Yield Makes about 50 cookies

Number Of Ingredients 12

3 cups old-fashioned rolled oats
1 cup all-purpose flour
1/2 cup whole-wheat flour
1 teaspoon salt
1/2 teaspoon baking soda
2 sticks (1 cup) unsalted butter, softened
1 1/4 cups (packed) brown sugar
1 large egg
1/4 cup honey
2 teaspoons pure vanilla extract
6 ounces semisweet chocolate (60 to 65 percent cocoa), coarsely chopped (about 1 1/4 cups)
1 cup crystallized ginger, finely chopped

Steps:

  • Arrange racks in upper and lower thirds of oven and preheat to 375°F. Line 2 large baking sheets with parchment paper.
  • In food processor, combine oats, all-purpose flour, whole-wheat flour, salt, and baking soda. Pulse until oats are coarsely chopped, about 6 (1-second) pulses. Set aside.
  • Using electric mixer at high speed, beat butter and brown sugar until fluffy, 2 to 3 minutes. Add egg, honey, and vanilla and beat until smooth, about 1 minute. Add oat mixture and mix at low speed just until incorporated. Stir in chocolate and ginger.
  • Drop rounded tablespoons of dough about 2 inches apart onto baking sheets. Bake, 2 pans at a time, switching positions of pans halfway through baking, until golden and slightly crisp on edges, about 14 to 16 minutes. Cool on sheets 3 minutes, then transfer to racks to cool completely. Continue making cookies with remaining dough and cooled sheets.
  • Transportation tips:
  • To keep them fresh, pack the cookies in covered containers with waxed paper between each layer. If it's very hot out, you may want to refrigerate them until you leave to ensure that they won't melt before dessert time.

CHOCOLATE-CHERRY GINGER COOKIES

Chocolate-Cherry Ginger Cookies image

These are the kind of cookies that make you want to cozy up under a warm blanket with a cup of tea and a good book. Packed full of warming spices, they have soft, chewy centers and crisp edges, and are punctuated by melty puddles of milk chocolate and tart dried cherries. They come together quickly too; no need to soften butter or chill dough. Feel free to substitute dark chocolate for a more deeply chocolaty cookie, but in either case, use chopped bar chocolate and not chips for the meltiest, tastiest bites. You can also substitute dried cranberries for the cherries.

CHOCOLATE GINGER SHORTBREAD COOKIES

Chocolate Ginger Shortbread Cookies image

Provided by Food Network

Categories     dessert

Time 50m

Yield about 40 cookies

Number Of Ingredients 12

4 to 6 pieces candied ginger
1/2 vanilla bean
3/4 cup cold unsalted butter, cubed
1 cup powdered sugar
4 large egg yolks
Pinch baking powder
Pinch salt
1/2 cup unsweetened Dutch processed cocoa powder
1 2/3 cups all-purpose flour
8 ounces white chocolate, tempered
Cocoa butter
Powdered food colors, as desired

Steps:

  • Use a rolling pin to mash the candied ginger into a paste.
  • Use a sharp knife to slice the vanilla bean lengthwise. Separate the seeds from the outside skin by scraping the blade of the knife along the inside of the bean. Place the vanilla bean seeds, butter, sugar, egg yolks, and ginger in a medium-size mixing bowl and beat with an electric mixer on low speed until the ingredients are combined, about 1 minute. Combine the baking powder, salt, cocoa powder and flour and add to the butter mixture all at once. Beat on low speed just until combined, about 1 minute. Do not overmix the dough or it will become tough. Remove the dough from the bowl.
  • Preheat the oven to 400 degrees F.
  • I baked my cookies in a special flexible baking sheet with dome-shaped cavities. Roll the dough into a rope that is about the same diameter as the cookie mold. Use a knife to cut each piece of dough. Press the dough into the mold. Repeat until all of the cavities are filled. Bake 15 to 20 minutes.
  • To make the chocolate fans: Use an offset spatula to spread a very thin layer of tempered chocolate onto a piece of marble. Use a spatula to clean away chocolate so you are left with a rectangle shape. Let the chocolate set slightly. Place 1 hand on the handle of the cake triangle and rest your thumb on the blade of the triangle. Push the triangle through the chocolate in strips of about 2 inches. Use your thumb to catch 1 side of the chocolate to create small chocolate fans. Pinch the short side to create the handle of the fan. I colored my fans with my airbrush but you could also use a paintbrush. If using an airbrush, place a few drops of color in the airbrush.
  • If using a paintbrush, mix together a few tablespoons of the cocoa butter with a small amount of powdered food color. It will be easier if you use yogurt machine to store and warm your paints. Apply color where you are inspired to do so.
  • When the cookies have cooled, use a sharp knife to cut a wedge from the top of each cookie. Position the chocolate fans on top of each cookie.

WHITE CHOCOLATE CHIP GINGER COOKIES

White Chocolate Chip Ginger Cookies image

I came up with this recipe when I wanted a ginger cookie and didn't have any molasses. This has a delicate flavor, not as strong as your typical ginger cookie or gingerbread, but the vanilla chips give it a great creamy richness that complements the spice. It makes an excellent Christmas cookie, and 1 cup of walnuts can be added for another layer of flavor.
