This world's best chocolate oatmeal cake recipe is from my coworker's grandma. Made with chocolate chips, cocoa, and oatmeal, topped with fudge frosting.

1 cup brown sugar
1 cup white sugar
1/2 cup butter, melted
2 eggs, lightly beaten with fork
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons unsweetened cocoa powder
1 cup quick cooking oats*
1 3/4 cups boiling water
1 12 oz bag chocolate chips, divided (go for the Ghirardelli*)
6 tablespoons butter
6 tablespoons milk
1 1/2 cups sugar
1/2-3/4 cup chocolate chips (Ghirardelli again, please)
1/2-3/4 cup mini marshmallows*

Steps:

  • Preheat oven to 350. With an electric mixer, cream the butter and sugars. Add the eggs and mix well.
  • Add flour, soda, salt and cocoa and mix until just incorporated. The batter will be very thick.
  • Add water to oatmeal and let stand for a few minutes. Once oats are soft, add oats/water mixture to the batter and mix well. Stir in half of the bag of chocolate chips (6 ounces).
  • Pour into a greased or buttered rectangular 9×13 cake pan. Sprinkle the top of the cake with the rest of the bag of chocolate chips (6 ounces).
  • Bake at 350 for 30-40 minutes or until the surface springs back lightly when touched and your house smells amazing. Do not overbake. Let cool completely.
  • For the frosting, melt the butter, sugar, and milk in a large saucepan over medium-low heat. Bring to a boil and boil for 30 seconds.
  • Reduce heat to low and add chocolate chips and marshmallows. Stir or whisk until frosting is smooth. Pour immediately over the cooled cake. The frosting crystallizes almost immediately as it cools so it's important to get it on the cake while it's still piping hot. Allow the frosted cake to cool for 5 minutes before serving. Or... not.

1 cup quick-cooking oats
1 cup semisweet chocolate chips
1/2 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
COFFEE FROSTING:
2 teaspoons instant coffee granules
1/4 cup half-and-half cream, warmed
1/2 cup butter, softened
1 teaspoon vanilla extract
1/8 teaspoon salt
4 cups confectioners' sugar

Steps:

  • In a large bowl, combine water and oats. Sprinkle with chocolate chips (do not stir); let stand for 20 minutes. , In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in oat mixture. Combine flour, baking soda and salt; add to the creamed mixture and mix well. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, dissolve coffee granules in cream; set aside. In a large bowl, beat butter until smooth. Beat in vanilla and salt. Gradually beat in confectioners' sugar until smooth. Beat in enough of the coffee mixture to achieve spreading consistency. Frost cake.

TOPPING:
2/3 cup packed brown sugar
1/2 cup plus 1 tablespoon butter, melted
1-1/2 cups sweetened shredded coconut
3/4 cup chopped walnuts
6 tablespoons half-and-half cream
1-1/2 teaspoons vanilla extract

Steps:

  • In a large bowl, combine the oats and boiling water. Let stand for 15 minutes or until cooled. , In another large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the oat mixture; mix well. Combine the flour, cocoa, baking soda and salt; add to creamed mixture and mix well., Transfer to a greased 13x9-in. baking pan. 2 cups boiling water
1 1/2 cups quick-cooking oats (uncooked)
1 cup brown sugar
1/2 cup white sugar
1 1/2 sticks butter or margarine or 3/4 cup or 12 tablespoons (softened)
3 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons 100% pure cocoa
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1 1/2 cups semi-sweet chocolate chips
1 cup pecan halves (Could use walnuts)

Steps:

  • Place oats in a small bowl and cover with boiling water. Set aside for 10 minutes. In a mixing bowl using a mixer cream together brown sugar, white sugar, butter, eggs and vanilla extract. Whisk together the flour, salt, cocoa, baking soda and cinnamon.
  • Add the flour to the creamed mixture along with the oats. Mix well with mixer. Fold in 1 cup of the chocolate chips and pour batter into a sprayed 9 x 13 baking dish.
  • Sprinkle remaining chocolate chips on top of the batter along with the nuts. Bake in preheated 350 degree oven 35-45 minutes checking for doneness as ovens vary. This cake does not need frosting. 8-10 Servings

½ cup butter
1 cup boiling water
1 ½ cups packed brown sugar
2 eggs, beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda

4 tablespoons cocoa

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch pan.
  • In a large bowl, mix together the rolled oats and butter. Mix in boiling water. Set aside to cool.
  • Beat together the brown sugar, eggs and vanilla; add to cooled oat mixture and mix well.
  • Sift together the flour, baking soda, baking powder, salt and cocoa. Add to wet ingredients and mix well. Spread into the prepared pan.

1 1/2 c boiling water
1 c quick cooking oats
1 1/4 c semi sweet chocolate chips
1/2 c softened, butter
3/4 c each ~ sugar & firm packed brown sugar
2 eggs
1 1/2 c flour
1 tsp each ~ baking soda & salt
FROSTING
1/2 c softened, butter
1 tsp vanilla extract or kahlua
1/8 tsp salt
4 c confectioners' sugar
1/4 c water, heated
2 tsp instant coffee
chocolate syrup - optional

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a medium bowl, add oats and chocolate chips. Pour the boiling water over oats and let set for 20 minutes. Don't stir.
  • 2. In a large bowl, cream butter and sugars until fluffy. Add one egg at a time, beating well after each addition.
  • 3. Beat in the oatmeal mixture. Combine flour, baking soda and salt. Beat the flour mixture into the oatmeal mixture until well blended.
  • 4. Spread evenly into prepared baking dish.
  • 5. Bake for 30 - 35 minutes or until pick comes out clean. ( mine took 30 minutes ) Cool on rack. Make frosting while cake is cooling.
  • 6. Frosting: Dissolve coffee into warm milk and set aside. In a medium mixing bowl, beat butter until creamy. Beat in vanilla and salt. Gradually beat in confectioners' sugar until smooth. Beat in enough of the coffee mixture to achieve spreading consistency.
  • 7. I drizzle with Hershey's syrup which complimented the frosting wonderfully!
  • 8. This cake is awesome!

  • Set oven control to broil. In medium bowl, beat 2/3 cup brown sugar and 1/2 cup butter with electric mixer on medium speed until creamy. Add whipping cream; beat on medium speed until smooth. Stir in coconut, pecans and chocolate chips. Spread topping on cake. Broil with top of pan about 6 inches from heat 1 minute or just until bubbly and light golden brown. Cool completely in pan on cooling rack, about 2 hours.
