1 1/2 cups Gold Medal™ all-purpose flour
1 cup sugar
1/4 cup unsweetened baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 teaspoon white vinegar
1 teaspoon vanilla
1 cup chocolate fudge topping
1 1/2 quarts (6 cups) vanilla ice cream, slightly softened
2 cups malted milk ball candies, coarsely chopped
1 cup whipping (heavy) cream
1/4 cup chocolate fudge topping
Additional malted milk ball candies, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and side of springform pan, 9x3 or 10x2 3/4 inches, with shortening; lightly flour. In large bowl, mix flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla. Stir vigorously about 1 minute or until well blended. Immediately pour into pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center of cake comes out clean. Cool completely, about 1 hour.
  • Spread 1 cup fudge topping over cake; freeze about 1 hour or until topping is firm. In large bowl, mix ice cream and coarsely chopped candies; spread over cake. Freeze about 4 hours or until ice cream is firm.
  • In chilled medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form.
  • Remove side of pan; place cake on serving plate. Top with whipped cream. Melt 1/4 cup fudge topping; drizzle over whipped cream. Garnish with additional candies.

3/4 cup chocolate malted milk powder
1 cup water
1/2 cup vegetable oil
3 eggs
1 1/2 cups whipping cream
3/4 cup chocolate malted milk powder
1 teaspoon vanilla
1 cup chocolate-covered malted milk balls, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan.) Spray 13x9-pan with baking spray with flour.
  • In large bowl, stir together cake mix and 3/4 cup malted milk powder. Beat in water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour batter into pan.
  • Bake 38 to 43 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In medium bowl, beat cream, 3/4 cup malted milk powder and the vanilla on low speed until blended, then on high speed until stiff peaks form. Spread over cake. Place malted milk balls in small resealable freezer plastic bag; seal bag and crush with rolling pin or meat mallet. Just before serving, top with chopped malted milk balls. Store covered in refrigerator.

This is a to-die-for experience. If you like chocolate and ice cream and malt, you are going to be in dessert heaven. I got this from a Pillsbury cake box. I have been making it for many years, mostly from requests from family and friends. It's a great cake for birthdays and special occasions.

1 (18 ounce) package pillsbury plus dark chocolate cake mix
3/4 cup milk
1/3 cup oil
3 eggs
13 ounces evaporated milk
1 (6 ounce) package semi-sweet chocolate chips
1 teaspoon vanilla
2 cups powdered sugar
1/2 cup margarine or 1/2 cup butter
3/4 cup instant malted milk powder
1 quart chocolate ice cream, slightly softened

Steps:

  • Heat oven to 350 degrees.
  • Grease and flour 2 13X9 inch pans*.
  • In large bowl, combine all cake ingredients at low speed until moistened; beat 2 minute at highest speed.
  • Pour half of batter into each prepared pan.
  • Bake at 350 degrees for 14-17 minutes, or until cake springs back when touched lightly in center. DO NOT OVERBAKE.
  • Cool 15 min.; remove 1 cake from pan onto wire rack. Cool completely.
  • To prepare topping, in med-size heavy saucepan, combine powdered sugar, margarine, evaporated milk and chocolate chips.
  • Cook over med-low heat until mixture comes to a boil; stirring occasionally; cook 8 minute stirring constantly.
  • Remove from heat; stir in vanilla. Cool 1 hour without stirring.
  • Note: Time does not include freezing or cooling.
  • To assemble cake, in large bowl combine malted milk powder and ice cream; spread over cooled cake in pan. Place remaining cake layer over ice cream. Spread fudge topping over top. Cover; freeze. At serving time, thaw slightly, cut into squares. If desired, top each serving with whipped cream or topping and a cherry.
  • * Cake can be prepared with one 13X9 inch pan. Using half of batter, bake 1 layer; remove from pan. Clean pan; grease; grease and flour. Bake second layer using remaining half of batter. Cool layer in pan.

I added chopped bittersweet chocolate (I prefer a cocoa percentage around 65 percent or 70 percent) and iced the cake with frosting that features cocoa powder, melted chocolate and malted milk powder for loads of luscious flavor.

  • For chocolate-malt crumbs:
  • Mix Milk Crumbs and Ovaltine in small bowl. Place white chocolate in small microwave-safe bowl. Heat in microwave in 15-second intervals just until melted, stirring occasionally. Drizzle chocolate over Milk Crumb mixture; toss to coat.
  • For malt-fudge sauce:
  • Place first 4 ingredients in medium bowl; set aside. Combine cream, corn syrup, and sugar in heavy medium saucepan. Bring to boil, stirring until sugar dissolves. Pour cream mixture over chocolate mixture in bowl. Let stand 1 minute, then stir until smooth. Whisk until sauce is glossy, about 1 minute. DO AHEAD: Can be made 1 week ahead. Cool completely. Cover and chill. Rewarm just until pourable before using.
  • For cake:
  • Preheat oven to 350°F. Coat three 8-inch cake pans with nonstick spray. Line bottom of each pan with parchment round; coat parchment with nonstick spray. Place chocolate in small microwave-safe bowl. Melt in microwave in 15-second intervals just until melted, stirring occasionally. Set aside. Sift flour, cocoa powder, baking powder, and coarse salt into medium bowl. Combine butter, sugar, and corn syrup in large bowl of stand mixer fitted with paddle attachment; beat on medium-high speed until fluffy and pale, about 2 minutes. Scrape down sides of bowl. Add eggs; beat on low speed to incorporate, then increase speed to medium-high and beat until mixture is fluffy, about 2 minutes. Scrape down sides of bowl. Add melted chocolate. Beat until blended, about 1 minute. Add buttermilk, oil, and vanilla; beat on medium-high speed until pale brown, about 2 minutes. Add dry ingredients; beat on low speed just until blended, about 45 seconds. Divide batter among pans; smooth tops.
  • Bake cakes until tester inserted into center comes out clean, about 20 minutes. Cool completely in pans on racks.
  • Stir milk and Ovaltine in small bowl. Invert 1 cake from pan onto flat plate or tart pan bottom; peel off parchment. Place cake, top side down, in 8-inch springform pan.   • Make the cake: Preheat the oven to 350 degrees F. Butter two 9-inch round cake pans and line the bottoms with parchment paper, then butter the parchment. Dust the pans with flour and tap out any excess.
  • Whisk the flour, malted milk powder, cocoa powder, baking powder, baking soda and salt in a large bowl. Beat the butter and sugar in a separate large bowl with a mixer on medium-high speed until light and fluffy, about 6 minutes. Beat in the eggs, one at a time, then beat in the vanilla. CHESTNUT CAKE WITH CHOCOLATE GANACHE AND SINGLE-MALT SCOTCH SYRUP



Chestnut Cake With Chocolate Ganache And Single-Malt Scotch Syrup image

The combination of chestnuts, chocolate and single-malt Scotch is powerful, so you'll need to frost this with milk chocolate instead of the usual bittersweet. The milk chocolate ganache tempers the Scotch and mellows the chestnuts, and brings the whole dessert together harmoniously. The cake itself is almost a meringue. Use your best single-malt for this - a lesser one will make for a good but not great result.

1 cup confectioners' sugar, more for serving
1 cup almond flour (see note)
1/2 cup all-purpose flour
1/2 cup chestnut flour (see note)
8 large egg whites
Pinch cream of tartar
1 cup lightly packed light brown sugar, sifted
1/2 cup granulated sugar
1/4 cup aged single-malt Scotch whiskey
1 cup walnut halves
1 15-ounce jar chestnuts packed in syrup, drained (see note)
Milk chocolate ganache (see recipe)

Steps:

  • Preheat oven to 375 degrees. Grease and flour three 8-inch round cake pans, and line with parchment paper. Sift confectioners' sugar, almond flour, all-purpose flour and chestnut flour into a bowl.
  • In a dry bowl of a mixer fitted with whisk attachment, whip egg whites until foamy. Add cream of tartar and 1 tablespoon brown sugar, and beat until soft peaks form. Gradually add remaining brown sugar; whip until very stiff and glossy.
  • Gently fold sifted dry ingredients into meringue in three stages. Divide batter among pans, and smooth tops. Bake for 17 to 20 minutes, until tops are brown and spring back when lightly pressed. Transfer to a wire rack, and let cool.
  • Reduce oven temperature to 325 degrees. Line a rimmed baking sheet with parchment or a nonstick liner. In a small saucepan, combine granulated sugar with 1/2 cup water. Bring to a boil, stirring until sugar dissolves. Let cool.
  • Stir whiskey into syrup. Place walnuts in a bowl, and toss them with 1/4 cup syrup. Pour nuts out onto baking sheet in a single layer. Bake for 15 minutes, stirring every 5 minutes. Transfer to a wire rack to cool. Meanwhile, chop all but four of candied chestnuts, and set aside.
  • To assemble cake, cut a piece of cardboard into an 8-inch round or use removable bottom of a springform pan. Place a cake layer upside down on this base. Brush cake with a generous amount of whiskey syrup. Spread about 3/4 cup ganache on top, and sprinkle with half the chopped chestnuts. Lay another upside-down cake layer on top, and brush with more syrup. Spread on another layer of ganache, and sprinkle with remaining chopped chestnuts. Repeat with final layer of cake, more syrup and more ganache. Using a metal spatula, spread a thin layer of ganache onto sides of cake. Refrigerate for 1 hour. Spread another coat onto top and sides of cake, smoothing it well. Press candied walnut halves onto sides, and arrange candied chestnuts on top. Sprinkle with confectioners' sugar before serving.

FROSTING:
3 sticks (12 ounces) unsalted butter, at room temperature
1 1/2 cups powdered sugar
3/4 cup malted milk powder
1/2 cup whole milk, at room temperature

1 cup malted milk balls, coarsely chopped, for decoration

Steps:

  • CAKE: 1. Heat the oven to 325°F and arrange a rack in the middle. 2. Coat 2 (8-inch) cake pans with oil and flour, and tap out any excess flour. Set aside. 3. Sift together the malted milk powder, measured flour, cocoa powder, salt, and baking soda into a large bowl and set aside. 4. Combine the eggs, sugar, measured oil, and vanilla in an electric mixer's bowl and whisk until combined and smooth. 5. Add a third of the flour mixture to the egg mixture and whisk until just incorporated. 6. To this, add half of the milk and whisk until smooth. 7. Continue with the remaining flour mixture and milk, alternating between each and whisking until all of the ingredients are just incorporated and smooth. 8. 2 1/4 c all purpose flour
1 1/4 c sugar
3/4 c cocoa powder
1 1/2 tsp baking soda

3 large eggs

STRAWBERRY MALTED BUTTERCREAM FROSTING
1 c butter (softened)
2 16 oz packages powdered sugar
1/2 c malted milk powder
1 c fresh strawberries (finely chopped)

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour 3 (9-inch) cake pans.
  • 2. In the bowl of an electric mixture, combine flour, sugar, cocoa, baking soda, baking powder, and salt. In a small bowl, combine milk and malted milk powder, stirring to dissolve. Add milk mixture, oil, and eggs to flour mixture, beating at medium speed until smooth. Add sour cream and vanilla, beating just until combined. Pour batter evenly into prepared pans, and bake for 20 minutes, or until a toothpick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove cakes from pans and let cool completely on wire racks.
  • 3. While cakes are cooling prepare frosting. Beat butter at medium speed with an electric mixer until fluffy. Add powdered sugar and malted milk powder beat on low until smooth. Add strawberries, beating at low speed until creamy. (Add more sugar if frosting is too thin, or add strawberries if too thick.)

½ cup solid vegetable shortening (Crisco), at room temperature
2 cups sugar
1 T. vanilla extract
2 cups ice water
4 egg whites, at room temperature
Frosting and Garnish
10 ounces bittersweet chocolate, finely chopped
10 ounces milk chocolate, finely chopped
1 ¾ cups heavy cream
3T. light corn syrup
4 sticks (1 pound) unsalted butter, cut into 1-inch chunks and softened
Malted milk balls for garnish

Steps:

  • Cake 1. Preheat oven to 325°. Butter and flour three 8-inch cake pans and line bottoms with parchment paper. In a large bowl, whisk the flours with malt powder, baking powder, baking soda, salt and nutmeg. 2. In the bowl of a standing electric mixer fitted with a paddle, beat butter with shortening until creamy. Add sugar and vanilla and beat at medium speed until fluffy, about 3 minutes. Beat in dry ingredients in 3 batches at low speed, alternating with ice water, occasionally scraping down the side of the bowl. 3. In a clean bowl, beat egg whites at medium-high speed until soft peaks form. Fold egg whites into the batter. Divide batter between pans, spreading evenly, and bake the cakes for 40 to 45 minutes until a toothpick inserted into the center comes out clean. Let cakes cool in pans for 20 minutes, then invert onto a rack and let cool completely. Peel off parchment. Frosting 1. Place chocolate in a large bowl. In a small saucepan, bring cream to a boil, then remove from heat. Add corn syrup; immediately pour mixture over the chocolate. Let stand for 2 to 3 minutes, until the chocolate has melted, then whisk until smooth. Cool to room temperature. 2. Transfer mixture to the bowl of a standing electric mixer fitted with a wire whisk. Gradually beat in butter at medium speed, a few chunks at a time, and beat until thoroughly incorporated between additions. The frosting should be smooth and silky. Refrigerate frosting just until it is thick enough to hold its shape, 10 to 15 minutes. 3. Place one cake layer on a serving platter and spread 1 1/4 cups of frosting over the top in an even layer. Repeat to form 2 more layers. Spread a thin layer of frosting over the side of the cake and refrigerate briefly until firm. Frost sides with remaining frosting. Garnish cake with malted-milk balls and refrigerate briefly to firm up the frosting before serving.

  • Cover and refrigerate 3 hours or until frosting is thoroughly chilled.
  • Set bowl of frosting in a larger bowl of ice water. Beat with mixer on medium speed for 3 minutes or until fluffy and of spreading consistency. (The frosting will turn light brown with beating.).
  • Assembly:.
  • Spread cup of frosting on two of the layers and stack. Add top layer; frost the top and sides reserving some frosting for the piping. Use this to decorate cake. Decorate the cake with whole, halved, or coarsely chopped malted milk balls.

CHOCOLATE MALT LAYER CAKE

1 recipe Chocolate Cake (recipe follows)
1 recipe Ovaltine Soak (recipe follows)
1 recipe Malt Fudge Sauce (page 137), warm
1/2 recipe Malted Milk Crumb (page 76)
1 recipe Charred Marshmallows (recipe follows)
1 (6-inch) cake ring
2 strips acetate, each 3 inches wide and 20 inches long

Steps:

  • Put a piece of parchment or a Silpat on the counter. Invert the cake onto it and peel off the parchment or Silpat from the bottom of the cake. Use the cake ring to stamp out 2 circles from the cake. These are your top 2 cake layers. The remaining cake "scrap" will come together to make the bottom layer of the cake.
  • Clean the cake ring and place it in the center of a sheet pan lined with clean parchment or a Silpat. Use 1 strip of acetate to line the inside of the cake ring.
  • Put the cake scraps inside the ring and use the back of your hand to tamp the scraps together into a flat even layer.
  • Dunk a pastry brush in the Ovaltine soak and give the layer of cake a good, healthy bath of half of the soak.
  • Use the back of a spoon to spread one-fifth of the malt fudge sauce in an even layer over the cake. (Helpful hint: the warmer the fudge sauce, the easier it is to spread.)
  • Sprinkle half of the malted milk crumbs and one-third of the charred marshmallows evenly over the malt fudge sauce. Use the back of your hand to anchor them in place.
  • Use the back of a spoon to spread another fifth of the malt fudge sauce as evenly as possible over the crumbs and marshmallows.
  • With your index finger, gently tuck the second strip of acetate between the cake ring and the top 1/4 inch of the first strip of acetate, so that you have a clear ring of acetate 5 to 6 inches tall-high enough to support the height of the finished cake. Set a cake round on top of the sauce and repeat the process for layer 1 (if 1 of your 2 cake rounds is jankier than the other, use it here in the middle and save the prettier one for the top).
  • Nestle the remaining cake round into the sauce. Cover the top of the cake with the remaining fudge sauce. Since it's a sauce, not a frosting, here you have no choice but to make a shiny, perfectly flat top. Garnish with the remaining charred marshmallows.
  • Transfer the sheet pan to the freezer and freeze for a minimum of 12 hours to set the cake and filling. The cake will keep in the freezer for up to 2 weeks.
  • At least 3 hours before you are ready to serve the cake, pull the sheet pan out of the freezer and, using your fingers and thumbs, pop the cake out of the cake ring. Gently peel off the acetate and transfer the cake to a platter or cake stand. Let it defrost in the fridge for a minimum of 3 hours. If storing the cake for longer, do not cover with plastic wrap-it will tear the malt fudge off the cake! Instead, get a big bowl, flip it upside down, and use it to protect the cake (or invest in a cake carrier). Stored in this way, the cake will keep fresh for up to 5 days in the fridge.
  • Slice the cake into wedges and serve.
