BUNNY BUTT SUNDAE CONE

Steps:

  • Scoop vanilla ice cream into a flat-bottomed cake cone to come just past the rim. Press the top of the ice cream into crushed chocolate cookies. Secure the cone in a 3-ounce paper cup and freeze until firm, about 15 minutes. Place another scoop of ice cream on top of the crushed cookies. Snip a marshmallow in half crosswise and stretch to make an oval paw shape. Draw bunny paw pads on the smooth sides of the marshmallow pieces with a pink edible marker and stick to the ice cream. Pipe or top with a quarter-sized dollop of sweetened whipped cream between the feet for a bunny tail. Push 2 small oval shaped sandwich cookies (such as Mini Milanos) into the top of the ice cream scoop for bunny ears.

3 scoops friendly's forbidden chocolate chocolate ice cream (any other chocolate ice cream would also work)
1/4 cup hot fudge
1 tablespoon chocolate sprinkles
whipped cream (homemade or canned)

Steps:

  • Heat hot fudge to taste.
  • When fudge is hot, put ice cream in serving dish or bowl.
  • Top with hot fudge.
  • Dollop on whipped cream.
  • Sprinkle chocolate jimmies on top.

Two 1/2-cup scoops mint chocolate chip ice cream
Two 1/2-cup scoops cookies and cream ice cream
Two 1/2-cup scoops chocolate chip cookie dough ice cream
2 tablespoons hot caramel sauce
2 tablespoons hot fudge sauce
1 waffle cone, preferably a red velvet cake cone if you can find one
Marshmallow cream, for topping
1 marshmallow
1 chocolate chip cookie
1 teaspoon edible red glitter

Steps:

  • Place the mint chocolate chip, cookies and cream and chocolate chip cookie dough ice cream in a serving dish, then drizzle over the caramel and fudge sauces. Place the waffle cone upside down on the ice cream. Put the marshmallow cream in a piping bag (or spoon it straight from the jar) and pipe or spoon small blobs of cream around the bottom of the cone to mimic the fur trim on a Santa hat. Stick the marshmallow on the tip of the cone. Break the cookie into 2 or 3 pieces and place around the edges of the sundae. Sprinkle over the red glitter.

1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup brown sugar, firmly packed
1/2 cup shortening
1 egg
1/4 cup maraschino cherry juice
2 tablespoons milk
2 ounces unsweetened chocolate, melted
1/2 cup cherries, chopped
1/2 cup walnuts, chopped
1/2 large marshmallows (for each cookie)
1/4 cup cocoa
1/2 cup margarine
2 tablespoons milk
1 teaspoon vanilla
confectioners' sugar
1 walnuts, piece (for each cookie)

Steps:

  • Preheat oven to 350.
  • Cookies:.
  • Mix together flour, baking soda, and salt, set aside.
  • With your mixer, mix brown sugar and shortening.
  • Blend in egg. Beat well, then stir in 1/2 of the dry ingredients.
  • Add Marachino juice and milk.
  • Stir in the rest of dry ingredients, and mix well.
  • Blend in melted unsweetened chocolate (you can use the kind that are already melted, or substitute 6 T. of cocoa and 2 T. oil), chopped cherries, and chopped walnuts.
  • Drop by spoonfuls on an ungreased cookie sheet.
  • Bake for 12-15 minutes.
  • While cookies are baking cut large marshmallows in half.
  • Place the cut side of the marshmallow down on hot cookies when they come out of the oven, so they will stick.
  • Let cool.
  • Frost cookies, then and put a nut on top.
  • Buttercream Chocolate Frosting:
  • Beat cocoa, margarine, milk and vanilla well. Add in confectionary sugar to desired consistency.

Not all ice cream cones melt in the blazing summer sun. Have fun shaping and rolling the colorful cookie dough so that every slice is super cute.

2 1/4 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/2 teaspoon baking powder
1/4 teaspoon fine salt
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
2/3 cup granulated sugar
1 large egg, plus 1 egg beaten for egg wash
1 tablespoon vanilla extract
2 teaspoons unsweetened cocoa powder
3 drops really red gel food coloring
4 drops beige gel food coloring
1/4 cup semisweet chocolate chips
Rainbow sprinkles, for decorating
Mini chocolate chips, for decorating
1 3/4 cups confections' sugar
1 tablespoon meringue powder

Steps:

  • For the cookies: Whisk together the flour, baking powder and salt in a medium bowl. Beat the butter and sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Beat in 1 egg and the vanilla until incorporated. Reduce the mixer speed to low and add the flour mixture and beat until just combined.
  • Turn the dough out of the bowl and bring it together. Remove 3/4 cup dough and set it aside (this will be for the cone). Put 1/2 cup of dough into a medium bowl, add the cocoa powder and mix until combined (this will be for the chocolate ice cream). Put 1 cup dough into a medium bowl, add 1 drop red food coloring and mix until combined (this will be the strawberry ice cream). Place the remaining 2 teaspoons dough into a small bowl, add 2 drops red food coloring and mix until combined (this will be the cherry).
  • For the cone: Lightly dust a work surface. Roll the reserved 3/4 cup uncolored dough into a 10-inch log. Press the entire length of the log into an isosceles trapezoid shape. Use a ruler to help flatten the sides and top. The top of the trapezoid should be about 1 inch wide and the bottom should be about 1/4 inch wide. The sides should be about 1 inch tall. Put the log on a piece of plastic wrap. Prop the dough up against a loaf pan with the bottom resting against the counter. Alternatively, if you have 2 loaf pans, place them upside down, next to each other lengthwise. Add a piece of plastic wrap long enough to cover both pans with a slight overhang. Press the cone dough into the plastic wrap between the pans to your trapezoid. Flatten the top.
  • Make the strawberry ice cream: Roll the pink dough into an 11-inch log. Use a ruler to flatten one side of the log so the log is a half-circle shape. The dough will spread as you shape it; the flat side of the log should be about 1 1/4 inches wide. Brush the flat side with the egg wash and press it on top of the cone.
  • Make the chocolate ice cream: Roll the chocolate dough into an 11-inch log. Use a ruler to flatten one side of the log so the log is a half-circle shape. The dough will spread as you shape it; the flat side of the log should be about 3/4 inch wide. Brush the flat side with the egg wash and press it on top of the strawberry ice cream.
  • Make the cherry on top: Roll the red dough into a 12-inch rope. Brush one side with egg wash and press on top of the chocolate ice cream. Wrap the entire ice cream cone in plastic wrap and freeze until hard, about 30 minutes.
  • Position oven racks in the upper and lower thirds of the oven. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment.
  • Cut 1/4 inch off each end of the ice cream log with a very sharp knife to reveal the ice cream cone shape. Cut into 1/4-inch-thick slices. Arrange the slices about 1 1/2 inches apart on the prepared baking sheets. Bake, rotating about halfway through, until crisp and just starting to turn brown on the bottom, 10 to 12 minutes. Let the cookies cool on the baking sheet for 10 minutes before transferring to a rack to cool completely.
  • Make the royal icing: Meanwhile, combine the confectioners' sugar and meringue power in a large bowl. Add 2 tablespoons water and beat with an electric mixer on medium-high speed until the icing forms thick and glossy peaks, about 2 minutes (adding up to 1 tablespoon more water, if needed). Remove half of the icing to a small resealable plastic bag. Add the beige food coloring to the mixing bowl and beat on low speed until the color is incorporated. Transfer to a small resealable plastic bag. Put the chocolate chips in a small microwave-safe bowl and melt in 30 second intervals, stirring in between each, until smooth, about 1 minute. Transfer the chocolate to a third small resealable plastic bag.
  • Cut a very small hole in the corner of each of the plastic bags. Pipe the white icing on the chocolate ice cream to mimic whipped cream. Sprinkle with a few rainbow sprinkles. Pipe a few dots of chocolate onto the strawberry ice cream and top with a few mini chocolate chips. Pipe the beige icing in a diagonal crisscross pattern on the cone. Let the icing and chocolate harden completely at room temperature before serving, about 15 minutes.

1 bag (11.5 or 12 oz) semisweet chocolate chunks (2 cups), divided
1/2 cup butter or margarine, softened
1 egg
1 pouch Betty Crocker™ chocolate chip cookie mix
1 cup white vanilla baking chips (6 oz)
4 sugar cones, coarsely crushed (about 1 1/4 cups)
1/2 cup dry-roasted peanuts, coarsely chopped

Steps:

  • Heat oven to 350°F. In large microwavable bowl, microwave 1 cup chocolate chunks uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth. Add butter; using spoon, beat until blended. Add egg; beat until combined. Add cookie mix; stir until soft dough forms. Stir in remaining 1 cup chocolate chunks and the vanilla baking chips. Gently stir in crushed cones just until combined.
  • Onto ungreased cookie sheets, drop dough by 2 tablespoonfuls per cookie; flatten tops slightly. Sprinkle with peanuts, pressing lightly into dough. Bake 8 to 10 minutes or until puffed and dry on tops (centers will be very soft). Cool 3 minutes; remove from cookie sheets to cooling racks. Cool completely before storing in airtight container.
