3 ¼ cups crushed vanilla wafers
¾ cup confectioners' sugar
¼ cup unsweetened cocoa powder
1 ½ cups chopped walnuts
3 tablespoons light corn syrup
½ cup rum

Steps:

  • In a large bowl, stir together the crushed vanilla wafers, 3/4 cup confectioners' sugar, cocoa, and nuts. Blend in corn syrup and rum.
  • Shape into 1 inch balls, and roll in additional confectioners' sugar. Store in an airtight container for several days to develop the flavor. Roll again in confectioners' sugar before serving.

2 ½ cups crushed vanilla wafers
1 cup confectioners' sugar
2 tablespoons cocoa powder
1 cup chopped walnuts
3 tablespoons dark corn syrup
¼ cup rum

Steps:

  • In a medium sized bowl, mix together the vanilla wafers, cocoa and sugar. Stir in the chopped walnuts, corn syrup and rum. Mix until well blended.
  • Form dough into 2 inch balls and roll in confectioners' sugar. Store in covered tin.

1 1/2 cups finely chopped nuts
3/4 cup icing sugar (confectioners)
1/4 cup baking cocoa
1/2 cup light rum
3 tablespoons light corn syrup

Steps:

  • In a large bowl, combine the crushed wafers, chopped nuts, 3/4 cup icing sugar and the cocoa; add/mix in rum and corn syrup.
  • Shape the dough into 1-inch balls, then roll in the icing sugar.
  • Store rum balls in an airtight container for 2-3 days to develop the flavors.

I haven't made them myself yet so the number of balls this makes is an estimate. Unlike many rum ball recipes, this recipe contains no corn syrup. **Chill time not included in time to prepare**

1/2 cup butter
1/2 cup sifted icing sugar
3/4 cup semi-sweet chocolate chips
2 eggs, slightly beaten
1 pinch salt
4 tablespoons dark rum
1 3/4 cups vanilla wafer crumbs (about 40 small wafers)
ground nuts or coconut, for rolling

Steps:

  • Combine butter, icing sugar and chocolate chips in a microwavable bowl.
  • Microwave on low to melt - do not cook.
  • Stir in beaten eggs and salt until thick and smooth.
  • Add rum and crumbs then mix well.
  • Refrigerate until mixture is stiff enough to form balls (about 3 hours).
  • Roll balls in chocolate shots, ground nuts or coconut.
  • Chill.

This is moist, delicious rum ball recipe I received from a former co-worker. It is great to have at Christmas...or even anytime!

1 cup blanched ground almonds
1 cup sifted icing sugar
1 1/4 teaspoons instant coffee
3 ounces unsweetened chocolate squares (3)
5 tablespoons dark rum
1 tablespoon milk
1/2 cup dark chocolate (grated)
vermicelli or icing sugar, for coating

Steps:

  • Grate chocolate squares and almonds in food processor.
  • Place almonds in a large bowl and sift in the icing sugar and coffee. Add chocolate.
  • Sprinkle with 3 tablespoons of the rum and the milk.
  • Mix until the mixture is evenly moistened and is a uniform dark brown.
  • Chill for 10 minutes.
  • Shape into ball and knead several times.
  • Roll dough into 3/4" balls.
  • Dip each ball in remaining rum. Shake off excess moisture and roll in vermicelli or icing sugar.
  • Place on waxed paper to dry for 1 hours.
  • Cooking time is chilling and drying time.

1 teaspoon instant coffee granules
1/4 cup dark rum, warmed
4 ounces cream cheese, softened
1 cup confectioners' sugar
1 cup ground almonds
3 ounces unsweetened chocolate, melted
8 Oreo cookies, finely crushed

Steps:

  • Dissolve coffee granules in warm rum. Beat cream cheese, confectioners' sugar, almonds and rum mixture until blended. Stir in melted chocolate. Refrigerate until firm enough to roll, about 1 hour., Shape mixture into 1-in. balls; roll in crushed cookies. Store in an airtight container in the refrigerator, separating layers with waxed paper.

This has been an old-time family favorite recipe for many years. I have made these with not only regular rum but coconut flavored rum, bourbon, brandy, amaretto, kahlua...etc. I generally use walnuts but pecans, macadamia or almonds are also good. These are best if they sit a few days in a tightly covered container before eating. They also freeze well. Cooling time is not included in the PREP/COOKING time. Please allow 30 minutes to cool before rolling cookies into balls. FOR ADULTS ONLY, so please make sure you keep these away from the little ones.

1 cup semi-sweet chocolate chips
3 tablespoons corn syrup
1/2 cup rum
11 ounces vanilla wafers, crushed
1/2 cup powdered sugar
2 cups nuts, finely chopped

Steps:

  • Melt chocolate over very low heat or in a double boiler. Add corn syrup and alcohol (REMOVE FROM HEAT SOURCE AND BE VERY CAREFUL WITH ALCOHOL AND AN OPEN FLAME).
  • In a large bowl, combine crushed wafers, powdered sugar and one cup of the chopped nuts. Add chocolate mixture to the crumb mixture and stir well.
  • Let stand 30 minutes and then stir again. Shape into 1" balls then roll into remaining nuts. Store in a very tightly sealed container in the refrigerator for at least 3 days for best flavor.
