:.
  • In a medium to large sized bowl, mix together flour and salt.
  • Cut in butter with a pastry blender, until you have oatmeal-sized pieces of butter.
  • Slowly add water, little amounts at a time (you do not want to add too much) and toss with fork until dough starts to come together.
  • On a lightly floured surface, roll out dough. (This recipe makes the top and bottom crust, divide dough in half before rolling.).
  • Put one crust in the pie pan, set the other aside.
  • FOR FILLING:.
  • Preheat oven 450°F, after 5 minutes of preheating, pre-bake the bottom pie shell 1-2 minutes.
  • Cut apples and sprinkle with lemon juice (optional), set aside in a medium/large sized bowl.
  • In another bowl, mix sugars, spices and 2 tbsp flour. Reserve 2-3 tbsp of mixture in a separate bowl.
  • Toss apples in mixture, and arrange in pie pan (dome shape works well). Sprinkle 1 tsp flour, then with reserved mixture.
  • Dot with butter, and cover with second crust. Seal/flute edges and slit steam vents.
  • Bake for 10 minutes at 450°F, then rotate pie and bake 30-35 minutes at 350°F Enjoy!
