2/3 cup unsweetened cocoa powder
6 tablespoons boiling water
2 tablespoons Kahlua
8 tablespoons butter, softened
4 cups confectioners' sugar, sifted
1/4 teaspoon ground cinnamon

Steps:

  • Place the cocoa powder in a large mixing bowl and pour in the boiling water and Kahlua.
  • Stir with a wooden spoon or rubber spatula until the cocoa comes together into a soft mass.
  • Add the butter and blend with an electric mixer on low speed until the mixture is soft and well combined, 30 seconds. Stop the machine. Add the confectioners' sugar and cinnamon and beat with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the mixer speed to medium and beat until the frosting lightens and is fluffy, 2 minutes more.

Delicious, sophisticated brownies that are great during the holidays as well as to finish a Mexican meal. While there are a lot of steps, it's actually a pretty easy dish to make and enjoy. Adapted from "Layers of Flavor" by Ray Overton.

2 cups sugar
1 1/4 cups all-purpose flour
2/3 cup dutch process cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup butter, melted and cooled
4 eggs
1/4 cup Kahlua or 1/4 cup other coffee-flavored liqueur
2 teaspoons vanilla extract
1 cup chopped nuts (pecans, walnuts, or almonds, for use to garnish icing when finished) (optional)
1 cup semisweet mini chocolate chips
1 ounce white chocolate, chopped or 1 ounce white chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a 13x9x2 baking dish and set aside (can use a mix of cocoa and flour to prevent white edges around finished brownies) In a big bowl (preferably by hand, NOT mixer), combine well the sugar, flour, cocoa, baking soda, salt and cinnamon.
  • Add melted butter, eggs, vanilla, and Kahlua, and stir just until blended (do not overmix).
  • Fold in chopped nuts, if you are using them.
  • Put batter in prepared baking dish, evening out the batter with a spatula.
  • Bake for 40- 45 minutes or until the edges of brownies begin to pull away from the sides of the dish.
  • Remove from the oven and put dish on wire rack to cool.
  • Immediately sprinkle dark chocolate chips over top of hot brownies.
  • Lighly place a sheet of aluminum foil over dish to hold in and reflect heat.
  • After about 5 minutes, when chips are melted, spread over the brownies with a spatula.
  • Immediately sprinkle white chocolate over the frosting, and lightly cover dish with the foil again.
  • After about 2 minutes, when chocolate is melted, gently swirl them into the dark chocolate to create a marbleized look.
  • Let cool 2 hours before cutting.

CAKE:
1 package (18.25-ounces) plain devil's food cake mix
2 tablespoons unsweetened cocoa powder
3/4 cup Kahlua
3/4 cup buttermilk
1/2 cup vegetable oil
3 large egg
FLUFFY CHOCOLATE KAHLUA FROSTING:
2/3 cup unsweetened cocoa powder
6 tablespoons boiling water
2 tablespoons Kahlua
8 tablespoons (1-stick) butter, softened
4 cups confectioners' sugar, sifted
1/4 teaspoon ground cinnamon

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees. Grease two 9-inch round cake pans with solid vegetable shortening, then dust with flour. Shake out the excess flour. Set the pans aside. Place the cake mix, cocoa, Kahlua, buttermilk, oil, and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed. The batter should look well combined. Divide the batter evenly between the prepared pans, smoothing it out with the rubber spatula. Place the pans in the oven side by side. Bake the cakes until they spring back when lightly pressed with your finger, 28 to 30 minutes. Remove the pans from the oven and place them on wire racks to cool for 10 minutes. Run a dinner knife around the edge of each layer and invert each onto a rack, then invert again onto another rack so that the cakes are right side up. Allow to cool completely, 30 minutes more. Meanwhile, prepare the Fluffy Chocolate Kahlua Frosting. Place the cocoa powder in a large mixing bowl and pour in the boiling water and Kahlua. Stir with a wooden spoon or rubber spatula until the cocoa comes together into a soft mass. Add the butter and blend with an electric mixer on low speed until the mixture is soft and well combined, 30 seconds. Stop the machine. Add the confectioners' sugar and cinnamon and beat with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the mixer speed to medium and beat until the frosting lightens and is fluffy, 2 minutes more. Place one of the layers right side up on a cake plate or stand. Generously and evenly frost the top of the layer. Place the second layer on top, and generously frost the top of the cake creating decorative swirls with the spatula. With the remaining frosting, frost around the sides of the cake using smooth, clean strokes. Slice, then serve.

THis is one of my favorite cake recipes and it is so easy using a boxed cake mix. The chocolate fudge frosting takes it over the top.

1 box devils food cake mix
1 1/2 c sour cream
3/4 c vegetable oil
1/2 c kahlua or other coffee liqueur
2 eggs, beaten
4 oz box instant chocolate pudding
frosting ingredients
1/2 c solid vegetable shortening like crisco
2 c sugar
3 oz unsweetened chocolate
2/3 c milk
1/2 tsp salt
2 tsp vanilla

Steps:

  • 1. Blend all ingredients together with an electric mixer for 3 minutes. Pour into a greased and floured bundt pan. Bake at 350 degrees for 45 to 55 mins. Cool the cake in the pan. Remove the cake to a cake plate and prepare the frosting.
  • 2. Frosting - Mix all ingredients except the vanilla in a 2 1/2 quart pan. Heat to a rolling boil, stirring occasionally. Boil for one minute without stirring. Place the pan in a bowl of ice and water. Beat the frosting until it is smooth and spreadable. Ice the cake and enjoy.

  • 1. Blend dry ingredients together and then add the wet ingredients. Mix with mixer for 3 mins.
  • 2. Pour into a greased and floured bunt pan. Bake at 350 degrees for 45 to 55 minutes. Cool in the pan. Release from the pan after cooled and dust with confectioners sugar or homemade chocolate icing.
  • 3. Frosting - Mix all ingredients except the vanilla in a 2 1/2 quart pan. Heat to a rolling boil, stirring occasionally. Boil for 1 minute without stirring. Place the pan of frosting into a bowl of ice and water. Beat the frosting until it is smooth and is spreading consistency. Sir in the vanilla. Spread on the cooked cake.

This rich and creamy frosting topping a devil's food cake is one of my birthday requirements! Years ago, my mom altered a basic frosting recipe by replacing half of the milk with Kahlua. It really enhances the chocolate flavor. This must be refrigerated but it won't take up room in the fridge for long!

3 1/2 cups confectioners' sugar
1/2 cup butter, softened
3 (3 ounce) packets nestle toll house pre-melted unsweetened chocolate (or baking squares, melted)
1 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoons milk
2 tablespoons Kahlua
1 egg

Steps:

  • With mixer, cream butter with milk, Kahlua, vanilla, chocolate, and salt.
  • Beat in confectioners' sugar a little at a time.
  • Blend in egg (doing this last gives the frosting a nice sheen).
  • Spread on cooled cake and refrigerate.

1 pkg powdered sugar(16-ounce) sifted and divided
3 squares(1-ounce) unsweetened chocolate,melted
1/4 c kahlua

Steps:

  • 1. Beat butter and cream cheese at medium speed. Add 1 cup powdered sugar and chocolate; beat until smooth. Gradually add remaining powdered sugar and Kahlua, beating at low speed until spreading consistency.
