3 tablespoons cocoa
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
3 eggs
1/2 cup sugar
1/4 cup sugar
1 teaspoon vanilla
2 tablespoons oil
18 ounces semisweet chocolate
1 cup heavy cream
5 cups strawberry ice cream, softened
whipped cream
strawberry

Steps:

  • Preheat oven to 350*.
  • Grease 15 1/2" X 10 1/2" X 1" pan.
  • Line bottom with wax paper.
  • in small bowl, combine flour, cocoa, baking powder and salt.
  • Set aside.
  • In large bowl, beat eggs, sugar, vanilla until thick& pale yellow.
  • Beat in flour& oil mix.
  • Spread in prepared pan.
  • Bake 10-12 min til brown.
  • Sprinkle towel with conf.
  • sugar.
  • Immediately invert cake onto towel.
  • Gently peel off wax paper.
  • Roll warm cake with towel inside.
  • Place seam side down on wire rack.
  • Cool.
  • Unroll cake.
  • Spread filling within 1/2" of edges.
  • Roll up.
  • Wrap tight in foil.
  • Freeze 2 hours.

CHARLOTTE ROYALE (AKA BRAIN CAKE)

This has become a firm favourite at our home and wherever I take it; it's fairly straightforward to make (very easy, if your local supermarket sells jelly rolls - what I would usually call jam sponge rolls) and serves a lot of people (at least 12 large serves, usually 16). It's visually quite different and a delicious variation from the usual Charlotte recipe. I found the basic recipe on www.axis-of-aevil.org/, and varied it to suit. The recipe works well with either gelatin or agar-agar � both are easy to use; I usually go the vegetarian route, having one of those in the house.

3 jelly sponge rolls
20 g gelatin powder or 1/4 teaspoon agar-agar
2 1/2 cups whole milk
1 vanilla pod or 2 tablespoons real vanilla sugar
8 egg yolks
1/2 cup icing sugar or 100 g icing sugar
1/4 teaspoon salt
2 cups whipping cream, very cold
1/4 cup icing sugar
1/2-1 cup fresh berries or 1/2-1 cup frozen berries
2 tablespoons liqueur (optional)

Steps:

  • Cut the cakes into about 1 1/2cm (half inch) slices.
  • Butter a bowl (or mold or springform pan) and place 1 1/2cm slices of jam roll around the sides, fitting them tightly together so that there are no spaces for the custard to seep through. Reserve some slices for placing on top of the Bavarian cream (which will be the bottom of the cake when removed from the mold). Refrigerate until you are ready to fill the mold.
  • If using gelatine, soak gelatine in 3 tablespoons cold water.
  • Heat milk with vanilla over a medium heat. Add gelatine (or agar-agar) to the milk and bring it gently to the boil, stirring continuously. Remove from the heat and allow to cool slightly.
  • While cooling, whisk together egg yolks, icing sugar and salt until smooth, and pour the yolk mixture into the milk while stirring constantly.
  • Stir continuously with whisk over a gentle heat until the mixture coats the back of a spoon. The mixture must NOT boil. Pour into a bowl and allow to cool, then refrigerate until the custard is cold and just beginning to thicken.
  • While the custard is cooling, whip the cream until it just starts to thicken, then add the icing sugar. Continue whipping to soft peaks. Fold in the fruit or purée and/or liqueur if using.
  • Fold cream together with the cooled, but not set, custard. (If the custard has cooled and set a bit too fast, use your mixer to make it creamy before blending it with the whipped cream.).
  • Pour into the prepared dish, top with reserved slices of sponge roll and chill overnight.
  • To unmold, briefly place the bowl into warm water, cover with serving plate and invert. Tap gently and ease the bowl off of the cake. Add whipped cream and fruit as a garnish if you like.
  • For vegetarian use agar-agar.

A friend gave this recipe to my a long time ago and I have really enjoyed making it. You can always make it in advance and store in the freezer without filling. When you want to serve it, take it out and fill with your favorite filling, like ice cream.

3 large eggs
1 cup white sugar
1/3 cup water
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cocoa, sifted
1 cup cake flour, sifted
1 teaspoon vanilla

Steps:

  • Prepare a large cookie sheet with lining it with wax paper.
  • Mix together sugar, whole eggs and water.
  • Beat in remaining ingredients.
  • Pour into prepared cookie sheet and bake at 375 degF for 12-15 minutes.
  • Remove from oven and turn out onto a clean, moist teatowel springled with icing sugar.
  • Quickly remove the wax paper and trim off crisp edges.
  • While still warm, roll cake into tea towel into a roll, rolling the towel with the cake.
  • When cool, unroll the cake carefully and spread with jelly, or ice cream or your favorite filling. Roll up again. If using ice cream, store in the freezer until ready to serve. Slice into serving pieces.

12 ladyfinger cookies, cut in halves
2 (3 ounce) envelopes unflavored gelatin
1/3 cup sugar
1/4 teaspoon salt
3 cups chocolate milk
1 teaspoon vanilla
2 cups heavy cream, whipped

Steps:

  • Line 8" springform pan with ladyfingers-rounded sides against pan.
  • In saucepan mix gelatin, sugar & salt. Stir in milk, place over low heat, stirring constantly until gelatin & sugar are dissolved. Remove from heat & let cool to room temperature. Stir in vanilla. Fold in whipped cream & pour into pan.
  • Chill until firm-about 2 hours.

This is a very old recipe from my Aunt Martha in 1981.She always made this whenever my family would visit..so I know it is older than this date as she has been making this for a long time ..This jelly roll cake is so rich and chocolaty you will want to have a second piece to make sure you got a good taste of the filling too....

CAKE
6 large eggs at room temperature, separated
3/4 c granulated sugar
1/3 c bakers unsweetened cocoa
1 tsp vanilla extract
3/4 c sifted flour or cake flour will work also
1 1/4 tsp baking powder
1/2 tsp almond extract
FILLING
1 1/2 c heavy cream
1 c sifted powdered sugar
1 pkg knox unflavored gelatin
1/2 c cold water
2 Tbsp dark rum
garnish chocolate curls

Steps:

  • 1. CAKE: Separate egg yolks into small bowl and whites into large bowl of electric mixer. Preheat oven to 375^ Lightly grease bottom of a 15x10 x1 inch jelly roll pan; then line with waxed paper; on the bottom only not on the sides.
  • 2. Beat egg whites at hight speed just until soft peaks form. Gradually beat in 1/4 cup of the sugar, beating until stiff peaks form. It should look shiny and moist. With the same beater at high speed, beat egg yolks with rest of the sugar until thick lemon colored about 5 minutes.
  • 3. Turn to low speed and beat in cocoa and extracts just until combined. Add flour and baking powder. Gently fold yolk mixture into egg whites just until combined. Turn batter into prepared pan, spread out evenly. Bake for about 12 to 14 minutes, or just until surface springs back when gently pressed with finger.
  • 4. On a clean towel(not terry cloth), sift powdered sugar onto towel. Turn out cake onto sugar, gently peel off waxed paper. With a sharp knife, trim edges. So cake rolls smoothly.Starting with long edge, roll up cake in towel, jelly-roll fashion.( Cake tends to crack slightly when rolled). Place seam side down on wire rack 30 minutes, or until cooled.
  • 5. FILLING: In a medium bowl, combine cream and sugar. Refrigerate,covered ,1 hour, or until well chilled. While that is chilling, sprinkle gelatin over water in small bowl or measuring cup. Let stand 5 minutes to bloom(soften).Place over hot water; stir to dissolve. Cool for 30 minutes. The mixture should be liquid. Stir in the rum.
  • 6. Remove cream mixture from refrigerator and Using portable electric mixer, at high speed, beat cream mixture until stiff. At medium speed now gradually add gelatin mixture; continue beating until well combined. Return to refrigerator until firm about 30 minutes. Beat at high speed, until smooth and of spreading consistency.
  • 7. ASSEMBLY OF ROLL: Gently unroll cake and towel; remove the towel. Spread cake with 3/4 of the filling; reroll. Place, seam side down on serving tray. Spread top and sides with remaining filling. Chill for 1 hour,or until ready to serve. Just before serving garnish with chocolate curls.
  • 8. ICE CREAM ,COOL WHIP FILLING, AND COCOA.
