1 (.25 ounce) package unflavored gelatin
1 tablespoon cold water
2 tablespoons boiling water
½ cup white sugar
¼ cup cocoa
1 (3.9 ounce) package instant chocolate pudding mix
2 cups heavy cream, chilled
1 teaspoon vanilla extract
1 teaspoon rum flavored extract
1 (9 inch) chocolate cookie crumb crust
1 cup heavy cream, chilled
2 tablespoons confectioners' sugar
2 teaspoons rum flavored extract

Steps:

  • In a small bowl, sprinkle gelatin onto cold water; let stand 1 minute to soften. Stir in boiling water until gelatin is completely dissolved. It must be in liquid form when you add it to the pie filling. If it stiffens up, microwave for about 10 to 15 seconds, and then stir until lump free.
  • In a large bowl, combine sugar, cocoa, and pudding mix. Stir in 2 cups cream, vanilla, and 1 teaspoon rum extract. Beat for 30 seconds with an electric mixer on low, then beat on high until stiff peaks form. Gradually mix in gelatin mixture until blended. Pour filling into pie crust.
  • In a small, chilled bowl, beat 1 cup cream with confectioners' sugar and 2 teaspoons rum extract until stiff peaks form. Spread over chocolate filling. Chill at least 2 hours before slicing and serving.

2 tablespoons (1/4 stick) unsalted butter
1/3 cup sugar
3 tablespoons dark rum
1 tablespoon water
1/4 teaspoon (generous) ground cinnamon
1 3/4 pounds ripe small bananas (about 5), peeled, left whole
6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1/4 cup whipping cream
2 tablespoons light corn syrup
1 17 1/4-ounce package frozen puff pastry (2 sheets), thawed
1 egg, beaten to blend (glaze)

Steps:

  • Melt butter in heavy large skillet over medium heat. Add sugar, 1 tablespoon rum, water and cinnamon and stir until syrupy. Add bananas and cook 2 minutes, turning occasionally and basting with syrup. Using slotted spoon, transfer bananas to plate. Boil syrup until reduced to 2 tablespoons, about 2 minutes. Pour syrup over bananas; let cool.
  • Combine chocolate, cream and corn syrup in heavy small saucepan; stir over low heat until chocolate melts and mixture is smooth. Remove from heat. Transfer 2 tablespoons chocolate mixture to small bowl (Mixture will be thick). Add 2 tablespoons rum to mixture in saucepan; stir sauce to blend.
  • Position rack in center of oven; preheat to 400°F. Place 1 pastry sheet on floured work surface. Set 9-inch-diameter tart pan upside down on pastry. Using knife, cut pastry into 9-inch-diameter scalloped round. Repeat with remaining pastry sheet. Place 1 pastry round on ungreased heavy large baking sheet; arrange 3 whole bananas on pastry, forming circle and leaving 1/2-inch pastry border. Fill in center with remaining bananas, cutting to fit. Pour any syrup from bananas and reserved 2 tablespoons chocolate mixture over bananas. Brush pastry edges with beaten egg. Top with second pastry round. Press edges to seal. Brush top with egg. Using small sharp knife, cut 8 vents in top of pastry to allow steam to escape. Freeze 10 minutes.
  • Bake until pastry is golden and puffed, about 30 minutes. Run long knife under pastry to loosen. Cool on baking sheet on rack until just lukewarm, about 1 1/2 hours. (Can be made 6 hours ahead. Let stand at room temperature.) Rewarm sauce over low heat. Serve pie with sauce.

GRAHAM CRACKER CRUST:
1 1/2 c graham cracker crumbs or zwiebach cookie crumbs
1/4 c confectioner's sugar
6 Tbsp melted butter
1 tsp cinnamon, ground
SOAK AND SET ASIDE:
1 Tbsp gelatine (knox)
1/4 c water
FOR MAKING CUSTARD:
SCALD:
2 c milk
SEPARATELY COMBINE:
1/2 c sugar
4 tsp cornstarch
SEPARATELY BEAT UNTIL LIGHT:
4 whole eggs
AFTER CUSTARD IS MADE, AND ONE CUP IS REMOVED, ADD:
1 1/2 squares of unsweetened chocolate
1/2 tsp vanilla
FOR TOP LAYER OF CUSTARD:
1 Tbsp rum extract
3 beaten egg whites
1/4 tsp salt
1/4 tsp cream of tartar
1/4 c sugar
GARNISH:
1 1/2 c whipped cream, sweetened
1/4 c shaved milk chocolate

Steps:

  • 1. GRAHAM CRACKER CRUST: Combine all 4 crust ingredients and press into 8 or 9 inch pie plate
  • 2. MAKE CUSTARD: Stir the scaled milk slowly into the beaten eggs then stir in the sugar mixture and cook in double boiler over hot water stirring occasionally for about 20 minutes or until custard coats the spoon
  • 3. REMOVE one cup of hot custard and set aside for the top layer
  • 4. To remaining hot custard still in the pan add 1 1/2 squares of dark baking chocolate (can use sweetened or milk chocolate if prefer) -- beat until well blended, then let cool
  • 5. Add 1/2 tsp vanilla and pour choc custard into the pie shell
  • 6. SECOND OR TOP LAYER OF CUSTARD: add dissolved gelatine to 1C of plain custard that was set aside before -- then add 1T of rum extract and mix well
  • 7. In a separate bowl, beat the egg whites until stiff, adding the salt, cream of tartar, and sugar, one teaspoon full at a time until all is incorporated.
  • 8. Fold the egg-white mixture into the custard-with-rum mixture and pour it on top of the chocolate layer and place in refrigerator to cool
  • 9. After the pie has set up, cover the top with whipped cream and shaved chocolate just before serving.

1 3/4 c all purpose flour
1/2 c light brown sugar, tightly packed
3/4 c butter, chilled and cubed
1/4 tsp salt
FILLING
1 c light brown sugar, tightly packed
4 large eggs, beaten
1 c light corn syrup
1/4 c butter, melted
3 Tbsp rum, spiced or dark
1 tsp vanilla extract
1/4 tsp salt
1 1/2 c chopped pecans
1 c chocolate chips, milk, semi-sweet or dark

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 13" x 9" baking pan.
  • 2. Crust Combine crust ingredients with a pastry blender (or two forks) until crumbly. Press into pan. Bake crust for 15 to 17 minutes or until lightly browned. Remove and allow to cool for 15 minutes.
  • 3. Filling Whisk brown sugar, eggs, corn syrup, rum, butter, vanilla extract and salt until well blended.
  • 4. Sprinkle pecans and chips evenly over the crust. Carefully pour sugar mixture over pecans and chocolate chips.
  • 5. Bake for 30 - 35 minutes or until edges are set and bars are golden brown. Center will still be "wiggly". Cool and cut into bars.

Unsalted butter for greasing the pan, plus 2 tablespoons melted
2 cups sifted all-purpose flour
1 cup plus 2 teaspoons sugar
1 teaspoon cinnamon
1/8 teaspoon allspice
3/4 cup shortening
6 tablespoons ice water, approximately
1 1/2 cups pecans
1 cup semisweet chocolate chips
3 eggs, lightly beaten
1 cup dark corn syrup
1 tablespoon vanilla extract
1 teaspoon minced lemon zest
1/8 teaspoon nutmeg
1 tablespoon rum or more, to taste
Whipped cream (optional)

Steps:

  • Grease a nine-inch pie pan.
  • In a mixing bowl, combine the flour, two teaspoons sugar, the cinnamon and allspice. Cut in the shortening until the mixture resembles coarse meal. Gradually sprinkle in the ice water while lightly kneading the dough by hand until it holds together. Gather into a ball, wrap in waxed paper and refrigerate for one hour.
  • Preheat the oven to 375 degrees. Roll out the dough to one-eighth-inch thickness. Line the prepared pan, trimming the extra dough at the top. Spread the pecans and chocolate chips on the bottom.
  • In a mixing bowl, combine the melted butter, remaining sugar, eggs, corn syrup, vanilla extract, lemon zest and nutmeg. Pour into the pan.
  • Bake for 15 minutes, lower the oven temperature to 350 degrees and bake for 30 minutes, or until the top begins to brown and the center is almost set. Remove, sprinkle with rum and cool. Serve at room temperature with some whipped cream, if desired.

30 chocolate cookies (Nabisco Famous Chocolate Wafers) or 10 chocolate graham crackers (Honey maid recommended)
5 tablespoons unsalted butter, melted
1 1/2 cups whole milk
1/2 cup heavy cream
1 vanilla bean, split in half lengthwise
6 large egg yolks
1/2 cup granulated sugar
1/8 teaspoon kosher salt
2 tablespoons cornstarch
2 cups sweetened flaked coconut, toasted divided
4 tablespoons unsalted butter
2 tablespoons coconut rum (Malibu Rum)
1 1/2 cups cold heavy cream
1 teaspoon pure vanilla extract
1/4 cup confectioners' sugar

Steps:

  • Heat the oven to 350°F and place a rack in the middle of the oven.
  • Place the chocolate wafers in the bowl of a food processor fitted with the metal blade and pulse until ground into evenly sized crumbs or place them in zip-top bag and pulverize them with a rolling pin or meat mallet until finely crushed. You should have about 1 1/2 cups of crumbs.
  • Place the crumbs in a medium mixing bowl. Drizzle in the melted butter and mix with a fork until the crumbs are evenly moistened (if using a food processor, drizzle the butter through the feed tube while pulsing).
  • Transfer the buttered crumbs to a 9-inch pie plate and use your fingertips or the back of a spoon to press the mixture evenly into the pie plate, spreading it up the sides but not over the rim.
  • Bake for 7 to 10 minutes or until the sides of the crust feel firm to the touch. Transfer to a wire rack to cool completely before filling.
  • Place the milk, cream and vanilla bean in a 4-quart saucepan. Heat over medium-high heat, stirring occasionally, until almost about to simmer (Do not let it boil). Remove from the heat and let the vanilla bean steep in the milk for 15 minutes.
  • Place the egg yolks, sugar, salt and cornstarch in a medium mixing bowl and beat with a whisk until well blended (1 minute).
  • Remove the vanilla bean from milk. Use a knife to scrape out as many seeds as possible and add them to the milk. Swirl the pod in the milk to remove any remaining seeds. Discard the pod or save for another use.
  • Add 1 1/2 cups toasted coconut and place the pot over medium-high heat. Bring to a simmer then remove from the heat.
  • Ladle out about 1/2 cup of the hot milk and whisk it into the egg mixture. Slowly pour the egg mixture into the pot of milk, whisking steadily to keep the eggs from curdling.
  • Place the pot over medium-high heat and bring the mixture to a boil, stirring constantly but not furiously. Reduce the heat to low and continue to cook while whisking constantly (make sure to get the sides and edges) until the mixture is very thick (2-3 minutes). Remove from the heat, add the butter and stir until melted then stir in the coconut rum.
  • Let the filling cool to lukewarm (about 15 minutes), then pour into the cooled pie shell. Place a piece of plastic wrap directly on the surface (to keep a skin from forming). Refrigerate the pie for at least 4 hours before serving.
  • Just before serving, make the whipped cream topping. Place the cream and vanilla in the bowl of a stand mixer fitted with the whisk attachment or, if using a whisk or hand-held mixer, put it in a deep mixing bowl.
  • Beat on medium speed until frothy. Sprinkle in the confectioners' sugar and beat on medium-high until stiff peaks form (when the whisk is lifted the cream will form a point that doesn't droop).
  • Mound the whipped cream in the center of the chilled pie. Use the back of a large spoon or an offset metal spatula to spread it out to the edge and give it a few decorative swirls. Sprinkle with remaining toasted coconut and serve.

1/4 cup firmly packed dark brown sugar

4 large eggs
1 1/2 tablespoons dark rum
2 cups well-chilled heavy cream
1 cup heavy cream
1 teaspoon icing sugar

  • Make crust: Combine well the pecans, butter, rum and brown sugar and press into bottom and up sides of 10 inch glass pie plate.
  • Freeze, covered.
  • Make filling: In top of double-boiler set over barely simmering water, melt chocolate.
  • Let cool for 30 minutes, or until completely cool and stir in coffee powder.
  • Beat together vanilla, eggs and rum; beat in chocolate mixture.
  • In another bowl, beat cream until it holds soft peaks.
  • Fold into chocolate mixture and pour into shell.

  • Whip cream and icing sugar and mound on pie.
  • Let pie stand 15-20 minutes and slice.
