A classic & delicious Italian dessert. It is very light, so it is good after a heavy meal. Serves 4

2 cups warm water
3/4 cup sugar
1/2 cup lemon juice, &
1 teaspoon lemon zest
1/2 cup lime juice, &
1 teaspoon lime zest
1 cup pureed strawberry
1/2 cup semisweet chocolate, grated & melted
maraschino cherries, with stems whole strawberries (to garnish) or chocolate shavings (to garnish)

Steps:

  • In a saucepan, dissolve sugar in water.
  • Add fruit juice, strawberries, or chocolate.
  • If adding fruit juice, let stand 5 minutes, then strain out rind.
  • Pour mixture into freezing tray & freeze, stirring frequently until mixture is thick & mushy.
  • Serve in chilled champagne glasses with appropriate garnish.

By the sum of its ingredients, you'd think that this would merely be frozen chocolate water... but the high quality chocolate yields an intensely flavoured, frozen mouthful of pure bliss. Best eaten in one or two scoop quantities only.

2 cups water
1/2 cup sugar
1/4 cup cocoa powder
3 ounces high quality bittersweet chocolate, finely chopped (70%)
1 tablespoon orange zest
1/4 cup freshly squeezed orange juice

Steps:

  • In a saucepan over medium heat, bring 2 cups water, the sugar and cocoa powder to a boil, stirring constantly.
  • Reduce heat, simmer one minute until sugar is dissolved and cocoa evenly blended.
  • Stir in chocolate until melted.
  • Remove from heat, transfer to a bowl, and cool to room temperature.
  • Stir in orange juice and zest.
  • Cover and refrigerate until completely cold (I usually go overnight- the texture is transcendent when it is completely cooled like this).
  • Stir chocolate mixture, and transfer to your ice cream maker, freezing according to manufacturerer's instructions.
