Steps:

  • In a microwave or large metal bowl over simmering water, melt chocolate chips and butterscotch chips; stir until smooth. Gently stir in noodles., Drop by rounded tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate 10-15 minutes or until set.

1 cup shredded coconut
1 cup chopped almonds

  • Line a baking sheet with waxed paper.
  • Stir oats, chocolate chips, coconut, and almonds together in a large bowl.

1 cup cocktail peanuts
2 tablespoons butter, cut into pieces
1 bag (10 oz) miniature marshmallows
1 cup white vanilla baking chips
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting (from 16-oz container)
2 teaspoons Betty Crocker™ Decorating Decors Jingle Mix nonpareils

Steps:

  • Line cookie sheets with waxed paper or cooking parchment paper. Spray with cooking spray. Spray large bowl with cooking spray; mix noodles and peanuts in bowl.
  • Spray medium microwavable bowl with cooking spray; add butter and marshmallows. Microwave uncovered on High 1 minute 30 seconds to 2 minutes or until smooth, stirring every 30 seconds. Stir in white vanilla baking chips and frosting. Continue to microwave uncovered on High 30 seconds; stir until well blended.
  • Pour hot marshmallow mixture over noodles and peanuts; stir until well coated. To form each cookie, drop mixture by rounded tablespoonfuls onto waxed paper. Immediately top with sprinkles. Repeat with remaining noodle mixture and sprinkles. If mixture is hard to scoop, reheat in microwave uncovered on High 15 to 30 seconds.

4 c chow mein noodles, [pre-cooked hard ones]

  • 1. Measure noodles into large mixing bowl and set aside In 4 qt dish, microwave at 50% power melt chips & peanut butter [3-5] minutes
  • 2. Stir and add to chow mein noodles. Drop onto wax paper and put in refrigerator for a fast set or you can leave on the counter until set.
  • 3. For a yummy almond joy flavor you can substitute the peanut butter for almond butter and add 1/2 cup of shredded coconut. You can also use any flavor of chips instead of semi-sweet chips...Butterscotch, mint, white chocolate, peanut butter etc

I usually combine some of each in a nice gift box for special occasions.

1/2 bag chow mein noodles
1 c party peanuts

Steps:

  • 1. Melt the chocolate chips in a microwavable bowl. Heat at 30 second intervals until melted and smooth.
  • 2. Add the chow mien noodles stirring gently to keep from breaking the noodles.
  • 3. Add the peanuts and stir gently to combine.
  • 4. Drop a tablespoon of the mixture onto a cookie sheet lined with wax paper or parchment paper.
  • 5. Refrigerate for at least 30 minutes to set.

I went through all the haystack recipes on zaar and did not see these. They are a little different as they don't use the chow mein noodles. They are easy and too good to leave off. I want to try these with dry roasted peanuts and maybe butter instead of the peanut butter just for a change,there is something about the sweet and salty that makes you keep eating them. This too came out of my Texas cookbook. I don't remember how many these make so I took a wild guess.

These are some of my favorite sweets. Easy and sooooo good! I found the recipe in a church cookbook and made a couple adjustments after making it. The original recipe called for chow mein noodles but I prefer the rice noodles. Yield is an estimate as it depends on how big you scoop them :) Update: Dec 2011 - I made these today and reduced the peanut butter by 2 Tbsp and it worked well. I have updated the ingredient amount to reflect the change.

3 ounces semi-sweet chocolate chips
3 ounces butterscotch chips
6 tablespoons creamy peanut butter
3 ounces rice noodles, see note*
1 cup mini marshmallows

Steps:

  • Melt the chocolate chips, butterscotch chips and peanut butter in the microwave (be careful not to scorch! - my 900W microwave takes 1.5 minutes on 70% power or about 70 seconds on high), stirring every 25 seconds or so until smooth. You can also use a double boiler on the stovetop.
  • Stir in the noodles and marshmallows.
  • Drop by spoonfuls onto waxed paper or parchment paper and allow cookies to harden (may have to chill in fridge).
  • *Note: These are made by La Choy and come in a blue cardboard can. They are sold as a "topper" for salads or main dishes. Not to be confused with rice noodles that you would add a sauce to or use in a soup!

1 3/4 cups shoestring potato chips
1 cup salted cashews or salted peanuts if preferred
