At a church fund-raiser, I purchased a pie-a-month package furnished by a local family. From among all the varieties they made, this one was the best, with its chocolate crust, creamy caramel filling and fluffy topping.

- In a large saucepan, add the caramels, butter and water. Cook and stir over medium heat until caramels are melted. Spread over crust; sprinkle with pecans. Refrigerate., In a large saucepan, melt chocolate chips with hot water over low heat; stir until smooth. Cool slightly. , Fold in whipped topping. Spread over cream cheese layer. Garnish with chocolate hearts or curls if desired. Chill until serving. Refrigerate leftovers.

- Preheat oven to 350°. In a large bowl, combine flour, sugar, cocoa, baking soda and salt. In another bowl, combine water, oil, egg, vinegar and vanilla. Stir into dry ingredients just until moistened., For filling, beat cream cheese, sugar and salt until smooth. Beat in egg and vanilla. Fold in chips., Fill 12 paper-lined jumbo muffin cups half full with batter. Drop a rounded tablespoonful of cream cheese mixture into center of each; cover with remaining batter., Bake 25-30 minutes or until a toothpick inserted in muffin comes out clean. Cool 5 minutes before removing from pans to wire racks to cool completely. Sprinkle with confectioners' sugar if desired.

- Combine crumbs, cinnamon and margarine; press onto bottom of 9-inch springform pan.
- Bake at 325°F for 10 minutes.
- Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended.
- Add eggs, one at a time, mixing well after each addition.
- Blend in sour cream and vanilla.
- Blend chocolate into 3 cups batter; blend liqueur and peel into remaining batter.
- Pour chocolate batter over crust.

- Spoon remaining batter over chocolate batter continue baking 30 minutes more.

- Heat oven to 450°F. Make and bake crust as directed. Cool completely on cooling rack.
- In 2-quart saucepan, heat caramels, butter and 2 tablespoons water over medium heat, stirring frequently, until caramels are melted. Pour into cooled baked crust. Sprinkle with pecans. Refrigerate about 1 hour or until chilled.
- In small bowl, beat cream cheese and 1/3 cup powdered sugar with spoon until smooth. Spread over caramel layer; refrigerate.
- Meanwhile, in 1-quart saucepan, heat chocolate and 3 tablespoons hot water over low heat, stirring constantly, until chocolate is melted. Cool to room temperature. Stir in vanilla.
- In chilled large bowl, beat whipping cream and 2 tablespoons powdered sugar with electric mixer on low speed until mixture begins to thicken. Gradually increase speed to high and beat until stiff peaks form. Reserve 1 1/2 cups.
- Fold chocolate mixture into remaining whipped cream. Spread over cream cheese layer. Garnish with reserved whipped cream and chocolate curls. Cover; refrigerate at least 1 hour until firm but no longer than 48 hours.

- 1. Prepare cake mix per package directions, but substitute 1/4 cup of orange juice for part of the liquid called for.
- 2. Bake, according to package dirextions, in 2-8 inch cake pans that have been sprayed with butter flavored cooking spray.
- 3. Remove cake from pans and cool completely on a wire rack.
- 4. For Filling and Frosting: Cream together butter, salt and sugar. This will be fairly dry and fluffy.
- 5. Add orange zest and blend.
- 6. Blend in orange juice until frosting is a fairly stiff spreading consistency.
- 7. Using 1/2 cup of frosting, blend in orange marmalade and 3 tablespoons of powdered sugar. This will be the filling for the cake. Spread between layer and frost cake with the rest of the frosting.

- Crust~ Combine crumbs and sugar. Add butter ad press into bottom and sides of 9" spring form pan. Set aside. Filling~ Melt chips in double broiler. Add coffee, vanilla, and salt. Keep warm. Beat egg whites with 1/3 cup sugar to stiff peaks-set aside. Beat yolks with 1/3 cup sugar. Add cheese,and rum. Mix well. Add Chocolate mixture to cheese mixture. Mix well, then fold in egg whites. Pour into crust and bake at 350, one hour. Turn oven off and leave cake in the oven until cool. The top will be cracked. Serve with whipped cream. Rifrigerate, or freeze.

- 1. On the stove, in a pan, melt together milk, marshmellows and hershey bars broken up. Cook on low heat and keep stirring and mix completely till all ingredients are incorporated. Set aside to cool, only takes a few minutes.
- 2. When cool, take cool whip from refrigerator and add to melted chocolate, milk & marshmellows. Mix together well and add to graham cracker crust,or cookie crust.
- 3. Put into refrigerator overnight.
