Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in DelightFulls morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  • Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

1 teaspoon baking soda

2 tablespoons white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour, cocoa powder, and baking soda together in a small bowl. Beat 1 cup white sugar, brown sugar, and butter together in a large bowl until light and fluffy. Add vanilla extract and eggs; beat well. Stir flour mixture into sugar mixture; mix well.
  • Lightly flour hands. Shape about 1 tablespoon dough around 1 chocolate-covered caramel candy, covering it completely. Repeat with remaining dough and caramel candies.

3/4 cup packed dark brown sugar
3/4 cup granulated sugar
2 large eggs

2 cups semi-sweet chocolate chips (about 12 ounces)

Steps:

  • Position the racks in the upper and lower third of the oven and preheat to 375 degrees F. Line two rimmed baking sheets with parchment. (If you only have one baking sheet, let it cool completely between batches.)
  • Place the butter in a small microwave-safe bowl, cover and microwave on medium power until melted, 1 to 2 minutes. (Alternatively melt in a small saucepan.) Cool slightly.
  • Whisk the dark brown sugar, granulated sugar, eggs, melted butter and vanilla in a large bowl until smooth.
  • Whisk the flour, baking soda and salt in a medium bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon, taking care not to overmix. Stir in the chocolate chips.
  • Use an ice cream scoop or measuring spoon to scoop out portions of dough (each about 3 tablespoons or 2.2 ounces). Flatten each portion in the palm of your hand until it's about 1/4-inch thick. Place 1 marshmallow in the center of the flattened dough and form the dough around the marshmallow until it is completely covered. Roll into a uniform ball and place about 2 inches apart on the prepared baking sheets. Bake until the edges and top are just turning golden, but the center is still soft, 17 to 18 minutes.
  • Let the cookies cool slightly on the baking sheets, about 5 minutes. Serve warm.

6 tablespoons butter, softened
¼ cup white sugar
1 large egg
2 tablespoons corn syrup
1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
⅓ cup semisweet chocolate chips
1 cup confectioners' sugar
¼ cup confectioners' sugar
½ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
  • Using an electric mixer, beat 6 tablespoons butter and 1/4 cup sugar in a large bowl until creamy. Add the egg; beat until smooth. Beat in corn syrup. Whisk together the flour and cocoa in a small bowl. Beat half of the flour mixture into the butter mixture until well incorporated. Beat in the remaining flour. Divide dough in half.
  • On a lightly floured board, roll each half of the dough into a rectangle. Cut each large rectangle into 1x3 inch rectangles. Place cookies on prepared baking sheets, 2 inches apart. Bake until firm, 10 to 15 minutes. Let cookies stand on baking sheets for 5 minutes; remove to wire racks to cool completely.

3 cups flour
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups sugar
1 teaspoon vanilla extract
1 egg, beaten
3/4 cup sour cream
powdered sugar, for dusting
1 cup flaked coconut
2 cups milk
1 cup sugar
3 tablespoons cornstarch

Steps:

  • Sift together flour, cocoa, baking soda and salt; set aside.
  • Cream together butter, sugar, vanilla, egg and sour cream.
  • Stir in dry ingredients.
  • Cover and refrigerate dough.
  • To prepare filling: Combine coconut and milk in a pot over medium heat. Combine cornstarch and sugar; stir into milk. Bring to a simmer and cook, stirring constantly until thickened. Remove from heat and set aside to cool.
  • Preheat the oven to 375 degrees. Grease cookie sheets.
  • On a floured surface, roll dough to 1/8 inch thickness. Cut into 2-1/2 inch circles. Place half of the circles 1-1/2 inches apart on the cookie sheets. Spoon 1 teaspoon filling into center of each circle. Top with another circle of dough and press edges to seal.
  • Bake 8 to 10 minutes. Cool cookies on baking sheet 5 minutes then remove to a wire rack to cool completely. Dust with powdered sugar. Store in a single layer.
  • NOTES:.
  • I had a very hard time with these (sticky dough) and found that using cocoa to roll them out really helped. They are difficult to do, but once you get the hang of it, they go faster and easier. It's all worth it in the end!
  • I had a lot of filling left over, but I did make them smaller (about 2 1/4 inches) and lost some dough due to mishaps. I would suggest using a heaping teaspoon of filling in each one.

  • Cookies: 1)Cream first 4 ingredients together in a medium bowl. 2)Sift together next 4 ingredients in a large bowl. 3)Stir boiling water and cocoa togehter in a small bowl. 4)Make sour milk with milk and vinegar in a small bowl. Let sit a few minutes without stirring until milk sours. 5) Add creamed mixture from step 1 to flour mixture from step 2in large bowl. Add liquids from steps 3 and 4 alternately to large bowl. 6) Drop cookie batter by Tablespoonfuls on lightly greased cookie sheet. Allow room for cookies to spread. 7) Bake at 375 degrees for 10-15 minutes until puffed and baked through. 8) Cool cookies completely. Filling: 1) Cook flour and milk until thickened in small heavy saucepan. 2) Let mixture cool completely. 3) Cream together confectioner's sugar, salt, margerine and vanilla in a medium bowl. 4) Add flour and milk mixture to creamed ingredients. Mix and beat until smooth. 5) Thickly spread filling on one Gob cookie and then place another on top to form a sandwich cookie. Repeat with remaining cookies and filling. 6) Refrigerate filled cookies until 1 hour before serving.

Seriously - if you love peanut butter and chocolate these cookes are a MUST try. Imagine a wonderful chewy chocolate cookie with a creamy peanut butter filling - it is as good as it sounds. The recipe is from Toronto Star. We made them today and they will be on our cookie tray for years to come - for sure! The recipe mentions that the cookie does well with a 15 second reheat in the microwave on day 3. I don't think we will get to try that in this household.

  • In two additions beat the flour mixture into the butter mixture, scrape down sides.
  • Form into 24 balls each about 1 1/2 tbsp size.
  • Filling - In small bowl stir together icing sugar and peanut butter. Form into 24 balls, each about 1 tsp size.
  • Between damp hands flatten 1 chocolate ball, top with 1 peanut butter ball. Shape chocolate dough over peanut filling until completely covered. Roll dough into ball. Repeat with remaining chocolate and peanut balls.
  • Place balls 1 inch apart on 2 parchment lined cookie sheets. Flatten slightly with bottom of glass to about 2 inches (5 cm).
  • Bake in oven for 8-10 min until just set. Cool 1 min on tray before transferring to wire racks to cool completely.

I searched for recipe to copy the yummy cookie I purchased at the bakery at Uncle John's Cider Mill in St. John's, Michigan; finally, I realized I'd have to create my recipe. It takes a little extra effort to bake up a couple dozen of these enormous, bakery-worthy cookies; but the end result of this two-in-one cookie is worth it.

3 large egg whites
1/2 teaspoon salt
1/2 cup sugar
1 1/2 teaspoons vanilla extract
2 1/4 cups packed sweetened flaked coconut
5 tablespoons flour
1 1/2 cups unsalted butter

2 cups packed brown sugar
4 eggs
1 1/2 tablespoons vanilla

  • First, make the coconut macaroon filling:.
  • With two racks in the middle of your oven, preheat the oven to 325.
  • Spray two baking sheets or parchment paper with non-stick cooking spray.

  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Mix in the flour mixture to the dough about a cup at a time, until well combined.
  • Place fresh sheets of parchment paper (ungreased) on your cookie sheets.
  • Using a 1 ounce scoop (2 Tablespoons), drop 6 mounds of dough onto each cookie sheet, spaced widely apart. These will be very big cookies.
  • Spray the back of a teaspoon with non-stick cooking spray and use the back of that spoon to make a nest out of the dough for each macaroon.
  • Set a macaroon on top of each chocolate cookie "nest".
  • Place another 1 ounce scoop of chocolate cookie dough on top of the macaroon layer. Now there are three cookie layers.
  • Spread and flatten the dough, so that the macaroon is completely covered.
  • Bake in the upper half of the oven for 13 minutes. Cookies may look a little under-baked when you remove them from the oven, but they will set up and dry, as they cool.
  • Immediately, slide the parchment paper with the hot cookies onto a cooling rack (otherwise, they will continue to bake and burn on the bottom). Cool for at least 5 minutes.

1/2 cup un-blanched sliced almonds
3/4 cup sugar
1 cup unsalted butter
1 large egg
2 teaspoons pure vanilla extract
2 teaspoons almond extract
2 cups bleached all purpose flour
1 pinch salt
3 ounces milk chocolate, chopped fine
3 ounces bittersweet chocolate, chopped fine
6 tablespoons unsalted butter, at room temperature, cut into 6 chunks

Steps:

  • On a baking sheet roast almonds until lightly browned, about 6-8 minutes, toss every 2-3 minutes Allow to cool to room temperature.
  • FOOD PROCESSOR METHOD---------------------.
  • Grind almonds and sugar in a food processor until very fine.
  • Cut butter into 16 chunks, with the processor add butter a chunk at a time.
  • Process until creamy.
  • Scrape down bowl.
  • Add egg and extract, process until mixed, scrape down bowl.
  • Add flour and salt, pulse until just combined.
  • Scrape into a bowl.
  • ELECTRIC MIXER METHOD--------------------------°- .
  • Whisk flour and salt in a medium bowl.
  • Cut butter in to 16 pcs, Allow butter and eggs to come to room temperature.
  • Grind almonds to a fine powder (can be done with a rolling pin and a plastic bag).
  • In a second medium bowl cream butter, sugar until very light and fluffy.
  • Add almonds, beat until well combined.
  • Lightly beat egg and extracts, add to butter mixture, beat until just combined.
  • Stir in flour and salt until just combined.
  • BOTH METHODS---------------------.
  • With a cookie press or pastry bag fitted with a no 22 tip, put cookies on parchment lined cookie sheets, about 1 1/2 inches apart.
  • Decorate with colored sugar, etc.
  • Preheat oven to 375°F.
  • Refrigerate Cookies on the sheet for 20 minutes, this will help them hold their shape.
  • Bake cookies one pan at a time for 8-10 minutes (until very lightly browned), rotate pan halfway through the baking to promote even cooking.
  • Allow to sit on sheet for 3-4 minutes, remove with an angled spatula to a rack.
  • Cool completely.
  • FILLING----------------------.
  • Melt 3/4 of the chocolate in a bowl over a pan of hot water (160 degrees or so) (bowl must not touch water).
  • When chocolate starts to melt remove from heat and stir until smooth, add remaining chocolate and stir until smooth.
  • Let the chocolate sit until it's no longer warm to the touch and SLOWLY beat in the butter.
  • Do not over beat this mixture.
  • Place the mixture in a freezer bag (corner cut off) or pastry bag and pipe it on to the bottom of 1/2 of the cookies.
  • Cover with second half to form a sandwich.
  • Do about 10 at a time as the chocolate mixture will start to set up.
  • Let cookies set for 2 hours for filling to set 100%.
  • Store covered in an airtight container for about a month.

12 pieces chocolate chip cookie dough, frozen

Steps:

  • 1. Preheat the oven to 350 degrees.
  • 2. Mix together cream cheese, sugar and vanilla.
  • 3. Drop teaspoons of cream cheese mixture on to waxed paper and place in freezer for 1 hour.
  • 4. Flatten one piece of cookie dough and place on teaspoon of frozen cream cheese mixture in center.
  • 5. Fold dough around mixture and roll between hands to smooth out cracks. Repeat process for remaining cookies.
  • 6. Place on baking sheet and bake 10-14 minutes or until lightly golden. Tip: Substitute chocolate chip cookie dough with any other frozen cookie dough. Substitute cream cheese mixture with peanut butter or chocolate hazelnut spread. Enjoy!

Steps:

  • Preheat oven to 350° and grease 3 or 4 baking sheets.
  • In a bowl, beat butter and sugar until light and fluffy.
  • In separate bowl, beat egg with coffee granules until dissolved. Gradually add to creamed mixture, beating well.

These cookies are heaven! The gooey center will make you melt, and if you can bring yourself to share them, you'll become the talk of the town. This recipe is an original creation, and now officially my favorite cookie ever. The ganache will have to refrigerate overnight, and it's best to let the cookie dough chill overnight as well. The ganache recipe will make 1 cup of filling, but you can make larger batches if desired, it keeps nearly forever in the fridge, and will save a lot of time for future batches of cookies. I have edited the recipe to include 1ts of baking soda in the dough to help with the rise, per the review's suggestion. Yield varies on size of cookie. This recipe isn't fast, but it's worth it!

2/3 cup chocolate chips (I use bittersweet)
1/3 cup heavy cream
1 -3 teaspoon sugar (depending on personal tastes)
1 -2 teaspoon butter

finely ground coffee
1 1/4 cups butter, softened
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1/4 cup flour
3/4 cup cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Ganache:.
  • Bring the cream and sugar to a light boil, being careful not to burn it.
  • Add butter, vanilla, and chocolate chips.
  • Stir constantly until all chocolate is melted and mixture is completely smooth. Be careful not to burn it.
  • Place in a covered container (I reuse 8-16 oz jars) and refrigerate overnight.
  • Cookie Dough:.
  • In large mixer bowl; cream together butter and sugar until light and fluffy.
  • Add eggs and vanilla; beat well.
  • In a separate bowl, combine 2 cups flour, cocoa, baking powder & soda, and salt; gradually blend into creamed butter mixture. Continue adding flour, 1 tbs at a time, until the dough becomes a smooth, well combined ball. Allow dough to chill at least 3 hours, but overnight is preferred.
  • Once dough and ganache have chilled overnight, start by prepping the ganache balls.
  • Create 1/2 inch balls of chocolate. If desired, roll balls of chocolate in powdered sugar, finely ground coffee, or a 50/50 mixture of the two.
  • Now, create a 1 inch ball of cookie dough, then flatten it out to a 1/4 thick, palm sized pancake. Place a ganache ball in the center of the cookie dough, and wrap it up so the ganache is surrounded in dough.
  • Place dough balls 2 inches apart on a parchment lined baking sheet, and bake at 375 for 10 minutes. Allow to cool at least 10 minutes, and be careful of hot ganache when eating warm from the oven.

⅔ cup butter, softened
¼ cup light corn syrup
2 teaspoons baking soda
¼ teaspoon salt
1 egg
½ cup white sugar
48 small peppermint patties
⅓ cup white sugar

Steps:

  • In heavy small saucepan over low heat, heat chocolate chips, stirring occasionally, until melted and smooth.
  • Pour melted chocolate into bowl and add flour, butter, corn syrup, baking soda, salt, egg and 1/2 cup sugar. Mix with electric mixer at low speed until blended. Increase speed to medium; beat until well mixed, scraping bowl frequently with rubber spatula.
  • Wrap dough with plastic wrap and refrigerate until easy to handle, about 2 hours.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Measure 1/3 cup sugar into small bowl. Shape dough into 96 balls; roll balls in sugar to coat. Place in even number of balls, about 2 inches apart, on ungreased large cookie sheet.
  • Bake cookies 12 to 15 minutes until set. Immediately remove half of cookies from cookie sheet and invert onto work surface. While still hot, place chocolate-covered mint patties on remaining cookies, top side up. Press cookies together slightly so mint patty spreads out to cookie edges as it melts. With pancake turner, remove cookies to wire racks to cool. Repeat with remaining dough and mints.

2 egg whites
1/4 teaspoon cream of tartar
1/2 cup sugar
1 teaspoon vanilla extract, divided
1 cup pecans, finely chopped
1 tablespoon powdered sugar, sifted
1/2 cup butter
3 tablespoons half-and-half
2 1/4 cups powdered sugar, sifted

Steps:

  • Preheat oven to 350ºF.
  • Beat egg whites and cream of tartar at high speed with a mixer until foamy.
  • Gradually add the 1/2 cup of sugar, 1 Tbs at a time, until stiff peaks form and sugar is dissolved - about 2-4 minute.
  • Stir in 1/2 tsp vanilla extract and chopped pecans.
  • Drop by teaspoonfuls onto baking sheets lined with aluminum foil.
  • Dip a finger in the Tbs of powdered sugar and make an indentation in the center of each cookie.
  • Place in the oven and immediately turn the oven OFF. Don't open the door for at least 8 hours.
  • Remove from oven, and carefully peel cookies from foil.
  • Combine butter, cocoa, and half and half in a small saucepan and bring to a boil over medium heat.
  • Remove from heat and cool to room temperature.
  • Add the 2 1/4 cups powdered sugar and beat well with an electric mixer.
  • Stir in remaining 1/2 tsp vanilla.
  • Just before serving, pipe cocoa mixture into the indentation of each cookie with a star tip - if you have one.
