- Preheat oven to 350 degrees. In a medium bowl, whisk together flour, cocoa, baking powder, and 1/4 teaspoon salt. Set aside.
- Using an electric mixer, beat butter and sugar until light and fluffy. Beat in egg and vanilla. With mixer on low, gradually add flour mixture; mix just until combined.
- Form balls of dough (each equal to 1 teaspoon), and place on 2 baking sheets, about 2 inches apart. Dip the bottom of a glass in water, and flatten balls into 1 1/2-inch rounds (about 1/4 inch thick). Bake until slightly firm to the touch, 8 to 10 minutes, rotating sheets halfway through. Immediately transfer cookies to a wire rack to cool completely.
- Make chocolate coating: Place chocolate, peppermint extract, and remaining 1/8 teaspoon salt in a large heatproof bowl set over (not in) a saucepan of simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove from heat.
- Line a baking sheet with parchment or waxed paper. Set each cookie across the tines of a fork, dunk in chocolate, then tap underside of fork on side of the bowl to allow excess chocolate to drip off. Place cookies on prepared baking sheet, and decorate with sprinkles, if desired. Refrigerate until chocolate has hardened, about 30 minutes, and keep chilled until ready to serve.

- Heat oven to 400°F. Lightly spray 24 regular-size muffin cups with cooking spray.
- Remove pie crusts from pouches; unroll on work surface. Using 2 1/2- to 3-inch round cookie cutter, cut out 12 rounds from each crust. Fold each round in half, gently pinching middle to seal. Press thumbs into each side and bring together to form fortune cookie shape. Place in muffin cups.
- Bake 10 to 15 minutes or until lightly golden. Remove from muffin cups to cooling racks; cool completely.
- Melt candy coating as directed on package. Place candy sprinkles in small bowl. Dip half of each fortune cookie into melted coating, then immediately dip in sprinkles. Place on sheet of waxed paper or cooking parchment paper; let stand until set.

- Make cake:
- Preheat oven to 350°F with rack in middle. Butter bottom and side of pan, then line bottom with a round of parchment.
- Sift together flour, cocoa powder, baking soda, baking powder, and salt into a bowl.
- Beat together butter and brown sugar in a large bowl with an electric mixer at medium-high speed until light and fluffy, 3 to 5 minutes. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Reduce speed to medium-low and add flour mixture and milk alternately in batches, beginning and ending with flour mixture (batter will appear curdled).
- Transfer batter to cake pan and smooth top. Bake until cake begins to pull away from side of pan and a wooden pick inserted into center comes out clean, 35 to 40 minutes. Cool cake in pan 5 minutes, then invert onto a rack and cool completely, about 1 hour.
- Make glaze while cake cools:
- Bring cream to a simmer in a small heavy saucepan over medium heat, then pour over chocolate in a bowl and let stand 1 minute. Gently whisk until smooth, then stir in corn syrup. Cool completely, gently stirring occasionally, about 30 minutes (glaze will thicken).
- Carefully peel off parchment from cake. Pour glaze onto center of cake and spread to edges with a spatula. Decorate with sprinkles and/or nonpareils.
CHOCOLATE SPRINKLES

- Whisk together the confectioners' sugar, cocoa powder, vanilla, salt, instant coffee if using and 3 tablespoons water in a bowl until homogenized and there are no lumps.
- Transfer the batter to a pastry bag fitted with the number 2 or number 3 tip, a paper cone or a plastic bag with the tip snipped off. Arrange 2 sheets of parchment paper on a clean surface and draw a series of long, thin parallel lines with the batter. Let dry at room temperature for 24 hours.
- Cut the lines into sprinkles using a chef's knife. Sprinkles keep in a well-sealed container at room temperature for several months. Use them on top of ice cream, over truffles or even... on bread!

- 1. In the bowl of an electric mixer fitted with the flat beater, beat the butter and salt of medium speed until light and fluffy, 2 minutes. Reduce the speed to low, gradually add the confectioners sugar and beat until encorporated. Add the vanilla and beat until smooth and creamy. stop the mixer and scrape down the sides of the bowl. CHOCOLATE SPRINKLES ICE CREAM SANDWICHES RECIPE BY TASTY

- Using a serrated knife, cut the pint of ice cream crosswise into 3 equal discs.
- Lay out 3 chocolate cookies and place a pint slice on top of each. Place another chocolate cookie on top of each sandwich. Remove the ice cream packaging.
- Freeze for 30 minutes.
- Pour the sprinkles into a shallow dish.
- Remove the ice cream sandwiches from the freezer and roll the sides in the sprinkles, completely covering the ice cream.
- Freeze for 30 minutes more before serving.

CHOCOLATE CHIP COOKIES WITH SPRINKLES
A friend of a friend gave me this recipe, so I am not sure where she got it from. This recipe makes a lot of cookies, and it is great when you are baking for a huge crowd. This cookie does not spread much making it thick and has a mouth load of chocolate (from the sprinkles and chocolate chips). I have left out the sprinkles and they still taste just as good. Since the batter comes out rather thick it is advisable to use a heavy duty stand mixer.

- Pre-heat oven to 350 degrees.
- In a large bowl, beat the butter and sugars. Add eggs, one at a time, beating well after each addition. Add vanilla.
- In a food processor place the oats and process until finely ground.
