3 tablespoons slivered blanched almonds
6 tablespoons sugar
1 1/4 cups (spooned and leveled) unbleached all-purpose flour
1/4 teaspoon kosher salt
6 tablespoons cold unsalted butter, cut into pieces
12 ounces bittersweet chocolate, coarsely chopped
1 1/4 cups heavy cream
1 teaspoon pure vanilla extract
Lightly sweetened whipped cream, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Make dough: In a food processor, pulse almonds until finely ground. Add sugar, flour, and salt; pulse until combined. Add butter, pulsing until coarse crumbs form with no large butter lumps (dough should clump together when pinched with fingers).
  • Immediately transfer dough to a 9-inch tart pan with a removable bottom. Using a measuring cup, evenly press dough into the bottom and up the sides of pan.
  • Bake in center of oven until golden brown and firm to the touch, about 20 minutes. Transfer to a wire rack to cool completely, about 1 hour.
  • Make ganache: Place chocolate in a large mixing bowl. In a small saucepan, bring cream to a boil. Pour hot cream, through a sieve, over chocolate. Stir until smooth and creamy in texture. Mix in vanilla.
  • Pour chocolate mixture into center of cooled tart shell (if chocolate is lumpy, pass through a sieve). Let stand until set, about 2 hours, or refrigerate for 1 hour. Serve with whipped cream, if desired.

1 1/2 cups unbleached all purpose flour
10 tablespoons (1 1/4 sticks) chilled unsalted butter, cut into 1/2-inch cubes
3 tablespoons powdered sugar
2 large egg yolks
1 tablespoon fresh lemon juice
1 tablespoon plus 1 1/2 teaspoons water
1/2 cup heavy whipping cream
6 ounces bittersweet or semisweet chocolate, chopped
1 1/2 teaspoons Kahlú a, other coffee flavored liqueur, or strong coffee
1 teaspoon vanilla extract
4 cups fresh raspberries (three 6-ounce containers)
3 tablespoons seedless raspberry jam

Steps:

  • Using on/off turns, mix flour, butter, and sugar in processor until coarse meal forms.
  • Mix egg yolks, lemon juice, and 1 tablespoon water in small bowl. Add to processor; mix until moist clumps form. Gather dough into ball; flatten into disk. Wrap in plastic. Chill 30 minutes. DO AHEAD: Dough can be made 2 days ahead. Keep chilled.
  • Preheat oven to 375°F. Butter 9-inch diameter tart pan with removable bottom. Roll out dough on lightly floured work surface to 12-inch round. Fit dough into pan; trim overhang. Freeze 20 minutes.
  • Bake crust until golden, 25 minutes; cool.
  • Meanwhile, bring cream just to boil in small saucepan. Remove from heat. Add chocolate; stir until smooth. Stir in liqueur and vanilla. Cool ganache 15 minutes.
  • Transfer cooled crust to platter. Spoon chocolate ganache into crust and smooth top. Arrange raspberries atop chocolate. Stir raspberry jam and 1 1/2 teaspoons water in small saucepan over medium heat until smooth. Brush warm glaze over berries. DO AHEAD: Can be made 8 hours ahead. Cover and let stand at room temperature.

½ cup packed brown sugar
3 tablespoons all-purpose flour
3 tablespoons chilled butter, cubed
8 ounces Belgian bittersweet dark chocolate, chopped

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine pecans, brown sugar, and flour in a small bowl. Cut in butter using a pastry blender or 2 knives until pea-size crumbs form. Press mixture into the bottom and sides of a 9-inch tart pan with a removable bottom.
  • Bake crust in the preheated oven until golden brown, 8 to 10 minutes. Let cool completely on a wire rack, about 30 minutes.
  • While crust cools, place chocolate in a glass bowl. Set aside. Pour heavy cream into a small saucepan over medium heat; cook until edges of cream just begin to bubble, but do not boil. Pour hot cream over chocolate and whisk until chocolate is melted and incorporated into cream. Let filling cool for 20 minutes.
  • Pour filling into cooled crust. Chill torte in the refrigerator for 2 hours. Remove sides of pan prior to cutting.

1/4 cup plus 1 tablespoon dutch-process unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup butter plus 2 tbsp butter, room temperature (1 1/4 sticks)
1/2 cup confectioners' sugar
2 egg yolks
1/2 teaspoon vanilla extract
2 1/4 cups sugar
3/4 cup light corn syrup
1/2 teaspoon salt
6 tablespoons butter, room temperature
1 1/2 cups heavy cream
1 1/2 teaspoons vanilla extract
4 ounces bittersweet chocolate, chopped (milk chocolate maybe subbed)
1/2 cup heavy cream
coarse sea salt, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, whisk to combine the flour, cocoa powder and salt; set aside.
  • In another bowl, cream together the butter and sugar. Add in the egg yolks and vanilla and mix until combined. Little by little, add the dry ingredients until incorporated. The dough may look crumbly, but it should come together easily when you pinch the dough between two fingers.
  • Press the dough out into a tart pan. Prick all over with a fork and put into the freezer for 10 minutes. Bake chilled crust for 15 minutes, then cool completely on a wire rack.
  • For the caramel, place the sugar, corn syrup and salt in a heavy bottomed saucepan over medium high heat. Stir to combine, but onces the mixture begins to bubble stop stirring for the remainder of the cooking process. The sugar will first turn clear, then it will noticeably start bubbling and eventually take on color. Continue to cook, without stirring, until a candy thermometer inserted into the syrup reads 340°, stir in the butter. Remove the pan from the heat and carefully (watch the sputtering) add the heavy cream and vanilla. Pour the caramel into the cooled crust and refrigerate for about 3-4 hours or until set.
  • To make the chocolate ganache, heat the heavy cream to a simmer, then pour it over the chocolate. Let it sit for 60 seconds, then stir until smooth. Pour the chocolate ganache over the caramel tart and refrigerate for a few hours until set.
  • To serve, cut into slices and garnish with sea salt.

PECAN CRUST
2 1/2 c pecans - toasted or not
1/2 c sugar
3 - 4 Tbsp melted, salted butter
GANCAHE FILLING
14 oz giaradelli semi sweet chocolate chips - or another quality brand
2 c heavy cream

Steps:

  • 1. Preheat oven to 350 degree. Toast pecans on a sheet pan 10 - 12 minutes. ( optional)
  • 2. Place the toasted pecans on food processor along with 1/2 cup sugar. Pulse until looks like sand.
  • 3. Drizzle 3 tablespoons of butter into the crumbs, pulse until you see it's going to stick together. If you need the 4th tablespoon, go ahead and add it, it won't hurt anything.
  • 4. Pat the pecan mixture into a 9 inch tart pan or 9 inch pie plate. Up the sides as well. Place in freezer to chill for 15 minutes.
  • 5. After chilling place in preheated oven to 10 - 12 minutes or until starting to color just a bit.
  • 6. Cool crust.
  • 7. Make Ganache: Place chocolate chips in a medium bowl. In another sauce pan, heat cream until bubbly around the edges of pan. I stick my pinkie into the center to see if hot...but if bubbling around edges, that's a pretty good sign it's hot enough. Pour the cream over the chocolate. Let sit for a few minutes. Then, whisk until all chips are blended and melted into the cream. Will have a beautiful sheen.
  • 8. Pour this evenly into the pecan crust. Place in refrigerator and chill for a good 2 hours.
  • 9. Remove from refrigerator and remove tart pan. Allow the tart to set at room temperature for 20 minutes before cutting... I serve this decadent dessert with just a dollop of whipped cream...it needs nothing else... Enjoy this creamy, smooth, chocolaty indulgence.

Water, oil and egg called for on cookie mix pouch
1/3 cup butter, melted
30 caramels, unwrapped
3 tablespoons heavy whipping cream
1 1/2 cups semisweet chocolate chips
3/4 cup heavy whipping cream
1/4 cup caramel sauce
1/2 teaspoon coarse sea salt

Steps:

  • Heat oven to 375°F. Make 36 cookies as directed on pouch. Cool completely, about 15 minutes. Store 8 cookies in airtight container for another use.
  • Heat oven to 350°F. Spray 9-inch tart pan with 1-inch rim and removable bottom with cooking spray.
  • In food processor, process half of the remaining cookies to fine crumbs. Remove to medium bowl. Continue to process second half of remaining cookies to fine crumbs; add to bowl. Stir in melted butter until well blended. Press very firmly on bottom and up side of tart pan. Place tart on rimmed baking sheet. Bake 14 to 18 minutes or until crust is set in center. Cool 15 minutes.
  • In medium microwavable bowl, microwave Caramel Layer ingredients uncovered on High 1 minute 30 seconds, stirring halfway through. Stir in 15-second intervals until caramels are melted and can be stirred smooth. Pour over baked crust. Refrigerate 10 minutes.
  • In medium microwavable bowl, place chocolate chips. In 1-quart saucepan, heat 3/4 cup whipping cream over medium-low heat 3 to 5 minutes or until hot. Pour cream over chocolate chips in bowl; let stand 5 minutes. Stir until smooth. If needed, microwave chocolate-cream mixture uncovered on Medium (50%) in 15-second increments until chocolate can be stirred smooth. Remove tart from refrigerator. Pour chocolate mixture over caramel layer. Return to refrigerator uncovered, about 2 hours or until chocolate is set.
  • Let tart stand at room temperature 10 minutes before cutting. Spoon caramel sauce around edge; sprinkle sea salt on top. Store loosely covered in refrigerator.

  • Sweet Crust: Preheat oven to 375F. In a bowl, cream butter and 1/2 cup sugar. Add flour and mix until dough forms. Shape dough into disc and chill in fridge for 15 minutes. Remove dough, place on parchment lined cutting board, dusted with pastry flour and roll to 1/8 inch thick. Grease mould so tart lifts easily. Transfer dough in 9 inch tart mould. Chill in fridge for 30 minutes. Bake on a tray until golden, approx. 25 minutes, rotating halfway through. Cool. Place chocolate in bowl. In saucepot, scald cream and pour over chocolate. Whisk until smooth. Pour into crust. Chill in fridge. Blueberry Sauce: Place blueberries, Grand Marnier, remaining sugar, zest and juice of orange in saucepot. Cook until blueberries are soft and sugar dissolves, cool. Puree and strain until smooth. Add lemon juice to taste. Slice tart and garnish with blueberry sauce. Add dark and white chocolate curls. Serve.

Add butter and vanilla; stir to blend. Pour filling into cooled crust. Chill uncovered until firm, at least 4 hours. Chop brittle into rough 1/2-inch pieces. DO AHEAD: Can be made 1 day ahead. Cover brittle, cover tart, and keep chilled. Bring to room temperature before continuing.
  • Remove tart from pan. Scatter brittle over tart and serve.
  • Carob chips are similar to chocolate chips. They are available at some supermarkets and at specialty foods stores and natural foods stores.

8 Tbsp unsalted butter, cool room temperature
1/4 cup sugar
1 egg yolk
pinch of kosher salt
1 1/4 cups unbleached flour
Ganache Filling:
10 oz bittersweet chocolate, (excellent quality) cut into small pieces
1 1/4 cup heavy cream
1/2 tsp fleur de sel

Steps:

  • For the Crust Preheat oven to 350°F. Position a rack in the center of the oven. Cream the butter and sugar in a mixer until completely smooth. Add the egg yolk and mix until completely incorporated. Stop the mixer and scrape down the sides of the mixing bowl. Add the salt and flour. Mix just until the dough comes together and starts to move away from the sides of the bowl. Turn the dough out onto a floured surface and lightly knead it into a disc about 6 inches in diameter. Wrap the dough in plastic wrap and place in the freezer for 15 minutes. Roll the dough out on a floured surface into an 11-inch round. Transfer the dough into a 9-inch tart pan with removeable bottom. Gently fit the dough into the pan, trimming off any overhang. Pierce the bottom of the tart shell all over with a fork. Place the tart shell in the freezer for 20 minutes. Line the tart shell with foil and fill it with dried beans or pie weights. Bake for 25 minutes. Remove the foil and beans. Bake until the crust is golden brown, 15 - 20 minutes. Cool the tart shell completely before filling. Ganache Filling Place the chocolate in a medium-sized metal or glass bowl. Place the cream in a small saucepan over medium heat. Bring it just to a simmer, then immediately pour over the chocolate. Let sit for 30 seconds. Stir together very gently, just until the chocolate melts and the mixture is completely smooth. Pour the filling through a strainer into the prepared tart shell, shaking gently to even out the surface, if needed. Refrigerate for 3-4 hours or until set. Remove the tart about 45 minutes before serving to soften it enough to be sliced. Sprinkle the fleur de sel evenly over the top of the tart before serving.

TART SHELL:
2 cups Almond Meal (flour)
3/4 Maple Syrup
4 tablespoons melted butter (can use 2 tablespoons for lighter caloric crust)
GANACHE:
8 oz Callebaut Dark Chocolate Semi-Sweet
8 oz Ghirardelli Bittersweet Dark Chocolate Chips
2 Cups Light Cream
1 egg yolk
WARM CHERRY and BLUEBERRY RUBY PORTO SAUCE:
Cherries
Blueberries
3 Tablespoon of agave,maple syrup or honey
1/4 cup Merlot
1/4 cup Ruby Red Porto Wine
1 Tablespoon Cornstarch
1/8 teaspoon Vanilla Extract

Steps:

  • 1. To make tart shell, place Almond Meal (or pulverized nuts), maple syrup, and butter in bowl and fold until properly mixed. Place parchment paper in 8-10 inch tart pan with removable bottom. 2.Preheat oven to 375F 3. Butter the sides of pan for easy removal. 4.Press mixture into tart pan. 5. Bake crust for 15-20 min or until golden brown. 6. Set up 2 double boilers 7. Place chocolate in a double boiler and melt. 8. In other double boiler heat cream until scalding hot. 9. Beat egg yolk into the boiler with chocolate. (chocolate will slightly harden and clump it's ok it will smooth out again once you add the cream). 10. Pour scalding hot cream into the chocolate and stir or beat until all the chocolate is smooth again. 11. Pour mixture into shell and chill tart for at least 2 hours 12. To decorate, cut out a stencil of a pattern and place over the tart. Pour powdered sugar into a sifter and sprinkly lightly over the stencil. Remove stencil and serve. SAUCE: 1. If cherries and blueberries are frozen; thaw, drain and save the juice. 2. Pour juices from cherries into glass cup and add merlot and Porto to measure 1 cup. 3. Stir 3 tablespoon of honey and 1 tablespoon cornstarch in heavy small saucepan until no lumps remain. 4. Gradually whisk in wine mixture, then cherries and blueberries. 5. Cook over medium-high heat until cause boils, thickens and is translucent, stirring frequently, about five minutes. 6. Remove from heat. Stir in vanilla extract. 7. Spoon warm sauce over Ganache tart and serve immediately.

100 grams (3.5 ounces) unsalted butter, cold
45 grams (1/3 cup) powdered sugar
Pinch salt
1 egg yolk, lightly beaten
2 egg whites
1/2 teaspoon white wine vinegar
Pinch cream of tartar
110 grams (1/2 cup) superfine sugar
Pink gel food coloring
200 grams (7 ounces) 70% chocolate, chopped
30 grams (1 ounce) unsalted butter
4 tablespoons heavy cream
1 teaspoon sugar
Sliced raspberries, for decorating
Fresh basil or mint leaves, for decorating

Steps:

  • For the pastry: Add the flour, butter, sugar and salt to a stand mixer fitted with the paddle attachment and mix on low speed until the mixture resembles breadcrumbs and the butter pieces are in small chunks. Add the egg yolk and mix until just combined and beginning to stick together, 15 seconds maximum.
  • Remove the dough from the mixer and shape it into a disc. Wrap in plastic wrap and chill in the fridge for at least 1 hour and up to 2 days.
  • Roll out the chilled dough on a floured surface until it is about 1/8 inch thick. Cut out 2 round discs about 5 inches each and lay them over two 4 1/2-inch mini fluted tart tins. Press the dough into the edges, trim off the excess, prick the bottoms in several places with a fork and place in the fridge for 20 minutes.
  • Preheat the oven to 175 degrees C/350 degrees F. Line the pastry with parchment and fill with dried beans. Bake until the pastry edges are golden brown, about 15 minutes. Remove the parchment and beans, brush the pastry with the egg yolk and bake until the base of the pastry is golden brown, about 5 minutes more. Let cool.
  • For the meringue kisses: Preheat the oven to 100 degrees C/210 degrees F.
  • Add the egg whites, vinegar and cream of tartar to a stand mixer fitted with a whisk attachment. Whisk on medium speed until they begin to get frothy, 1 to 2 minutes. As soon as they are frothy, increase the speed to high and slowly add the sugar a teaspoon a time. Keep whisking until you have added all the sugar and the meringue is stiff and glossy, 1 to 2 minutes more.
  • Add some food coloring to the end of a toothpick and run it along the inside of a piping bag fitted with a round tip.
  • Place the meringue in the piping bag and pipe small dollops roughly 1/2 inch in diameter onto a baking sheet lined with parchment. Bake the meringues until they are no longer glossy, have a matte finish and feel light and airy, about 40 minutes. Turn the oven off and allow the meringues to cool inside with the door closed for 20 minutes. (Makes 30 to 40 meringues.)
  • For the chocolate filling: Add the chocolate, butter, cream and sugar to a heat-proof bowl and place it over (but not in) a saucepan pan of simmer water. Gently stir together until melted, 1 to 2 minutes.
  • Pour the mixture into the cooked pastry shells and chill in the fridge for 40 minutes.
  • For the assembly: Place 8 to 10 meringues on top of each chocolate tart. Reserve the remaining for another use. Decorate with some sliced raspberries and basil leaves.
  • If left to chill in the fridge overnight, allow the tarts to sit at room temperature for 20 to 30 minutes before serving.

2 large eggs
499 grams (3 1/2 cups) all-purpose flour, plus more for flouring work surface
155 grams (1 1/3 cup) confectioners' sugar
Pinch of kosher salt
1/2 pound (2 sticks) cold unsalted butter, cubed
Nonstick baking spray
226 grams (1/2 pound) 70-percent-cacao dark chocolate, chopped
1 1/2 cups heavy cream
2 tablespoons wildflower honey
Pinch of kosher salt
Toasted whole walnuts and pistachios
Mini-marshmallows or large marshmallows snipped into jagged shapes
Strips of orange confit
Shards of candied ginger
Fleur de sel or Maldon salt

Steps:

  • Make the tart shell: In a small bowl, combine the vanilla, 1 whole egg and the yolk of another, reserving the remaining egg white for sealing the baked shell.
  • In the bowl of an electric mixer fitted with a paddle attachment, combine the flour, sugar and salt. Mix on low speed, then add the butter and continue until mixture has a sandy consistency, about 2 minutes. Add vanilla-egg mixture and continue to mix until the dough comes together around the paddle, 3 to 5 minutes. Divide dough into 2 disks and wrap individually in plastic. Chill until dough is cold but not too hard to roll, about 30 minutes. (The second disk may be double-wrapped in plastic and frozen for up to 1 month; defrost in the refrigerator overnight before using.)
  • Heat oven to 325 degrees. Apply nonstick baking spray to a fluted 8- or 9-inch tart pan with a removable bottom. On a lightly floured surface, roll out 1 chilled disk to 1/8-inch thickness, about 11 or 12 inches in diameter. Gently roll dough onto a floured rolling pin, and unroll into tart pan. Press dough into pan's corners, being sure it remains the same thickness all around. Roll the rolling pin across pan edges to cut off excess dough. Place pan in freezer for about 20 minutes.
  • Line tart shell with a 12-inch-round sheet of parchment paper, and pour in 3 cups of pastry weights, dry beans or rice. Bake until edges of dough start to color, about 10 minutes. Allow to cool slightly before removing parchment and weights. Return to oven until base of pastry loses its sheen and is slightly golden, another 5 to 7 minutes. Lightly whisk the reserved egg white, and brush it over the entire inner surface of the shell. Return shell to oven to dry the egg white, about 1 minute. Remove from heat and allow to cool completely before filling. (Cooled shell may be wrapped in plastic and stored at room temperature for up to 24 hours before filling.)
  • Make the ganache: Place chocolate in a medium bowl. In a small saucepan, combine cream, honey and salt. Bring to a simmer and immediately pour over the chocolate; allow to sit for 1 minute. Using a spatula, begin stirring mixture in the center of the bowl, widening the circle as the cream and chocolate emulsify to create a silky ganache.
  • Pour ganache into shell, filling it to the brim. Allow to rest in a cool place for 10 minutes so chocolate can lightly set. Gently and artfully place toppings on the ganache surface. Let rest in a cool place for another hour, or refrigerate for 20 minutes for a faster set. Serve at room temperature, slicing with a sharp knife first dipped in hot water.

This tart exemplifies what the French do best: combine just a few top-quality ingredients, doing as little to them as possible. Ganache is a mélange of cream and chocolate, reportedly named after a young baker who accidentally spilled some cream into the chocolate the chef was melting. The chef called him a ganache, which is slang for "idiot," but when he stirred in the cream, they realized the mistake was probably one of the most brilliant things to ever happen to chocolate.

Yield makes one 9-inch (23-cm) tart; 8 to 10 servings

10 ounces (280 g) bittersweet or semisweet chocolate, chopped
1 cup (250 ml) heavy cream or half-and-half
1 large egg
1 large egg yolk
2 teaspoons Cognac
Prebaked tart shell (page 229)

Steps:

  • Preheat the oven to 350°F (175°C).
  • In a large heatproof bowl, combine the chocolate and cream or half-and-half. Set the bowl over a pan of simmering water, stirring occasionally until the chocolate is melted and the mixture is smooth.
  • Remove the bowl from the saucepan and whisk in the egg, egg yolk, and Cognac. Pour the mixture into the prebaked tart shell, tilting and shaking it very gently to even out the filling.
  • Set the tart pan on a baking sheet and bake until the filling looks almost set but still quivers when the tart is gently jiggled, about 20 minutes. Don't overbake. Let cool completely.
  • Remove the tart pan sides by setting the tart on an overturned bowl or other tall, wide surface (a large can of tomatoes works well). Gently press down on the outer ring and let the ring fall to the countertop. Set the tart on a flat surface. Release the tart from the pan bottom by sliding the blade of a knife between the crust and the pan bottom, then slip the tart onto a serving plate. (If it doesn't release cleanly, simply serve the tart on the pan bottom.)
  • Whipped cream (page 239) is one possible accompaniment to a wedge of this delectable tart, but Caramel Ice Cream (page 144) dials up the richness. Or, a scribble of Orange Caramel Sauce (page 242) will add a pleasant citrusy note.
  • The tart should be served the same day it's made. Keep it at room temperature until ready to serve.
