1 3/4 cups all-purpose flour
1 3/4 cups sugar
3/4 cups high-fat cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, room temperature
1 1/2 teaspoon vanilla extract
1/2 cup freshly brewed strong, hot, coffee
1/2 cup hot water
Chocolate Fudge Cookie Bar, recipe follows
Marshmallow Meringue Frosting, recipe follows
2 1/2 cups chocolate sandwich wafer cookies, finely ground
6 tablespoons unsalted butter, melted
1/8 teaspoon salt
2 cups semisweet chocolate chips
1/2 (14-ounce) can condensed milk
1 3/4 cups sugar
1/4 cup water
3 large egg whites
1/4 teaspoon cream of tartar
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Line cupcake pans with cupcake liners.
  • Sift together the flour, sugar, cocoa, baking soda, baking powder, and salt. Set aside. In a large bowl, combine the buttermilk, oil, eggs, and vanilla. Slowly add the wet ingredients to the dry. Slowly stir in the coffee and water.
  • Fill the cupcake pans about two-thirds full. Place a piece of Chocolate Fudge Cookie Bar in each cupcake. Bake until a toothpick inserted into the center of the cakes comes out clean, 9 to 11 minutes. Cool completely, and then frost with Marshmallow Meringue Frosting and enjoy!
  • Preheat the oven to 350 degrees F.
  • Combine the cookie crumbs and salt with the melted butter. Press into the bottom of a greased 13 by 9-inch pan. Bake for 8 minutes and let cool. Melt the chocolate chips and condensed milk together until completely melted and combined. Pour over the cookie crust and let cool.
  • Beat the sugar, water, egg whites, and cream of tartar over a double boiler until stiff peaks form, 10 to 12 minutes. Remove from the heat and stir in the vanilla. Continue beating until the frosting is thick, about 3 minutes.

2/3 cup evaporated milk
1/2 lb butter
12 ounces chocolate chips
1 (7 1/2 ounce) can marshmallow cream
1 teaspoon vanilla extract
1 cup chopped nuts (optional)

Steps:

  • Combine sugar, evaporated milk, and butter in medium sauce pan.
  • cook to soft ball stage Once it reaches the soft ball stage, take off heat and add chocolate morsels, marshmallow cream, vanilla, and nuts (I leave out the nuts) Stir until it is all combined well and melted.
  • Pour into a aluminum foil lined 9x13" dish.
  • Let cool When cooled, cut& don't forget to peel off the foil.

1/2 cup butter
1 jar (7 ounces) marshmallow creme
1-2/3 cups white chocolate chips

Steps:

  • In a heavy saucepan, bring sugar, milk and butter to a boil over low heat, stirring constantly. Cook until mixture reaches 234° (soft-ball stage) on a candy thermometer. , Remove from the heat; stir in marshmallow creme, chocolate chips and nuts until marshmallow and chocolate are melted. Spread in a greased 13-in. x 9-in. pan. Cool before cutting.

1 cup granulated sugar
1 cup undiluted evaporated milk
1/2 cup butter or 1/2 cup margarine
1 (7 ounce) jar marshmallow creme (approx. 1 3/4 cups)
1 teaspoon vanilla extract
1 (12 ounce) package semi-sweet chocolate chips (2 cups)
1 cup coarsely chopped nuts

Steps:

  • Combine sugars, evaporated milk and butter in a saucepan.
  • Cook over moderate heat, stirring frequently, until mixture comes to a boil.
  • Boil 15 minutes over moderate heat, stirring occasionally.

16 ounces dark chocolate, coarsely chopped
10 ounces sweetened condensed milk
1 tablespoon pure vanilla extract
1 teaspoon table salt
3 cups miniature marshmallows
2 cups chopped toasted walnuts
⅛ teaspoon Sea Salt, gray
¼ teaspoon turbinado sugar, or to taste

Steps:

  • Grease an 8-inch square pan with cooking spray and line with parchment paper.
  • Place chocolate in the top of a double boiler over simmering water. Stir constantly with a rubber spatula, scraping down the sides with a rubber spatula to avoid scorching, until chocolate melts, about 5 minutes.
  • Stir in condensed milk, vanilla extract, and salt; the chocolate may seize up temporarily. Continue stirring over medium to medium-high heat until mixture is smooth, about 2 minutes. Stir for 1 more minute, then remove from the heat.
  • Add marshmallows and walnuts. Stir with a wooden spoon until fully incorporated; the marshmallows will not melt. Transfer to the prepared pan. Cover with plastic wrap and flatten with your hands. Remove plastic wrap and sprinkle with sugar and sea salt.

6 oz semi - sweet chocolate chips
1 stick unsalted, butter
1/3 c evaporated milk
2 c confectioners' sugar
1 tsp vanilla
pinch salt
1 c mini marshmallows
1/2 c walnuts or pecans

Steps:

  • 1. In a small saucepan over medium heat, add chips, milk and butter. Stir and cook slowly until smooth.
  • 2. In a mixing bowl, add confectioners' sugar and once chocolate is melted, pour into confectioners' sugar - add vanilla and salt and mix until smooth.
  • 3. Fold in nuts and marshmallows and pour into an 8 x 8 inch greased dish. Leave cool for a couple hours to set up. Cut and enjoy!

Vegetable oil, for greasing pan
5 tablespoons unsalted butter
1 1/2 cups packed light brown sugar
1/2 cup evaporated milk
5 cups mini marshmallows
10 ounces milk chocolate, grated
2 1/2 ounces dark chocolate, at least 60-percent cocoa solids, grated

Steps:

  • Grease an 8-by-8-by-2-inch pan. Line with parchment paper, making sure it overlaps the sides so it is easy to take out the fudge once it has set.
  • Add the butter, brown sugar, milk and marshmallows to a medium pan over low heat to melt gently. Once the sugar has dissolved, turn up the heat and bring to a boil. Boil for 5 to 6 minutes. Take the pan off the heat and add the chocolate. Let it sit for 1 minute, then stir the mixture together until the chocolate has melted. Pour into the prepared pan and let cool for 2 to 3 hours.
  • When it is set, remove the fudge from the pan, cut into 25 squares and serve.

Steps:

  • Line a 9 inch square pan with foil and grease lightly.

3-1/2 c chocolate chips
1-1/2 pkg butter
2 c nuts (pecans)
TO BE COOKED
4-1/2 c sugar
1 can(s) evaporated milk
dash of salt
1 tsp vanilla

  • 1. In a large mixing bowl combine marshmallows, chocolate chips, nuts and butter (cut butter into cubes).
  • 2. In a sauce pan combine sugar & evaporated milk. Bring to a boil and boil for 7 minutes and add dash of salt and vanilla.
  • 3. Pour hot mixture over Step 1 ingredients and stir until mixed well. Continue to stir until cooled.

If I can't control my cravings then I just better not make them. Weight Watchers, or any diet, is about portion control and nothing is going to be low-fat or good for you if you eat too much of it.
