1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup packed light-brown sugar
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups rolled oats
1 1/2 cups raisins
1 package (12 ounces) semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, whisk together flour, baking soda, and salt; set aside. With an electric mixer, cream butter andsugars until light and fluffy.
  • Add eggs and vanilla; beat until combined, scraping down sides of bowl as needed. Add flour mixture;beat until just combined. Add oats, raisins, and chocolate chips; beat until just combined.
  • Drop 32 heaping tablespoons of batter, about 1 1/2 inches apart, onto baking sheets. Bake, rotating sheets halfway through, until cookies have spread and are golden brown and soft to the touch, 10 to 12 minutes. Cool 5 minutes on sheets; transferto a wire rack to cool completely.

Steps:

  • Place raisins in a bowl. Cover with boiling water; let stand for 5 minutes. Drain well and set aside. , In a large bowl, cream butter and sugars until light and fluffy. Beat in mayonnaise and vanilla. Combine the flour, salt and baking soda; gradually add to the creamed mixture and mix well. Stir in the chocolate chips, walnuts and raisins. , Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 9-11 minutes or until golden brown. This is my improved version of the "Best-Ever Chocolate Chip Cookies" recipe card I received in the mail years ago. Now they really are the best! *I first made these when I was younger and loved very sweet cookies...now I agree with some reviews, they are too sweet so am adjusting the sugar.

1 1/2 cups all-purpose flour (can use part or all whole-wheat)
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 cup margarine (now I use coconut oil) or 1 cup Crisco, softened (now I use coconut oil)
1/2 cup light brown sugar, firmly packed
1/2-1 cup granulated sugar (depending on how sweet you would like them)
1 large egg
1 1/2 teaspoons vanilla extract
1 cup ground walnuts (can grind in blender)
1 cup old fashioned oats
1 cup semi-sweet chocolate chips
1 cup raisins

Steps:

  • In a small bowl mix flour, baking soda and cinnamon.
  • In a large mixing bowl beat butter and sugars until light and fluffy. Beat in egg and vanilla.
  • At a low speed, beat in flour mixture until blended.
  • Stir in ground walnuts, oats, chocolate chips and raisins.
  • Cover with plastic wrap and chill for 1 hour.
  • Preheat oven to 350.
  • Grease 2 baking sheets.
  • Shape dough into 1-inch balls. Place balls 2 inches apart on prepared baking sheets. Flatten each cookie slightly (The bottom of a mug works).
  • Bake cookies until lightly browned around the edges, 10 to 12 minutes.
  • Transfer to flattened brown paper bags or wire racks to cool.
  • This dough also freezes well. Freeze dough balls on a cookie sheet and then put them in a ziploc bag in the freezer until ready to bake!

1 cup rolled oats
1/3 cup butter or 1/3 cup margarine
1/3 cup shortening
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 cup all-purpose flour
1 cup rolled oats
1 cup coarsely chopped walnuts
1 cup chocolate-covered raisins (2 boxes of the movie size boxes)

Steps:

  • For oat flour: Put 1 cup rolled oats in food processor or blender. Cover and blend or process until oats turn into a powder. Transfer powder to a small bowl. If using a blender do 1/2 cup of the oats at a time. Set aside.
  • Beat butter and shortening in a large mixing bowl with on electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar and baking soda; beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla. Beat in oat flour and all purpose flour. Stir in the 1 cup rolled oats, walnuts and chocolate-covered raisins.

I found this cookie recipe in the local newspaper courtsey of Sarah Wade. It sounded wonderful, however she didn't include raisins in this oatmeal cookie recipe (which to me is wrong on so many levels). I also felt that 1 tablespoon of baking soda had to be a mistake, so I made a few adjustments and a major compromise with my wife (about the raisins) to create my version of her "Almost Everything Cookies" We will add 1 cup chopped walnuts or pecans to the recipe occasionally.

1/2 cup all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
6 cups rolled oats
6 tablespoons unsalted butter (3/4 stick)
2 ounces cream cheese (1/4 package, we use 1/3 less fat Philly)
1 1/2 cups light brown sugar (firmly packed)
1 1/2 cups granulated sugar
5 large eggs
1/4 teaspoon light corn syrup

2 cups creamy peanut butter (we use reduced-fat)

1 cup milk chocolate chips

Steps:

  • .Mix flour, baking soda, baking powder together in a large bowl, then add the oatmeal until evenly mixed (@ 2 cups at a time). Set aside.
  • Cream the butter until smooth and pale, then slowly add the granulated sugar, then the brown sugar until the sugars and butter are evenly mixed. If you are using a stand mixer, scrape down the sides and add the eggs 1 at a time until smooth. (We use a large cookie spoon to mix with) Add the corn syrup and vanilla and mix well.
  • Add the oat mixture @ 1/3 at a time mixing on low speed until fully mixed (it gets very stiff when doing by hand).
  • Fold in both kinds of chocolate chips ( nuts if you are using them) and then split dough in half and add the raisins to one half of the batch. Cover both batches with plastic wrap and refrigerate 3 hours minimum (overnight is best)).
  • Preheat oven to 375 degrees and place rounded tablespoon sized ball on a parchment lined cookie sheet. Bake for about 12 minutes and let stand for about five minutes on cookie sheet before placing cookies on a wire rack to cool.

1 set of measuring cups
1 set of measuring spoons
1 sifter
1 wooden spoon
2 teaspoons
1 cookie sheet
1 spatula
2 potholders
1 wire cooling rack
aluminum foil
1 stick of butter, plus 1 or 2 teaspoons for greasing the cookie sheet
1 cup sugar
2 eggs
1 cups all-purpose flour
2/3 cup cocoa
2 teaspoons baking powder
1/2 teaspoon salt
1 cup raisins

Steps:

  • Take a stick of butter out of the refrigerator, open the wrapping and leave the butter on the kitchen counter until it gets pretty soft - allow at least 30 minutes.
  • When the butter is soft, wash your hands and put on an apron.
  • Put the butter in the bowl, and beat it with the wooden spoon until it gets creamy. Beat in the sugar until it is thoroughly mixed.
  • Crack open both eggs, and put them into the bowl that has the butter and sugar in it. Be careful not to get any bits of eggshell in the bowl. Beat the eggs with the butter and sugar until they are all mixed in.
  • Take the sifter, and put these ingredients into it: the flour, the cocoa, the baking powder and the salt.
  • Sift them into the bowl with the butter, sugar and eggs. Slowly mix everything together with the wooden spoon until it becomes brown and gooey. Then mix in the raisins.
  • Have an adult turn on the oven for you and set it to 350 degrees.
  • Wrap your cookie sheet with a piece of aluminum foil, keeping it nice and smooth. Smear the remaining 1 or 2 teaspoons butter all over the foil. Scoop up a teaspoon of the batter. Now, take the second teaspoon and use it to push the batter off onto the cookie sheet. Keep doing this until you have formed about 18 cookies, leaving about 2 inches of space space between the cookies. Don't worry that you have batter left over. You can make another batch of cookies.
  • Have an adult help you put the cookie sheet into the oven. Let the cookies bake for 15 minutes - the tops will no longer look shiny. Have an adult take the cookies out of the oven and help you slide them off the cookie sheet with the spatula and put them on the wire rack. Let them cool while you make another batch of the cookies with the rest of the batter.

1/4 c shortening
1 1/2 large eggs
2 c original oats (not quick cooking)
2 c all purpose flour
1 tsp salt
1 c semi-sweet chocolate chips
1 1/2 tsp vanilla extract
1 tsp baking soda
1 tsp each of cinnamon, nutmeg and cardamom
pinch sea salt (optional for topping)

Steps:

  • 1. Begin by combing the raisins and water in a saucepan and bring to a boil. Reduce the heat and simmer on low for 15 minutes then remove and allow to cool completely. Once cool, pre-heat your oven to 375 degrees.
  • 2. Combine the raisin mixture with the butter, sugar, eggs, oatmeal, flour and chocolate chips and salt. Mix well with a wooden spoon and/or your hands. Add the remaining ingredients until well blended and drop by tablespoons onto parchment or non stick pan, sprinkle some sea salt on cookie tops if desired. Bake for 10 - 12 minutes. Let the cookies rest on baking sheet just long enough to not fall apart 1 - 2 minutes. Remove to wire rack or brown paper bag to cool.
  • 3. *Note: to use 1 1/2 eggs, use one whole egg, then crack another, beat it lightly then use 1/2 (I used a kitchen scale)

1/2 lb Smart Balance butter spread, for baking
1 cup brown sugar
1/2 cup Splenda Sugar Blend for Baking (replaces 1 cup sugar if you want)
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups quick oatmeal (or old fashioned)
1/2 cup raisins
3 ounces chocolate chips

Steps:

  • Preheat oven to 350.
  • Cream sugars and smart balance together till creamy.
  • Add eggs and vanilla beat in well.
  • Combine flour, baking soda, cinnamon, salt and mix well into the cream mixture.
  • Stir in oats,chips and raisins.
  • Place by rounded tablespoonfuls on to an ungreased cookie sheet pans.
  • Bake 9-12 minutes.
  • Cool on cookie sheet for a minute then remove and place on wire rack and cool.

One of Santa's favorites, this cookie is dressed for the season with honey, cinnamon, and brandied golden raisins. You can substitute white chocolate with semisweet or bittersweet.

1 cup golden raisins, coarsely chopped
1/2 cup brandy
1 1/2 cups all-purpose flour
3 tablespoons Dutch-process cocoa powder
1 1/2 teaspoons ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon coarse salt
4 ounces (1 stick) unsalted butter, softened
1/2 cup packed light-brown sugar
1/2 cup honey
6 ounces white chocolate, cut into 1/2-inch pieces
1/2 cup fine sanding or granulated sugar

Steps:

  • Bring raisins and brandy to a boil in a small saucepan. Remove from heat, and let stand for 20 minutes. Meanwhile, whisk together flour, cocoa, 1 teaspoon cinnamon, the baking soda, and salt.
  • Preheat oven to 325 degrees. Beat butter and brown sugar with a mixer on medium speed until pale and fluffy, about 2 minutes. Add honey, and beat until creamy. Reduce speed to low, add flour mixture, and beat until combined. Drain raisins; discard liquid. Add raisins and chocolate to dough. Mix to combine.
  • Whisk together sanding sugar and remaining 1/2 teaspoon cinnamon. Scoop 2 tablespoons dough. Roll in cinnamon-sugar mixture, and shape into a ball. Roll in cinnamon-sugar mixture again to coat completely. Repeat with remaining dough. Transfer to parchment-lined baking sheets, spacing about 2 inches apart, as you work. Bake until just set and starting to crack, 18 to 20 minutes. Let cool on sheets.

1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon

1/2 cup plus 2 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon orange extract
1 cup old-fashioned oats
8 oz white chocolate baking squares, chopped (about 1 1/2 cups)
1/2 cup raisins or golden raisins

Steps:

  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, baking soda, cinnamon and salt. In large bowl, beat butter and both sugars with electric mixer on medium speed until light and fluffy. Beat in egg and orange extract just until combined. On low speed, gradually add flour mixture and oats; beat until blended. Stir in white chocolate and raisins.
  • Onto cookie sheets, drop dough by heaping tablespoonfuls 3 inches apart. Bake 13 to 15 minutes or until lightly browned. Cool 5 minutes; remove from cookie sheets to cooling racks.

2 cups raisins -- softened in hot water; drained
1 cup margarine -- softened
3/4 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
1 teaspoon water
2 each eggs
2-1/4 cups flour -- sifted
1 teaspoon baking soda
1/2 teaspoon salt
12 ounces semisweet chocolate chips

Steps:

  • Soak raisins for 20 minutes in hot water; drain well. Preheat oven to 375*F. Beat margarine, sugars, vanilla, water and eggs in large bowl with electric mixer until creamy and thoroughly blended. By hand, stir in flour, baking soda, and salt until well mixed. Stir in raisins and chocolate chips. Spoon dough by teaspoonful onto greased cookie sheets. Allow 1-1/2 to 2 inches between cookies for spreading. Bake for 8 minutes or until cookies are nicely browned, depending on how crisp or well done you like them
